Tofu matar masala, a delicious and healthy vegan curry. Recipe ⬇️ #ayurveda #healingfoods . . . Ingredients: 2 cups fresh or frozen green peas 2 cups cubed firm tofu 2 cups fresh or canned crushed tomatoes 1/4 cup water 1/3 cup coconut cream or unsweetened plant milk 2 tbsp oil or vegan butter 1 tsp mustard seeds 1 tsp cumin seeds 1 tsp garam masala 1/2 tsp turmeric powder 1/2 tsp coriander powder 1/2 tsp red paprika powder Pinch of asafoetida 1 bay leaf Few curry leaves (optional) Salt to taste 1/4 cup chopped fresh cilantro Pan-fry tofu cubes on little oil until lightly brown. Set aside. In a deep pan heat up 2 tbsp oil (on medium heat), add mustard seeds, cumin seeds, asafoetida, curry leaves and bay leaf. Toast until you can smell an aroma from the spices, about 30 seconds to 1 minute. Be careful not to burn spices. Add peas and rest of the spices (turmeric, garam masala, coriander powder and paprika) and mix well. After that add water, crushed tomatoes and coconut cream and mix again. Cover and let it cook on medium heat for about 10 minutes, stirring occasionally. After 10 minutes add tofu and cook another 5 minutes. Turn off the heat, salt to taste and add fresh cilantro. Serve hot with rice, chapati or naan.

Happiness is .... A well curated menu . On the menu this evening was all that was traditional but a great twist using products and ingredients in a creative manner . Roasted sweet potatoes and coconut chutney, tapioca mash seasoned with shallots and served with freekeh kanji that was poured around the mash and a crumble of papads.. A sorghum pie with a moong filling seasoned with herbs and topped with pumpkins and spinach . A flaky crust and a well seasoned filling served on a bed of greens . The main entree .. a turmeric Idiappam well plated with a tad spicy veg stew . And the highlight was a vegan dessert with an almond oatmeal crust and a Ashwagandha cashew cream filling with activated charcoal and roasted plantains . A picture of the culinary / medicinal herb garden before it became dark. Its now nearly finished 😀😀😀 with thanks to the amazing Alex and at the brilliant @sadehfarm , inspired by @seedsistas_sensoryherbalists course. @sadehfarm is a wonderful community to be involved in. Supporting you in your project full of great volunteers. Two years ago I had never grown anything!!!! Never be afraid to try something new. Its a no dig garden and we have created 3 beds. We have listened to the land to see what thrives best in different areas. There is Borage, Thyme, Black Mint, Hyssop, Lavander, Skullcap, Peppermint, Rosmary, Lavander, Yarrow and the chamomile we thought had died in the drought has self seeded! A border of strawberry to act as edging. More plants will be introduced, although we want to limit over crowding. There is also a bed with Lemon Balm and in the developing cottage garden we have Ladies Mantle and Marigold and a host of annuals that will slowly be replaced with more edible and medicinal plants. The larger plants have been moved to the forest garden, to develop their roots to be harvested when 2-3 years old. Marshmallow, Angelica, Valarian, Echinacea and Elecampane. In the bed by the wall we will cover with plastic and logs to help stop the weeds (we do eat most of them, yummy nettle and ground elder) and plant this up in the spring... maybe with honeysuckle 😀 We will also collect the rainwater from the gutter and hope to feed this into small tubs to create miniature pond gardens. #herbgarden #medicinalgarden #physicgarden #culineryherbgarden #healingfoods #herbs #plants #plantmedicine #permaculture #nodig #community #learning #volunteer #passion #joy

I’m so thankful for my company’s heart and mission. I have a new customer who has her whole family on our powdered produce. Her mother is in her 80s and has cancer, but says she doesn’t feel like she has cancer since she has started eating the chewables. She feels great and all her numbers have improved! Her doctor told her to keep doing what she is doing. Then the saddest thing happened – her home was burned in a fire, along with her chewables. 😭. So I called our company and shared the story. Felt a cold coming so I made my garlic, turmeric , veggie chicken soup. I also used some left over rice I had from yesterday . I LOVE giving this soup some kick with fresh chili paste ! To give it a fancy gourmet taste pickled ginger is awesome. Back in 2009 we were quarantined with swine flu and honestly this soup helped the most . So after indulging on heaps of heavy, oily, fried Indian food in Texas, it’s time to get back to the basics.