Tonight’s dinner featured a couple favorite comfort foods. 🥫🥯 A big ol’ bowl of minestrone soup with a bagel & cream cheese on the side. I started the soup first to give it time to simmer. Sautéed an onion, garlic, 2 ribs of celery, and a few handfuls of baby carrots in a teaspoon of avocado oil. Then I added a russet & sweet tater, a can of beans, a handful of cherry tomatoes, and water. Plus tomato paste, s & p, oregano, basil, bay leaf, fennel seed, red chili pepper flakes, and poultry seasoning. LOTS of spices! While it did its thing I baked up a batch of @holistically_thriving

Miso Mushroom in Bone Broth with Poached Chicken
Mushrooms are pretty cool little things- they have defence mechanisms that are similar to our own, that can help & support our bodies. ✨Mushrooms contain beta glucans which help fight Inflammation.
✨Studies have shown that consumption of Shiitake mushrooms is associated with an increase in number and effectiveness of T immune cells & natural killer cells that increase immune function.
Here is one of my favourite recipes utilising enoki & shiitake mushrooms. ➖Mushroom mix
100g Enoki mushroom
100g shiitake mushroom
1/3 white cabbage finely chopped
1 chopped garlic clove
1 tbl miso paste ➖Sauté mushroom mix in pan
Add 1 cup of bone broth I use @nutraorganics
powdered broth (when I don’t make my own) ➖Poach chicken in a large pot with boiling water for 20 minutes. Slice & add on top. Garnish with coriander, chilli flakes & spring onion.

You're going to want to make this one ASAP because not only is it freakin delicious but it is SO GOOD for your gut and is also anti-inflammatory! Winning. Oh and it's vegan! You get all the creamy goodness with no added dairy. Recipe deets below👇🏼👇🏼⠀
1 butternut squash (peeled, seeded, chopped)⠀
1/2 yellow onion diced⠀
1 1/2 tbsps Ginger (peeled and grated) ⠀
1 tbsp EVOO⠀
1 tbsp Garlic (mined)⠀
1 tbsp Curry Powder or red thai curry⠀
3 cups Organic Vegetable Broth⠀
2 tbsp Apple Cider Vinegar⠀
1 tsp Sea Salt⠀
Toss the cubed butternut squash in 1/2 tbsp EVOO and roast at 425 for 30 minutes. When it has 5 minutes left, add the remaining olive oil to a large pot and saute onion, garlic and ginger until fragrant and onion is lightly browned. Add the curry powder/curry paste and saute for 1-2 minutes, coating the onions. Add the veggy broth, apple cider vinegar, butternut squash and sea salt. Simmer for 3-5 minutes. Use immersion blender to blend OR transfer to a regular blender and blend til creamy. Top with cilantro, green onions, toasted sunflower seeds, coconut cream or whatever your 💛 desires. ⠀

After I have my morning routine, have sessions with my clients, and workout; I usually break-fast around 11am or noon with the water of 2 young coconuts.
About an hour later I’ll have half a watermelon or a couple cantaloupes.
Around 3 or 4, I’ll have a mono meal of either papaya, mango, or longan, currently are my go-to’s
Then before sunset, I’ll drink about 2-3 more young coconuts. And that’s it!
Very similar to how I eat in the states with intermittent fasting and two meals, except I drink fresh juices instead of coconut water and my second meal may be a salad or smoothie.

When your family is under the weather, there’s nothing like a great delicious bowl of warm soup to help heal and get you feeling better again!
Cal de Res (Beef Soup)
Sliced Chuck Steak
Corn on the Cobb
Diced tomatoes canned
1/2 tablespoon beef bouillon
1/2 tablespoon tomato boullion
1 tsp granulated onion
Sprinkle of black pepper
Any other type of vegetable you like.
Rinse steak off with warm water. Slice it up to any size you desire. Add to your pot and add water. Enough water to cover all the meat. Place on the stove and bring the meat to a rolling boil on high heat. Skim off all of the foam from the meat. Now lower your stove to medium high heat. Continue to boil for about 1 1/2 hours. That will allow the steak to become very tender. Now add your vegetables and let cook for another 20-30 min or until your potatoes are nice and soft. Add a side of Spanish rice to your soup and you have a delicious satisfying meal! Enjoy and Happy Eatz Everyone! 🍲

The foods we eat have a powerful affect on our bodies. They have the ability to both heal and inflame us, to take us from comfortable to uncomfortable. We are at a pivotal point in our lives where changes have to be made. There are more and more people being diagnosed with cancer, autoimmune diseases, diabetes and heart disease than ever before. As a society we have become accustomed to fast food, frozen packaged meals and ready-to-use seasoning packets. While it may save a little time in your current day, it comes at a cost down the road of health and money spent in doctor's offices, on medication, time off of work, etc.
With so many topics in the news about chemicals, GMOs, organic vs conventional...it's hard to know who or what to believe. To be honest, it can be overwhelming. But one thing we know for sure is processed foods are going to inflame your body more than they will ever help your body. Processed foods were created to save time, increase net gains and add convenience to our lives. They were never created with health in mind. And as hard as it is to hear, eating processed foods will never help you move along in your healing and health journey.
With all that said, I'm happy to say that there are some companies out there trying to make food options that are minimally processed, without perservatives and 'natural flavorings'. It's a start in the right direction. BUT, the responsibility for our health lies on our shoulders, not on manufacturers. I totally get how hard and daunting the thought of kicking processed foods to the curb can be. I've been there. For years my body was speaking to me and I ignored it, until I couldn't any longer. I had stomach issues, brain fog, etc and just kept going about my business. It wasn't until I started being mindful of HOW MY BODY FELT after eating certain foods that I started making changes (like when my beloved Diet Coke started tasting like metal, I was done. Or when I when I realized how awful I felt after eating something marinaded with a packet of seasonings, I started mixing my own). By the time I was diagnosed with RA, my gut was a mess (for the record, stress was also SEE FIRST COMMENT FOR REST OF POST⬇️⬇️

Ladies! 🙋🏻♀️ We all know that gut health is super important. Scientists are now referring to it as “the second brain” 🧠because of its impact on metabolism, mood, immune system, and many other functions in the body. But it’s especially important for us ladies because it’s connected to our HORMONES!
