Mushroom gnocchi creamy soup
Love creamy soup? Try this out! It’s a herby creamy soup that I created from just what I have at home.
ingredients for two servings
- 3/4 cup mushroom
- Olive oil
- 1/2 cup diced onion
- 1/2 cup shedded carrot
- 1 tbsp butter
- 2 cup milk, I used 2%
- 1 cup chicken/vegetable broth
- 1 Rosmary sprig
- 2 thyme sprigs
- 1/2 tbsp garlic powder
- 2 tbsp all purpose flour
- 3/4 cup Gnocchi
- 1/4 cup Bacon bits
1. Roast mushroom with olive oil in a pot until it has a little brown color. Take the mush room out and rest.
2. In the same pot, warm butter and add onion and carrot, stir until onion is translucent and carrot is softy cooked. Add milk, broth, Rosmary, thyme, garlic powder, salt and pepper. Use sieve to add all purpose flour and stir immediately until the soup is cooked. Remove the herb and rest until it gets colder.
3. Cook the gnocchi in boiling water, notice if they are floating which mean they are cooked.
4. Blend the soup with a blender until it’s smooth (make sure it’s not too hot) then use a sieve to add the soup back to the pot on medium-low heat. Add mushroom and gnocchi until the soup and wait until the soup it’s boiled again.
5. Scoop the soup in a bowl, top with bacon bites and eat with any choice bread or crackers.

My 5pm snack times are back in full swing with a lil bit of a twist... I’m trying to make them more wholesome! As much as I loved alternating between fried plantain chips and popcorn on a daily basis it wasn’t making the cut so I decided to swap it for something more “healthier” ....and today I made myself an acaì bowl but more like a fruit bowl with 80% chopped fruit (pineapple, tangerine, passion fruit, watermelon and young berries) and 2 table spoons of low fat plain yogurt on lè side and edible flowers 🌸🌼🌻🌺🥀🌹🌷💐
I’m I still hungry? Yessssssssssssss 😅 do I want to grab a pack of fried plantain chips from my brothers “school snacks draw” yessssssssss but I’m I going to... at the moment and as I’m writing this the answer is no. Only because I decided to log down what I’m eating for the week just to gauge how bad my snacking and water consumption is and so far today it’s actually looking pretty good and cba to mess it up! So yay to logging but I’ll be back for mi plantain 🍌🍌🍌

Certaines alternatives sont possibles comme tendre vers le végétarisme, refuser catégoriquement de consommer de la viande ou des œufs issus d’animaux qui ont été maltraités, boycotter les marques qui utilisent des colorants, des additifs, des conservateurs, des arômes, trop de sucre ou trop de sel… il y a tant à faire et si peu à la fois pour retrouver une alimentation frugale et naturelle, qui nous serve.

Today I accomplished: the presentation with a provider. I mentioned this in my previous post, and I am still buzzing from it.
I have had a positive experience with: MYSELF! I’ve been on my own since the meeting, but what I have been doing is turning any negative thought into a positive one. Or listening to other people talk negatively about things, and spinning a positive in my mind about those too.
Something I did for someone: one of my team has got a lot on her plate at work at the mo, she’s not only a colleague but one of my besties too. So I offered to help in any way that I can to reduce her work load but most importantly her stress 💕
This little guy is always rebellious, testing the waters of how far he can go 😅🤦🏻♀️ but i love him anyway 🐶💘 - animals (for me especially dogs - i‘m a 100% dogperson 🐶😛) can add so much joy and happiness to our lives ✨🌟 so we too should give them all our love and appreciation! (with „them“ i actually mean all the animals 🐻🐮🐷🦊🐰🐯🐥🐸🐛🐵 no matter their skin/fur color or race 😉)

In short, when you are dehydrated you feel worse. You'll get fatigued quickly, feel weaker, and notice you aren't as mentally sharp. What’s sad is that many people have been living dehydrated for so long that they don’t know they are experiencing negative side effects. Instead, they think this weakened state is “normal.” 🙈
A trick to help you drink more water is putting 5️⃣ silent reminders on your phone go off throughout the day. Just simply saying, "Drink Water." 🤳🏼
At the end of the day, you have to figure out what works for you. The most important thing is you get 100 oz of water consumed daily. If you can’t get access to enough clean, alkaline, or mineral water - then you are only cheating yourself and the pursuit of your full potential 🙌🏼

👉🏼1.5 lb chicken thighs
Garlic Yogurt Dip
👉🏼1 1/2 greek yogurt full fat
👉🏼2 Tbsp chives
👉🏼2 Tbsp basil
👉🏼2 Tbsp parsley
👉🏼1 clove garlic, minced
👉🏼2 Tbsp lemon juice

I know I’ve said this a bazillion times but there’s nothing like leaving the gym feeling like a boss ass 🐝. Yesterday’s back workout did just that . Full workout is listed below, give it a try and let me know whatcha thannnkkk 😘

This chicken noodle soup was super delicious!! I used the chicken bones and carcass from Sunday’s roast chicken and made a stock in my #instantpot
then today used that plus left over chicken to make soup (also in the IP, so easy to sauté the onions and garlic, add carrots, broth, spices and some pasta, 4 minutes and done (chicken was already cooked). 💛
