Vegetarian day today and this was my lunch and Mark's post training lunch. Martin and Matthew had it as a snack with oat cakes. Full of proteins and goodness. Sooo yummy, that it is my dinner too.
1pot Crème Fraîche (from Aldi) 3tbsp kefir,
Juice from 1/2lemon,a handfull of fresh basil, sea salt. Mix all together. At the end add 200g frozen peas (defrosted)4 hard boiled eggs (chopped)2 ripe 🥑 (roughly chopped). Served with home made spelt mini buns.
My vegan friends, this would be great with vegan mayo and instead of eggs just more veggie or chopped vegan cheese.
