There are not many things that make me feel more in control of my life as being in control of my health. They say that when you get in control of your health, many other things start falling into place.⠀ ⠀ Learning to listen to my body has really helped me feel in control of my health. Listening has taught me ...⠀ • that dairy is a 💯 HELL NO and if I’m going to attempt to eat it, I have to take digestive enzymes to help my body process it.⠀ • that my body does best on a mostly plant based lifestyle (which is why I like to say I’m 80% vegan😏) ⠀ • that exercise in the morning gives me life⠀ • that selfcare is of the utmost importance and that I need quiet ME time at least 1x per day for at least 30 min to recharge⠀ • that I need a minimum of 8 hours of sleep per night to feel my best.⠀ • that sometimes 3 rest days are needed and a few brownies are okay.⠀ ⠀ How about you? THIS IS WHAT GRINDS MY GEARS; we take a healing herb like turmeric & manipulate it into a sugar laden beverage with a long list of unnecessary ingredients, numbers & sweeteners to be sold and marketed as a healthy golden beverage, misleading the buyers into thinking they’re doing the right thing by ordering it. Here’s an idea - let’s leave it the way it was. When it was good for us. When it did provide healing, anti-inflammatory, pain relieving, cancer protective benefits. It’s really quite simple to make yourself; to combine fresh or dried turmeric w a little cinnamon, ginger & black pepper. I don’t see why we need to have these ‘convenient’ latte blends that are no better than a hot chocolate. Please don’t be fooled by the marketing, and be mindful that most cafes will be using pre packed turmeric latte mixes. When ever we travel, I not only pack my suitcase, I also pack a cooler of food. . . I don't want to be stuck with fast food or the limited restaurant choices. Sometimes I bake something for the first time and am really proud of myself and in awe of how delicious and perfect it turns out. This was one of those times. These are sooooo ridiculously delicious. The texture is perfection. Everyone has to make them. You just have to! And I hope you love them as much as I do. Plus, they’re on my site for those of you who save recipes that way better! ❤️ Blueberry Oatmeal Scones 1 1/2 c almond flour 1 c gluten free oats 1/4 c tapioca flour 2 flax eggs 4 T aquafaba (liquid/brine from garbanzo beans) 1/4 c coconut oil 1/4 c maple syrup or honey Pinch of pink salt 1/2 c wild blueberries Mix dry ingredients together in a stand mixer. Add in wet, while mixing on a low speed. Fold in blueberries and pour batter into a baking sheet with a silpat mat do it doesn't stick. I form a large circle. Bake at 350 for one hour. Let cool completely beside cutting and serving. #chelsbateseats #naturallychelsrecipe

I'm back! And to celebrate my return to the grand ole gram, I made a lentil loaf. It's an I'm sorry I ever left loaf, made with gluten free oats and flour and is sort of a vegan vegetarian hybrid...because I made it using half flax eggs and half chicken eggs. The best part? That tomato glaze topping which was kind of a smash up of DIY ketchup slash barbecue sauce since I didn't have either but did have tomato paste, sugar, molasses. To get this recipe, I just searched online for various loaves that used ingredients I already had on hand. It's a bit dense but holds it shape really well. Next time I might omit the flour and just go with oats but otherwise it's really forgiving and you could realistically throw just about any veggies and legumes into a loaf and call it a day . Another awesome thing? Confession time. I’m struggling with my digestive issues that we still can’t figure out and I have to be on a partially liquid/ broken down diet. Too much pain and the inability to digest things. Totally how I feel right now while I am away from home and not able to do my usual routine. Not to mention my water intake is not where I would like it to be. Cilantro Lime Chicken Salad. You could easily do this recipe with Shrimp. 🥗Marinate Chicken Breasts in 1/4 CUP Chopped Cilantro, 1/4 CUP Lime Juice, 1/2 TBS Honey, little dash of Cumin, Salt and Pepper for 30 mins or longer. Pan Cook the Chicken and thinly slice it. Arrange Chicken, Mixed Greens, Red Cabbage, Red Onion, Red Pepper, Avocado and Jalapeño on a Large Plate. For the Cilantro Lime Dressing, Blend 1/4 CUP Lime Juice, 1/4 CUP Orange Juice, 1/8 CUP Lemon Juice, 1/4 CUP Cilantro, 1/2 TBS Honey, 1 TBS EVOO, Salt and Pepper. 🍋Lemon Chicken🍋Wow this was tasty! 🍋Pan Cook Chicken Breasts in a little Ghee or Butter with Salt and Pepper. Remove the Chicken and place it on a bed of Arugula. Next, place Lemon Slices in that same pan to brown them on each side. Set them aside when done. Then, add a little more Ghee, Butter, or Oil to the same pan and add 1/4 CUP Broth of your choice (I used Homemade Chicken Bone Broth...I have a post coming on making Bone Broth from scratch that you can freeze), 2 Fresh Cloves Minced Garlic, the Juice of 1/2 a large Lemon and 1 TBS Honey. Cook it down on medium heat for about 3 minutes stirring often. Generously spoon the Sauce over the Chicken and then place the Lemon Slices on top. For the Asparagus, I just cooked it in a pan with a little oil, salt and pepper. Garnish your dish with Parsley and Microgreens.
