Deconstructed pizza! I got this recipe from Kalynskitchen.com INGREDIENTS: 1 can (14.5 oz.) diced tomatoes (do not use petite dice) 5 links (19.5 oz.) uncooked turkey Italian sausage 2 tsp. + 2 tsp. olive oil 1/2 tsp. dried oregano salt and fresh-ground pepper to taste (I didn’t use much salt.) 8-12 oz. fresh mushrooms, washed and cut into thick slices 1 1/2 cups grated Mozzarella cheese 15 slices pepperoni, cut in half DIRECTIONS: Preheat oven to 400F/200C. Spray an 8 inch x 11 inch glass casserole dish with non-stick spray or olive oil. Pour the diced tomatoes into a colander placed in the sink and rinse with cold water. Let tomatoes drain a minute or two, then spread them out on paper towels to dry (or blot dry with another paper towel on top.) While tomatoes dry, heat 2 tsp. olive oil in a large non-stick frying pan, squeeze the sausage out of the casing, and cook sausage over medium-high heat until it’s nicely browned, breaking it apart as it cooks. While sausage cooks, wash mushrooms, pat dry, and slice into thick slices. When the sausage is done make a layer of sausage in the bottom of the casserole dish and top with the drained tomatoes, spreading them out over the top of the sausage. Season with dried oregano, salt, and fresh-ground black pepper. (I didn’t use much salt.) Rinse out the pan if needed, then heat the other 2 tsp. of olive oil over medium-high heat. When the pan is hot add the mushrooms and cook, stirring a few times, until all the liquid is released and the mushrooms are starting to brown. Layer the mushrooms over the sausage-tomato mixture. Cut pepperoni in half. Sprinkle the grated Mozzarella over the top of the casserole and lay the pepperoni pieces on top of the cheese, spacing them evenly so the whole top is covered with pepperoni. Bake about 25 minutes, or until the cheese is melted and starting to brown. Serve hot.

My auto immune symptoms are triggered by certain foods (Endo belly, not a baby🤰🏼) and I was eating a ton of stuff that I found out I was allergic too. Not intolerant, ALLERGIC 🤢 •• It might sound funny, but food is my love. It’s what my family bonds over. It’s what I call my Dad to talk about. Food determines where we go on vacation. There were a lot of days that I was really really depressed when I found out how much I had to change my way of eating. DAY 1: *phew* it was a hot hot day today and still is! It got up to 30 here today and inside our house, it got up to 30 as well! Ick! So I’ve been definitely on edge, but more from being overheated than underfed lol So my first breakfast attempt! This is mashed banana 🍌 I added lemon juice to help break it down because banana on its own is rough on my tummy, especially in the morning. Then I added a splash of homemade coconut milk and popped it in the microwave for 30 seconds. Topped it with cinnamon, raspberries and a sprinkle of coconut flakes. New day, new program! Since starting on medication for my thyroid it has been a real struggle to stick to a program and any kind of meal plan. I thought the medicine would help me feel like myself again and help me feel better. Instead, I have been struggling mentally and physically and have gained back the 40lbs I lost. It's incredible how just writing that somehow takes some of the "weight" I have been carrying off my shoulders. Today is a good day though and I feel ready to do what I need to do. This new program includes weights and high intensity interval training which I actually really enjoy doing. I recently took a business trip to Hong Kong and majorly got off my elimination diet plan- from 12 hr travel days with only airplane food available to dealing with a hotel that had no fridge or microwave, I was toast. BUT I am not beating myself up, looking at the scale, or focusing on how bad I am feeling. I am getting serious again right away despite all that- breakfast this morning was homemade bone broth with detox tea and lunch today was MORE bone broth with a little rice, pork, peppers, mushrooms, and sweet potato on top. 💚

