Roasted Caramelized Kabucha Squash
Serves: 6; per serving provides: 3 greens, 1 healthy fat, ½ condiment
2 lbs (raw weight) Kabocha (or Delicata) squash
2 tbsp olive oil
1 tsp minced garlic
¼ tsp salt
½ tsp pepper
¼ cup Walden Farms Walnut Syrup
Cut squash in half and clean out the seeds. Once the seeds are removed cut into 1” pieces. Toss with olive oil, salt and pepper. Line your baking sheet with foil and spray with non stick spray.
Bake at 400 for about 20 minutes. After 20 minutes add garlic and sugar free walnut syrup for 10-15 extra minutes (keep your eye on it so the syrup doesn’t burn). When cubes are evenly golden and slightly chewy, you’re ready to eat!!

Good morning or afternoon rather (🙊hehe) so I’ve been living off of oat flour pancakes for the past year and they are soooooo delicious and easy and healthy!..however, I wanted a different kind of pancake this weekend so I came up with an almond flour recipe and omgggg it was heaven! My mom and sister 100% approved it was soooo good! The pancakes almost have a French toast taste to them and they are super soft and basically everything that a pancake should be! I topped mine with almond butter, bananas, walnuts and a raspberry-wild blueberry sauce and syrup! 😍😍😍 I only wish I could have shared this with you all! But being I couldn’t share it in person I will share it this way! Here is the recipe for you to try yourself if you wish! By the way they are vegan (of course😉🌱), gluten free, oil free (except for a tiny bit of oil used to cook them), and refined sugar free! 😱 and still they are packed with flavor and deliciousness! So here it is:
1 cup almond flour
3 tbsp potato starch
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
2 golden flax eggs (2 tbsp flax meal with 4 tbsp water whisked well and set aside for 5 minuets to thicken)
1 cup coconut milk
1 tsp tsp vanilla extract
1 tbsp maple syrup
Mix your dry ingredients set aside. In a separate bowl mix your wet ingredients and then mix the dry into the wet! Heat your pan on medium heat and for my pan I had to use a little bit of oil to make sure they didn’t stick so I’m not sure if they wouldn’t stick without oil! You can totally try it for yourself and let me know how they come out! Top with whatever you would like and voilà! So heavenly! Well here I am, once again😁 I put coming here off more than twice, telling myself that I can workout at home and walk but the realization is that, that rarely happened on a consistent basis ssssoooo I'm doing what I know I have to do for MY goals and MY lifestyle. And please notice the capitalization on MY lol, I know someone's thinking "well what's wrong with working out at home/walking?" You can take away your house, you can take away your fancy clothes, you can discard all the beauty products in the world and all that would be left is your vessel. Your body. Your beautiful, perfectly imperfect, universally made, human form.
We are often not taught as children how very important it is to treat this as if it’s your very best friend. Most of the time when we are young, many of us are in decent health, and we don’t see a need to put so much care into keeping your bones strong, your muscles worked and your organs nourished with wholesome food, that this earth created for us to consume.
In a society preaching fad diets, quick fixes and fast weight loss, it’s important for us to educate ourselves on WHY we shouldn’t be too overweight, have a docile daily routine, and eat REAL food, not packaged crap from the freezer or cupboard. Different things work for different people, but the key is to never stop trying to figure out how to be the healthiest version of you. This doesn’t mean reaching a number on a scale or counting calories. It means paying attention to what helps you sleep well, give you natural energy, stabilize your moods and give you your happiest and highest self.
Treat yourself like you deserve the very best of the best in this world when it comes to self love and nourishment. You really only have ONE place to live and that is in your body. No where else. So love it to the ends of the earth and invest in yourself so you don’t wish you had later in life.
