, who inspired me to attempt their most delicious dishes at home. I shall leave the hard work to them going forward, however. Whew!
Tonight’s yummy dinner!! 😋😋 bbq chicken 🍗 w/ cheddar 🧀 white rice 🍚 sweet plantains & broccoli and green beans 🥦 🍽❣️
Ditch the canned cream of mushroom and make your own! Made with homemade cream sauce, this classic green bean casserole is filled with creamy, crunchy goodness! 🌱
¾ pkg. House Foods Tofu Medium Firm
1½ lbs. green beans, trimmed and cut in half
1½ cups cremini mushrooms, sliced
1 cup fried onions
1 Tbsp. olive oil
2 tsp sea salt
½ tsp. black pepper
3 garlic cloves, minced
½ medium onion, chopped
⅛ tsp. cayenne
¾ cup vegetable broth
2 tsp. all purpose flour
1️⃣Preheat oven to 400F.
2️⃣Fill large stock pot with water and bring to a boil with a pinch of sea salt. Add green beans and cook for 5 minutes, then strain.
3️⃣Meanwhile, cook onions with olive oil over medium heat until soft, then add mushrooms and cook for 5 minutes. Add garlic, salt, pepper and cayenne and cook another 3 minutes.
4️⃣Deglaze pan with half of the vegetable stock, saving other half for the tofu. Sprinkle flour over the pan and stir to create a sauce.
5️⃣Puree tofu in a food processor with remaining ½ cup of vegetable broth until smooth.
6️⃣Add pureed tofu to mushroom pan and stir over medium heat to coat mushrooms evenly. Then add green beans and toss to coat well.
7️⃣Transfer green bean mixture to casserole baking dish, top with fried onions and bake for 15 minutes.
It hard for me to think of Thanksgiving when the air is so insane and smoky here in SF from the Camp Fire up north. I was volunteering at my community college ceramic studio today, loading a kiln and the air inside the building was slowly getting more and more hazy.
Finally at mid-afternoon, word came from the administration that they were shutting down classes for the rest of the day. In the Midwest I hear some schools are already having snow days. Here in California, apparently we have smoke days.
The air quality had turned from orange (unhealthy for sensitive groups) to red (unhealthy for all). And right after they cancelled classes, I got a text from @sf72org
saying it had changed from red to purple (even MORE unhealthy for everyone).
So I’m at home, hunkering down, and thinking about all I AM thankful for. I’m thankful for all the firefighters up north battling the fires. Those folks are superheroes in ways the Marvel Cinematic Universe could never do justice. I’m thankful that my family and friends here in SF are safe and sound, even if they have to walk around wearing breathing masks. I am thankful I have my partner AJ to lean on when I need him most. And I’m thankful for every single person I connected with here on Instagram and social media.
Thanksgiving is next week and I’m know I’m giving thanks early. But I don’t really care. I think everyone needs to give thanks for what they have more often, even if things are a struggle. Like it is right now in California with the fires.

Incredible dinner tonight. A friend with a heart the size of Texas dropped off some JUMBO cabbage rolls that she made and froze individually. The nutritional info is for the entire meal, though I could only eat 2/3 of the cabbage roll! Wow. How lucky am I? 😍
Quick-and-Easy 🦃-Day Side Dish Alert... Whole30 Green Bean Almondine
Confession: I've never made a Green Bean Casserole in my entire life 🤷🏻♂️. Never even tasted one 😳. I have, nevertheless, made (and eaten) plenty of Green Bean Almondines and can tell you that simple is best and it shouldn't take you more than 15 min to prepare

Salmon filets skin off
1. Preheat oven to 400°
2. Lightly season both sides of salmon filets with complete seasoning, salt & pepper. Top with a little bit of butter.
3. Place filets in a large cast iron skillet with foil and fold up sides to enclose the fish.
4. Bake for about 15min and then open foil packet and broil on low for a couple minutes if you want a crispy finish.

🙌🏾 3 cups of fresh green beans
3 cups of asparagus, cut into similar sizes as the green beans
2 teaspoons of olive oil
Pinch of salt and pepper
Pinch of brown sugar
1 tsp of chopped shallots
1 tsp of pressed garlic
½ cup of vegetable stock
1 tbs of vegan butter
Zest of 1/4th grapefruit
Zest of a lime
Zest of a lemon
Zest of half an orange
1. Bring a large skillet to medium heat and sauté the green beans and asparagus in olive oil for 2-3 minutes.
2. Then add the shallots and garlic. Cook for about a minute more
3. Add in the salt, pepper, brown sugar and vegetable stock. Cook until the stock has just about reduced. Then add in the butter and all the citrus zests.
4. Cook for another 45 seconds and serve. (This recipe called for a bit of rum and flambé but I wasn’t about that life lol)
6-7 medium sized golden potatoes peeled and chopped)
1tbs of vegan butter
1/2 cup of half & half
1/4 cup-1/2 cup of room temp cream cheese
Salt to taste
1/4 pack of chicken bouillon
1. In a double boiler steam potatoes until fork tender
2. Add potatoes to a large bowl, mash or use a hand mixer( I prefer hand mashing cause I like the small chunks for texture). Then add the butter, half & half and cream cheese until thoroughly mixed and you get your desired texture. Add salt and chicken bouillon to taste.

• Homemade BBQ Sauce Chicken with Lemon Garlic Slow Cooker Red Potatoes and Green Beans •
One of my fav quick-fix veggies: green beans!
These little guys are a great source of: fiber, folic acid, and vitamins A, C, and K.
The best part: they pair well with any kind of meal! .
Cut ends of green beans and bring a pot of water to a boil. Once boiling, add beans, cover, and reduce heat to low. Cook for ~5 minutes, drain, and return pot. Drizzle with some olive oil, add pepper, and EBTB seasoning. Mix it on up and enjoy! 🍽

This isnt the most glamorous post. But meal prep isnt exactly glamorous... however it IS extremely important! All that in the picture took me 1hour. Thats it. And its going to make life so much easier and help me stick to my meal plan. -
Above is 4 chicken breasts (baked), 2 servings of 4oz green beans, 3 servings of 4oz sweet potatoes, 2 bags of 100g strawberries rinsed and cut, and home made low carb chips for my healthy nachos! Which is my best health food creation yet. -
Here is how i season and cook my foods!
Chicken: onion powder, garlic powder, garlic salt, and rotisserie seasoning baked at 350.
Green beans: 1tsp olive oil for each serving (i make each serving separately and put them in their own tin foil to bake to keep them separated. This is to make sure the servings stay correct.) garlic, onion powder, garlic salt, garlic powder. Baked at 410 until tops are crispy (about 30mins)
Sweet potatoes: cooked EXACTLY the same as the beans.
Tortilla chips: 1 low carb tortilla. Baste each side with walden farms BBQ, light garlic powder, and light garlic salt. Then cut them into chip sized pieces. Bake at 350 for 8 mins, flip, and bake for another 8 mins. -
I love being able to grab something quick, but unless i meal prep, the only quick foods are high in carbs and fat, and low in protein. So its vital to my health to take the 1hr and prep! Do you meal prep?
