Cookies that have to be rolled (ex. Sugar cookies or ginger bread cookies) are always my favorite to make because playing with the dough is so therapeutic and makes me feel like a child playing with play-do😂✌🏻
Also, if you don’t have a cookie cutter, just get any cup and use that because it works just the same #themoreyouknow

RECIPE (2 servings)
For the nice cream
* 6 frozen bananas (chopped in chunks)
* 1/4 cup plant milk of choice
* 1 tbsp cacao powder
* 1/4 cup raw cashew nuts
* 2 tbsp cacao nibs
For the chocolate sauce
* 3 tbsp agave syrup (or coconut nectar/maple syrup/date syrup)
* 3 tbsp cacao powder
1. Make the chocolate sauce in a small bowl by combining syrup with cacao powder and set aside
2. Roughly chop the cashew nuts and set aside
3. Add the chopped frozen bananas, cacao powder and plant milk to a high speed blender or a food processor and blend until completely smooth (have patience, you may have to stop a few times to scrape the sides of the blender/food processor or let air bubbles out from the bottom)
4. Now add the chopped cashew nuts and cacao nibs, fold them down into the nice cream
5. Lastly add the chocolate sauce (save little for topping) and roughly fold it in
6. Serve in coconut bowls and top with rest of the chocolate sauce and maybe some more cashes and cacao nibs. Enjoy! 🍫

This looks so pretty and it tastes absolutely divine. 💕I love papaya, but it must be ripe, if it’s not it won’t digest well and it doesn’t taste very good. 🤢Today I had 2 super ripe papayas, flick through the pics and you’ll see just how ripe it was. 🤔Most people would turn their noses up at this papaya and to be honest with you so would’ve I years ago. 🤫But I eat papayas this ripe quite often and they are super delish. 🥰
Right now we are on our last month in Australia, and we are having the best time ever! Usually starting the day by the ocean and eat fruits. It's so much fun to eat a range of fruits all year round..we ate here--watermelon, melons, oranges, strawberries, blueberries, cherries, pineapple, apples, papaya, dates, Jackfruit, pears, peaches, nectarines, coconuts, lychees, dragon fruit, bananas, mangoes(!!!) 😋
In Israel we are able to eat fruits by the season, so we are not used to that abundance. When we were in tropical Queensland there was a lot of tropical fruits, but we are still able to find good variety of fruits as we are going south to Melbourne (in sunday markets and food carts on the highway). Australia is so big, and every area have a different climate, so they are growing so much stuff, and everything is local. Insane:)))

Hasselback Potatoes w/ Wild Garlic & Cashew Pesto 🥔🌿 by @vegaliciously
100 g wild garlic or basil leaves
100 g cashew nuts
1/3 cup olive oil
1/2 rsp salt
400 g potatoes
1. Preheat the oven to 180 degrees.
2. Place wild garlic, nuts, oil and salt in a food processor and process until creamy.
3. Place potatoes between the handles of 2 wooden spoons and cut into thin slices.
4. Place on a baking tray covered with baking sheet and bake for 20-25 minutes.
5. Brush the potatoes with pesto and bake for another 5 minutes.
The best thing about fall is that it means it’s persimmon season! 🍁🍃🍂A lot of people don’t realize that most types of persimmons are ripe when they’re so soft, they would burst if you poked them. So, if you’ve ever eaten a hard persimmon and it was starchy and disgusting, you haven’t gotten the real persimmon experience 😏
A messy purple smoothie with cinnamon and nut meg on top, in front of the very tiny mangoes 🥭 on our tree. Still doubtful these will grow, as we’ve only ever had one mango from this tree. Delicious! 😋👍
Day 16 and I’m amazed at how good I feel. When I started this juice fast I was 140 pounds. Today I am 124 pounds. I’m 5’11, so that’s pretty skinny. My family has been teasing me but it’s all in fun and we have a good laugh 😂
Every night before bed I take my parasite herbs and throughout the day I take liver/kidney herbs.
I’ve been drinking 32-64 ounces of juice a day along with distilled water. Yesterday I did fill up a few bottles at the mountain which is seriously the best water I’ve ever had.
People come from all over the world for the healing properties not just from the water but from the vortex energy in and around Mt. Shasta. It was definitely a day to remember.
I can feel my adrenals healing up. Living in sweats and wool socks, spending time with family and getting back to nature has been such a blessing.
I feel my body getting stronger with each passing day. My thoughts have been clear, my energy is up and my body odor has all but disappeared.
I’m still going 💩 but it’s really just the herbs coming out. There is no odor.
At this point I can’t imagine eating. I have yet to experience true hunger as the juices are nourishing my body. So I’m just riding this detox day by day and looking forward to what’s ahead.

