All the sweet potato toasts to fuel up for this Monday! This is one of my favorite meals because it’s so quick yet versatile. Just cook the sweet potato slices in olive or avocado oil in a pan for ~7 min per side, then add allll the toppings. Which one is your favorite? Happy Monday! ✨

Mushroom & pea risotto 🌱 : garlic, fresh chilli, onion, risotto rice, peas, mushrooms, tahini & yogurt.
Method: ⭐️Cook the garlic, chilli, onion for a few minutes before adding the risotto rice. ⭐️Then add water a bit at a time until the rice has absorbed it
⭐️Add peas, and fry off the mushrooms in a different pan ⭐️Add the mushrooms, tablespoon of yogurt and a teaspoon of tahini

I need to get this off my chest as it’s been weighing quite heavily on my heart lately. Many of you know that I have been open about my anxiety and eating disorders. There is one young lady who I follow who is struggling very much with anorexia. I am overcome with sadness when I see her posts because she is progressively getting worse. I fortunately never got to be so sick that I was as thin as she, but I still went through the hell that anorexia and other eating disorders bring. Denial is something that anyone with this illness will go through and it’s SO SAD because no matter how much loved ones try to help, ultimately the person with the illness has to make the decision to get help. The fatigued mind and body are numbed by the voice that tells you food is the enemy. I remember feeling foggy all the time as my mind and body wasn’t being fed (literally my brain had no fuel/fats). I wish there were more resources for young women and men to educate them on proper nutrition not only for the body but for the mind! I pray that this beautiful young woman who I am specifically referring to finds her inner strength to stand up to the voice of anorexia and tells it to “f*#! off!” #edrecovery
is NOT easy, but it is possible.

Anyway that’s not what this is about. I wanted to ask you: What does healthy eating mean to you? Which foods should we eat daily and are there foods we should avoid?
A little food for thought: Personally I think of food as a package. There are food that contain quite an amount of protein, iron, calcium, B-vitamins but lack in fiber and antioxidants. Instead they are sources of saturated fats, cholesterol, antibiotics, ... Compounds we don’t (or shouldn’t) want in our bodies. If you want to start eating healthier I can definitely recommend Dr Greger‘s „Daily Dozen“ app! And if you want to inform yourself a little more thoroughly his book „How not to die“ is an amazing, scientifically accurate choice. What I love most is his honesty regarding medical studies and trials. If one is BS he clearly says so!

🤰 I’ve actually been finding this last month the most enjoyable❤️ i honestly don’t feel like I’m “that far along” and enjoy it so much that it feels so surreal that it’s almost the end. Did have anxiety a few weeks ago about being ready for Nugget, but after stressing so much I gave myself a cold (and cold sore) Wei and I made a to-do list & tackled it, now we’re ready! But I wouldn’t mind if Nugget took the full 40 or 41 weeks before the arrival. Now that everything is done I’m looking forward to just relaxing & spending 1:1 time with my husband before we’re a family of 3 👪

Little bit of personal life on my foodie page 😘 I’M ENGAGED ❤️❤️ we’ve just got back from a few days in Copenhagen where Matt proposed on the first day and we ended up eating and drinking our way around the city in a haze of happiness! On the 2nd night we knew we needed some downtime so used our @Airbnb
for a homemade soirée of pizza, tapas, chorizo, crisps and all the gluten free goodness! Will make sure I share some of our fav spots as we found so many!
Ash has been asking for crepes all weekend.... I didn’t have any eggs on Saturday and then on Sunday I realized we were out of fruit!! So after our big grocery shop yesterday we were all set for crepes this morning 👌🏻
I used my super simple gluten free crepe recipe and while it took a few tester crepes to get the hang of it I was flipping crepes like a pro in no time!! .
Now off to workout and get ready for a day at the theatre 🎭 .
Easy Gluten Free Crepes .
4 TBSP melted butter or coconut oil
1 tsp honey
1/2 tsp pink Himalayan sea salt
3/4 cup gluten free flour
2 cups milk of your choice
Additional coconut oil or butter for pan
1. Beat eggs on medium high until pale yellow and fluffy. (5 min)
2. Add butter, honey, sea salt, and flour. Beat in low speed to combine.
3. Add milk one cup at a time, blending after each addition.
4. Strain the batter through a sieve to remove clumps of flour if needed.
5. Heat a lightly buttered stainless steel frying pan over medium heat.
6. Pour 1/4 cup or one ladle full of batter onto the pan. Tilt the pan with circular motion to spread evenly so that the batter costs the surface.
7. Cook each crepe for about 1 minute until the bottom is lightly browned and it can be easily loosened.
8. Turn the crepe and cook lightly on the other side. .
Note: the first one or two likely won’t turn out as you adjust cooking temp and learn how best to flip the crepe. Use the first try as a taste tester to make sure they are yummy!! .
Fill each crepe with any fillings you like! I used Greek yogurt, berries, and peanut butter on mine but the kids enjoyed berries and whip cream! 🍓
🍝🍃🥒 ZOODLES 🥒🍃🍝 copy cat of the raw food dish we had in Prague 😋👅 zoodles with homemade pesto, cherry tomatoes and pine nuts 🍝🥒🍅🌰
You can eat this as it is or as a side dish with some source of protein 😋😋😋 Ingredients for the pesto:
4 dl / 1.7cups fresh basil leaves ,
1dl / 1/2 cup olive oil,
2 dl / 1 cup pine nuts,
4 cloves of garlic,
1 dl/ 0.4 cups nutritional yeast
Salt (i used around half teaspoon), Black pepper (around half a tea spoon)
Producedure: mix all the ingredients in apart from the salt and pepper in a food processor. Taste with salt and pepper. Serve with the spiralized zucchini (zoodles)., extra tomatoes and pindnuts! Enjoy 👌😍
🍝🍃🥒 ZOODLES 🥒🍃🍝 kopierade en utav av raw food rätterna vi åt i Prag 😋👅 zoodles (spiraliserad zucchini) med hemgjord pesto, körsbärstomater och pinjenötter 🍝🥒🍅🌰 Du kan äta detta som det är eller som den är eller med någon proteinkälla 😋😋😋 Ingredienser för peston:
4 dl basilikablad (färska),
1 dl olivolja,
2 dl pinjenötter ,
1 dl bjäst
Salt (jag använde cirka 1/2 tesked),
Svartpeppar ( jag använde cirka en halv te sked)
Procedur: Blanda alla ingredienser i en matberedare forutom salt och peppar. Smak med salt och peppar. Servera med spiraliserad zucchini (zoodles), körsbärstomater och pindnötter! Njut 👌😍

Why should you start doing box jumps??
Because it works your entire body strength like CRAZY!!! .
They require your leg muscles and core muscles to contract very quick so you can generate maximum force every jump! .
You also use your arm muscles to propel up!! .
It increases your strength, muscle town and it makes you look cool 😎 lol 😂!! .
My advice ... include them in your training to see better and faster results !!