I spoke with my coach about two weeks out and nearly called this show off, knowing I wouldn’t place! There were 32 girl in my Novice class 😳and I have no idea how I placed there! Anywho... Monday motivation... • Although I’m not competing this week in Pittsburgh at the #MastersNationals it doesn’t mean that they’re not on my mind! Good luck to everyone competing this week. 💖 A special good luck goes out to @jnj_miller ! Girl, I KNOW you’re going to KILL it! 😘 • Earning a national qualification is an honor and something I strived for. I had my sights set on this week since August of 2017. Unfortunately, as life would have it, circumstances beyond my control held me back from competing this year. Am I upset about it? Yes and no! • This setback only made me more hungry. It made me hungry for MORE than what I earned. It’s made me realize what stress and health issues can do to your body. It’s given me more of a “never give up” attitude than ever before! • You can bet your ass that very soon, I’ll be back up on that @musclecontest stage under those bright lights with a completely different package and completely different set of expectations. The main reason I work out and eat clean is for my children. They are always watching and copying us. I am their greatest teacher. * I got a cute little waffle maker at Kohl's last night and remembered that I got some waffle mix in my #cincyketomeetup goodie bag from @nekstella So tonight my boyfriend and I made the waffles with our new maker and decided to approach a spicy fried chicken and waffle combination (something I've only tried once when I wasn't keto) We used a combination of almond flour and flax flour with paprika, red pepper flakes, garlic salt and pepper then dipped in egg and baked in the oven. Holy moly, it was so freaking delicious. These waffles are the closest to the real thing. I've tried many recipes and mixes and nothing has come close Go buy some now!!!! * *

Phytoestrogens are plant derived estrogen like compounds. One such compound is isoflavones that have the highest concentration in soybeans. These isoflavones have the most estrogenic effect on the body by binding to your #estrogen receptors. Soy is known as a common #allergen . Also, it has been found that processed soy can be difficult to digest, result in stomach issues (gas and bloating). Soy also appears to inhibit the absorption of levothyroxine (thyroid med). Consumption of large amounts of soy phytoestrogens may also accelerate the progression of #hypothyroidism While there are many mixed feelings on the benefits of soy, personally, I find it to be an endocrine disrupter (effects your #hormones ) and avoid it when I can!

I'm happy to say I'm 100% toxin-free! It's been a couple of years since I started getting interested in buying more non-toxic products but never took it to the point on switching out my make-up. a year ago today, i would rather die than live back at home. i felt alienated bc i was the only one in my family with a psychiatric diagnosis AND a physical chronic illness. i felt like an outcast especially because of my depression and inability to be engaged in everyday activities. since i started getting help, i’ve learned how to communicate with my family especially my parents. i can’t explain how amazing it feels to finally feel the love that my family has been giving me my entire life. i was so closed off to it bc i was struggling internally. i am currently eating doritos and drinking peach pear la croix while watching the bachelorette, prepping for a job interview, and knowing that i have a job offer waiting for me if i decide to start, and knowing my family is upstairs with unconditional love and acceptance no matter what hell i bring them through. life is good.

Monday Motivation: remembering that when you’re in an uphill battle heading into the wind, it makes the view at the top look even better 🏃🏼‍♀️🙌🏽 . Having a running partner today helped me complete one of my longest consecutive runs this year! I wouldn’t have gone as far if I was alone, which made me think about how much easier it is to #IRunMyHashi knowing that I’m not alone. . I started this page to be part of the #hashimotoswarrior community, to find inspiration and to inspire. I realize I haven’t shared my Hashi story yet - I wasn’t sure how open I was ready to be. But I’ve learned a lot in the last 3 years since being diagnosed, and if my story can relate to even just one other #autoimmunediseasefighter , then it’s worth telling. . While H napped, my mission today was text and email inbox “zero.” Which made me think about getting to “refrigerator zero.” Sometimes I like to see how long we can skip the store and use up what we already have. This can spark a different kind of creativity. Plus, it’s kinder to the planet - and the bank account! What veggies are about to turn, what leftover pieces of produce need to be used, what would add interesting flavor or texture and what will tie it all together. For nights like then or when we’re in a time crunch, we always have @sietefoods tortillas, @califlourfoods plant-based crusts, @ancientharvest #glutenfree pasta stocked, as well as @kitehillfoods spread, hummus, pesto, and a variety from @central_market ’s olive bar Tonight was yet another @califlourfoods crust with @kitehillfoods chive spread topped with leftover Magenta Spreen from @sfcfarmersmarket , castelvetrano olives and roasted garlic, purple onion, red bell pepper and broccoli tossed with a little oil from the garlic, and some quick sautéed turmeric spiced chickpeas Think about how much you may be throwing away each week and see what you can invent before you hit your favorite health food store to restock!
