here 😁 I’m so excited to share this little creation with you! Ramadan is the time when that sweet tooth turns into a little monster 😅 so for those of you who want to take a break from Basbousa, Konafa and other traditional sweets here is a dessert made entirely out of healthy ingredients. Dates and date syrup ( of course from @sarasorganicfood
) and nuts. .the base is dates, about 250gm and same amount of nuts or seeds, any kind you like. Or a combination like I did. I used pistachios, sunflower seeds, pumpkin seeds, chia and I added cocoa nibs, but if you don’t have it just use couple of spoons of cocoa powder. .the filling. Soaked cashews, a little water, date syrup, cocoa or Cacao powder, dash of vanilla, lemon juice and blend until super smooth. The method is the same as for cheesecake but freeze it instead. you would be surprised how much a little weight gain effects the body and mind.. Yes at the beginning I found this mentally terrifying to start...
With every bite of my 'bulking' food I was imagining myself stones heavier.. Thinking to myself that I will look terrible with more weight that I am going to be so unhappy in myself because of this..
Man was I wrong!
The gaining of just these 8lbs has seriously improved my mood.. My energy.. My libido 🤫🤭My bum(its grown almost 2inches)😂 😂 and my overall health!
I hadn't realised how much my personality had changed over time.. How long it had been since I truly laughed so hard it was almost lik an ab workout! And for this I am truly sorry and apologies to myself, my wonderful husband my friends and my family.. Because while the past few months even year were tough on me with watever this mental physical ridiculous obsession I had was I can imagine how they had been for you all to also see me go through too..
I am loving my life again and embracing every pound gained 💚👌
Happy and healthy are my only goals right now

4 years ago, ~3.5 years ago, 2 years ago... and now. I’d love to say I’m still happy with how I look and I’m healthier for it, but the truth is I worked hard to lose the weight I carried from when I was a teenager to when I graduated University, losing 3.5 stone / almost 50lbs / 25kg. I could run 10km and cycle 100km, and now I can barely run 3km and cycle 20! I’m pretty gutted to have put on half the weight I worked so hard to lose, and the stress of doing a PhD I think had played not a small part in that - but I’m determined to get my fitness back up, and hopefully lose a few of those extra kilos 😅 #strongnotskinny #iswhatimaimingfor