😭😍 ▫️▫️▫️ I’m kicking off a one week High Raw Low Fat Challenge; the only cooked food will be potatoes! Any kind of potatoes are game; I stocked up on my current favorites which are white sweet potatoes and yams.🍠🍂🍠🍁 ▫️▫️▫️ I’ll be starting each morning with lemon water and straight celery juice, followed by combos of fruit, smoothies, salads, more juices, rounding it out with potato dinners. I’m not sure what level of detox I will experience, and since I need to be fully present for sessions 6 days a week, I may have potatoes during the day too, to slow down the detox.🙃🌿 ▫️▫️▫️ I’m a firm believer that experience is the wisest teacher, and I’m excited to learn as I go. We can consume all the content on nutrition, fitness, meditation, this, that and the other; but until we choose the experience, how much does all that knowledge matter.✨🌟 ▫️▫️▫️ It feels good to be in a moment of time where I’m feeling presence and desire for this challenge. Some people find cleanses and challenges easy; they can go raw vegan overnight & never look back. It’s so important to not compare ourselves to others, nor judge ourselves for our eating patterns. Everyone has varying degrees of emotional trauma; emotional eating tends to be most exaggerated in those with more traumatic pasts.♥️ ▫️▫️▫️ My journey with emotional eating has been an ongoing up and down battle for decades. Evolving these long standing cycles is a gradual journey of patience, effort and self compassion. ▫️▫️▫️ Wherever we are on our journey is where we are on our journey. There is nothing good or bad about it; it just is. Every Now provides a chance to accept our present reality and awaken the belief that we hold the power to manifest the Self we seek. My yummy salad for today. I just really enjoy eating greens now so much. There was a time, exactly one year ago, I thought this was not a meal. I would have a small salad with my lunch or dinner. This is before I decided to go full plant based. It’s amazing how much change I have gone through. This salad right here has butter lettuce, red onions, radishes, cucumbers, tomatoes, avocado, red pepper, alfalfa sprouts, spinach, chickpeas, and kalamata olives. Warm and rustic Quinoa, Kale and Apple salad...perfect for a cool, rainy fall day. 😍 • Eating whole, real, nutrient dense food is critical when it comes to redefining your health. One argument for not cooking from scratch at home is there’s not enough time. But when you look at the alternative, fast foods, empty carbs and processed foods, the time you think you’re saving will eventually catch up and be spent in doctors’ offices, in bed or possibly with so low energy that you don’t feel up to going out. • This meal took less than 30 minutes to prepare yesterday and because I made enough for leftovers, it was a 2 for 1 kind of meal! 🙌🏻 • The key to cooking at home and enjoying the food you eat is to 1. Plan ahead and batch prep your food over the weekend (i.e. chop veggies, cook grains and main dish items); also use whole food shortcuts where possible (i.e. my sweet kale chopped salad mix from @Costco ) 2. Start playing with flavors you love, building upon them to create dishes you can’t wait to dig into! Find healthy, clean recipes you love the looks of and make adaptions if necessary to fit your family’s likes and/or needs. • Though I enjoyed eating this yesterday, I felt there was something missing. Today I added two ingredients and it was a GAME CHANGER! • What’s inside the winning combination: sautéed leeks with sweet kale salad mix, quinoa/buckwheat, sprouted pumpkin seeds, red grapes, diced apple, rosemary, garlic and thyme. Soaking nuts. It’s a thing. I have come along way from my microwave sweet and sour 2 minute noodle days. Soaking/activating these almonds is a great way to access all their nutrients. Raw foods contain phytic acid and enzyme inhibitors that reduce the body’s ability to absorb certain nutrients properly. Soaking and rinsing removes enzyme inhibitors and allows the germination process to begin. It also allows the proteins to break down into separate amino acids and the complex starches to break down to simpler carbs, making them easier to digest. So less indigestion and bloating and more vitamins and mineral absorption. Win win. These almonds will become almond butter and ground almond baking flour in the morning.