For dinner tonight, I was still on a potato kick. I cut up the rest of the purple potatoes and boiled them. In a pan, I prepared onions, garlic, green and yellow bell peppers, tomatoes, great northern beans, kale, and nutritional yeast. I stirred in the potatoes for a glorious, rich stew. It was comfort food at it's best. For dessert, I made a blueberry smoothie bowl topped with sliced banana, pumpkin seeds and a dollop of peanut butter. It was a perfect end to my Monday.

A nice little Buddha bowl made with shredded carrots, massaged kale, onion, diced tomatoes, tamari sunflower seeds, lentils and I’m about 99% sure there’s some sort of grain under there 😂
Two things I have to mention about this post
1. These lentils are one of my favourite store bought items ever!! I don’t know how @traderjoes
does it but I’m already looking forward to going over the border to pick a million packs up for over the Christmas vacation. They’re so easy, perfectly cooked and must have some sort of magic flavouring added to them. It doesn’t say exactly what’s in it on the ingredients so I guess the mystery lives on 😩 #tellmeyoursecrets
2. Go to choices right now and get yourself some tamari sunflower seeds. They’re the best you can’t argue me on this. Perfect anything topping. Also on the theme of tamari, Costco sells really delicious tamari almonds too
I’m so glad ‘life’ steered me away & off the path that I had originally intended to follow. I was studying nutrition & dietetics at University, just turned 17, I had moved away from home & went to live in an on-campus college. .
If it weren’t for chronic illness, I wouldn’t have been gifted fast-tracked divine guidance towards the truth, I wouldn’t have met some of the most life-changing, loving, beautiful earth angels & important people who I cherish so deeply, I wouldn’t have started my own business @katiemoonillustration
that has given me the chance to play & nourish my creative spirit that I had to put to the side for years due to being so hardwired into my academic pursuits, I would have continued on studying in the ‘system’ — learning information funded by the government & industries with all of their ridiculous claims & outdated theories of what health & nutrition looks like. For example, at University they often talked up the benefits of high fat diets, high protein diets, dairy, packaged cereals, red meat & deemed eggs the ‘perfect food.’ I don’t know what they teach now, but I’m sure the likes of ‘The Heart Foundation’ advice & dairy/meat/egg industry involvement still reigns supreme in influencing teachings in some way. It’s quite alarming when I think about all of the young impressionable students going into university & coming out the other side loaded with a belief system that ultimately does not benefit anyone. I truly believe I would’ve seen the light after a while & realised this isn’t right, but who knows?! When you don’t have a wake up call like chronic illness & realise that everything that they’re saying out there is total trash it’s easy to stay stuck in a belief system that you’ve paid to learn about & have been taught by a ‘proper’ & reputable source such as in tertiary education.

One of the hardest things about moving is finding a new takeout place. (Amirite?!) It’s such a gamble, especially when you have food allergies and you’re vegan! (No chicken broth, pls!) A year later, we finally have the perfect place and I’m totally addicted to their Singapore street noodles (ordered with no meat or eggs). When I haven’t eaten my vegetables in a few days, I feel noticeably worse. My gym performance suffers, my gut feels off, and I generally don’t have the energy I normally do. Frozen veggie mixes are a blessing for me - it gives me all the servings I need, and a variety of vitamins and minerals.
I like to throw them on a medium-hot pan to defrost, adding soy sauce and oyster sauce when almost cooked through. Add a protein source for a full, balanced meal that will make you feel great and STUFFED!

Vegan Peanut Butter Acai Bowl 👅🌺🌸💕 Yesterday in the morning I arrived in Byron Bay. It’s such a lovely place! I heard so much good about it and I can only agree with them. It really is a magical place.✨ Yesterday I got pulled into a tourist agency and that was probably really lucky. Milla helped me plan the rest of my travel in Australia. I have seven weeks left and a load of things that I want to do. After some hours we finally have figured out the timing for everything. Now I have my plan together. Something less to worry about all the time. Because it was constantly stuck in the back of my head and stressed me. The problem is that I reached the maximum of my credit card for December haha🙆♀️💵 You have to know I’m very economical so I try to not spend too much anyway. After having lunch I went to the beach. Somehow my mood was not that good. I don’t know why. Everything was perfect but I just felt a little sad. Later a guy was playing guitar at the beach and I watched the amazing sunset and felt way better already. I drove back with the bike and got a little lost.
