. KALE, QUINOA, GARBANZO OMELETTE
6 stems destemmed Kale, chiffonade cut
¼ c Red Onion
2 T Green Chile, chopped
2 Green Onions, sliced thinly
½ Tomato, chopped
¼ c Mushrooms, sliced
½ cup cooked Quinoa
¼ Garbanzos or Black Beans
10 oz egg white or ¾ carton
¼ cup Cilantro
2 T Feta
Salsa Verde, optional Avocado slices, optional
1. Saute red oninons, ½ of green onions, kale and green chile together. Cook about 3 minutes, add tomatoes, mushrooms, quinoa, and beans and continue to saute for about 3 more minutes. If using salsa verde add and mix in at this time.
2. Pour egg whites over mixture to cover, add more or use less depending on your pan size if needed. Add in a little of the cilantro and feta and cook until bottom sets. Flip omelette over and cook for an additional 3 minutes until bottom sets.
3. Garnish with leftover cilantro, feta and avocado and enjoy!
