Garlic-roasted eggplant bowl 💜✨
Happy Friday! Today’s bowl features the most delicious, flavorful eggplant! Before roasting, I place slices of garlic in crosshatch slits in the eggplant’s flesh and the result is SO creamy, caramelized and comforting. Perfect with tahini sauce! 🙌🏼 Easy recipe below!
🌱 baby greens, cucumber noodles, avocado with sesame seeds, garlic roasted eggplant, spiced roasted chickpeas, purple cabbage & creamy tahini sauce
💛 garlic roasted eggplant:
• baby eggplant
• garlic cloves
• olive oil
• sea salt
- cut eggplant in halves, lengthwise
- make cross-hatch cuts into the flesh of each half.
- salt the eggplant covering the surface and down the cuts in the flesh.
- let sit for 20 minutes.
- while eggplant is sitting, preheat oven to 400 F.
- after 20 minutes, gently squeeze the eggplant over the sink to allow the salty water to drip out.
- pat dry with paper towel.
- cut garlic cloves into thin slices and place several slices in the cuts of each eggplant half.
- brush flesh with olive oil.
- place cut side down on a parchment lined baking sheet.
- bake for 30 minutes or until the the flesh is soft and lightly browned.
-the eggplant will be very hot! Let cool for a few minutes before handling.
- enjoy with a drizzle of garlic tahini sauce.

lunch is served!🌟 seeded breadroll with pumpkin hummus, tomatoes, cucumber and apple slices 😍
Fonott babka még húsvétra készült. Vajas cukros töltelék helyett kakaós zabkrémmel 😍
köles-, barna rizsliszt, tápióka keményítő, mindhárom egyformán 100g, 2 ek csicseriliszt, 15g útifű őrlemény, 2,75 dl langyos víz, só, édesítő, 4 g élesztő. Krém: 100g aprószemű zabpehely, 3 ek. kakaó/karobpor, édesítő, 2 tk. útifű őrlemény, kb. 300ml víz.
A tésztát összedolgozzuk, 20 p kelesztjük. A krémhez az alapanyagokat összekeverjük majd állni hagyjuk. A tésztát miután megkelt elnyújtjuk, megkenjük a krémmel, mintha bejgli lenne. Hosszábban kettévágjuk, összesodorjuk és csigaformában megtekerjük. Előmelegített sütőben 180 fokon 40-45 perc alatt kész. 😊

Green Vegan Pea Soup
3 cloves garlic
300 grams peas, fresh or frozen
700 ml vegetable broth or water
100 ml coconut milk
1.Peel and finely dice onion and garlic cloves. Peel and dice potato.
2.In a pot, heat a table spoon of vegetable oil, then add onion and garlic and gently fry until translucent, stirring occasionally. Add diced potatoes and peas, pour over with vegetable stock and season with salt, pepper and finely chopped fresh herbs to taste.
3.Let it simmer and cook on low for about 15 minutes, until the potatoes and peas are fork-tender. Then, remove from heat, add a tablespoon of lemon juice, coconut milk and blend until smooth in a blender (or with a stick blender). Then pour pea soup on plates and serve. 🌿💚✌🏻
Sometimes life is a constant rush and you have to do what you have to do to stay on track. I had repair men come to my apartment today and like a lot of trades people in Vietnam they are a Jack of all trades and a Master of none. What a nightmare, there was saw dust everywhere and a lack of direction in every corner. Their boss did come up and clean up the mess, but all my kitchen stuff is packed up in boxes everywhere! .
I made a 1 litre OJ and I was going to blend it with a pineapple and have half with my partner, God only knows where the blender is, so luckily I can have fresh juices made here. Nuoc Mia (sugarcane juice.) Today I had passionfruit blended with it, so delicious. .
Did you know sugarcane juice is great for lowering your blood sugar levels? It’s also good for the kidneys, restores protein in the body, it’s great for your hair, skin, nails and teeth. Like most plants it reduces your risk of cancer. .
I have my own container and straw and the lady just fills them up. I’ve learnt how to say Không Doung (no sugar) and it da (little ice) other wise it will be full of ice and sugar and no juice, I do get charged more but that’s ok. .

Since a few months, Tim and I try to go plastic free when shopping at grocery stores. We bring our own mesh bags (this one is from ikea, you can also find the “green bag” at Liddl) and we bring those instead of using the single use plastic bags in the fresh produce aisle.
We’re not always successful but we are trying our best. Striving for progress not perfection! 😉
What about you? Have you tried reducing your plastic use?

Buckwheat cream parfait with coconut chia pudding - link in my bio 💚 switch the language at the top of the post 🇩🇪/🇬🇧 .
I used sprouted buckwheat for this recipe (soak for 4-7 hours, then flush the water & rinse 2-3 times per day) but you can use regular soaked buckwheat as well. 😊
Just make sure to allow it to soak for at least some time to remove the phytic acid (inhibits nutrient absorption) and to improve its digestibility. 🔥

· · · Bliss Nice Cream 💜 You can’t have too much nice cream am I right? This nice cream actually became more purple the longer it sat 🤪 For the same color, you can substitute fresh pink pitaya (dragon fruit) with frozen pink dragon fruit packs (which you can find in some well sorted supermarkets). Green spirulina powder is found in most health shops 😁
RECIPE (1 serving)
- 3 frozen bananas (very ripe)
- 1/2 fresh pink dragon fruit/pitaya (or frozen dragon fruit/pitaya)
- 2 tsp green spirulina powder
1. Add all the ingredients to a high speed blender (or food processor) and mix until the nice cream is smooth
2. It may take a while and you will have to stop a few times to scrape the sides of your food processor or blender (if you have a Vitamix, you will have to stop once in a while to empty air bubbles from the bottom of the blender)
3. Serve in a bowl and add your toppings!
