Carrot and zucchini pasta is mixed with a creamy, avocado cucumber sauce for a simple and delicious zucchini noodle recipe. And while it’s simple, it’s packed with so much flavor that I guarantee you’ll be making it again and again.
2 large carrots
avocado cucumber sauce
1 avocado, peeled and pitted
1 cucumber, peeled and sliced
1 lemon, juiced
2-3 garlic cloves
salt and pepper, to taste
Spiralize the zucchini and carrots. Then place them in a large bowl and set aside.
Add the remaining ingredients (except the microgreens) to a food processor. Process until smooth and creamy. Pour the avocado cucumber sauce onto the carrot and zucchini pasta and toss to combine. When serving, garnish with an extra sprinkle of black pepper and a handful of micro-greens.

Sorry for the late post, it was a busy last week with the hubby's birthday, our anniversary tomorrow, my mom's birthday, going out of town and goodbyes to friends who are leaving Korea and hellos to old friends. Everything seems to happen at once doesn't it!
Now you maybe asking why I would tell people to eat a fruit when they come to visit, but Korea has the most AMAZING STRAWBERRIES EVER! They are sweet and bursting with flavor. You have never had a strawberry like this, trust me! They only come out during strawberry season which is winter, so those who are coming for the Pyeonchang Olympics will get the chance to eat them before they are gone.
You can buy strawberries at the supermarket or the outdoor markets. They are pricy, about 7,000₩~8,000₩ a carton at the grocery store, but they are worth it. Eat them right away because vegetables and fruits in Korea do not last long due the lower use of chemicals. I always buy the organic strawberries and they must be eaten the same day.
Strawberry season also comes with an influx of strawberry desserts and you can find cakes, bingsoos and pastries filled with strawberries. These desserts go away once the season us over so make sure to try them when you have the chance. One of my favorite desserts is Strawberry Milk Cake which uses a lighter frosting, almost like a whip cream. The fluffy cake and sweet strawberries are a perfect combination with the milky frosting. You can buy this at almost any bakery during the winter but try the non-chains for the best flavor.
So if you are in Korea for the Olympics, you must try the strawberries. You will fall in love! Eat On!

Beach ready although I'm not going to the beach on this 39 degree day here in Melbourne. I've received my @cupshe bikini and I was so excited to try it on. I am totally in love with it 😍 As I post this though I've realised that this is the very 1st time that I've ever posted a photo of myself in a bikini. I guess like so many other people I've had body issues. Big in that area, too small there, strechmarks, saggy skin, uneven skin tone, too much this, not enough that ..... arghhhhhhh, it's enough to make anyone crazy. This year one of my goals was to love myself, flaws and all so here I am. No filter, crappy lighting, standing before everyone in my bikini. Gym, personal training, yoga, Kayla Itsines; Bikini Body Guide, following The Fitness Marshall videos, doing occasional boot camp, evening walks etc has helped shaped me to be who I am today. Body positivity all the way. Love yourself 😘
This lady right here. I can't even come up with the words to describe what a beautiful person she is, because nothing I could say would be good enough. She is truly THAT amazing. She would help anyone and everyone that she possibly could. She has such a good heart and soul and sees the best in every person she comes in contact with. The older I get the harder it is to function off of little amounts of sleep, what happened to the days I felt totally normal after being up until 6 am!?
Good sleep is a necessity for our bodies. Hormones are released for tissue growth and repair when we’re sleeping. Our brains sort through all the information it absorbs and decides what to hold on to, our bodies make more white blood cells that attack viruses & bacteria allowing it to defend itself. Using essential oils before bed can be beneficial to all our body systems, and the quality of sleep we are getting. 🌿Lavender: my favorite for sleep! We use 3-4 drops in a diffuser near the bed every single night, and apply 2 drops to the bottoms of the feet & wrists.
