Hey guys!👋 So I made some oil free potatoes for lunch cause I’ve been craving them like crazy lately! I am not like on an “oil free” diet or whatever, but I prefer to bake my potatoes,tofu, tempeh, etc. oil free because they end up crispier!(at least in my opinion ,some may say the opposite🤷♀️) I served this with some homemade guacamole and it was literal heaven😍 I swear right now my diet consists of watermelon, smoothies, and potatoes right now lol, but I’m not complaining!!

manuka honey + lotttts of crunchies is my kinda afternoon🙌🏻😎🍫🥜made a complete MESS in my kitchen today, got melted peanut butter all over my marble, spilled a box of cereal on the floor, dealt with some frustrating work things and got stuck underground for over an hour waiting for the path to come (it never came BTW🙄) some days it’ll feel like nothing is going right and i used to dwell over that. i strived for perfection and sure it paid off in some ways but long term that isn’t a way to live. learning to accept that NO ONE’s life is perfect and there’s no such thing has having “no issues” and “no to-do list” has been a huge lesson i’ve learned. i can now sit with my laundry basket overflowing, some crumbs left on the counter and that’s OKAY! at least i have some delish peanut butter treats for later, right?😉💛✌🏻#rachleats #glutenfree #peanutbutter #wholefoods

HEALTHIFIED LEMON CHEESECAKE 🍋🍰
This ‘healthified’ lemon cheesecake is free from any refined sugar, made from all natural ingredients, plus gives an added punch of protein with the help of @yoproau
- 1/2 cup almond meal
- 1/2 cup quick oats
- 1/2 cup desiccated coconut
- 2 tbs coconut oil
- 2 tbs rice malt syrup
- 2 tbs hot water
- 320g (x2 small tubs) lemon @yoproau
- 250g light cream cheese
- 2 tsp vanilla extract
- 1/4 cup lemon juice
- rind of 1 lemon
1. Combine almond meal, oats and coconut in a bowl.
2. In a separate microwave safe bowl, heat coconut oil and rice malt syrup in small increments in the microwave, until melted together.
3. Pour melted oil/syrup mixture in with the dry ingredients, as well as adding the hot water. Mix until well combined. Press base mixture into springform pan and bake in the oven (160c fan forced) for 5-10 mins until just starting to brown. Set aside to cool.
4. Using electric beaters, mix the yogurt, cream cheese, lemon juice and rid, and vanilla extract on low-medium speed. Once combined and holds together nicely, spread on top of cooled base. Return to the fridge to set for 2-3 hours.
5. Top with a handful of blueberries, coconut chips and lemon rid.

〰️Buckwheat Banana Bread Blondies (gluten, dairy, & nut free)〰️
-1 1/2 large overripe bananas, mashed
-1/2 cup unsweetened applesauce (or another mashed banana)
-2 large eggs, room temp
-1/3 cup coconut sugar
-1/3 cup @artisanaorganics
coconut oil, melted
-1/3 cup coconut flour
-1/4 cup buckwheat flour (can also use almond or oat flour)
-2 scoops @vitalproteins
collagen peptides (optional but love adding it to baked goods👌🏼)
-1/2 tsp vanilla extract
-1/2 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp cinnamon
-1/4 tsp pink salt
-1/3 cup chocolate chips (+ extra for on top)
Preheat oven to 350F and line an 8x8 pan with parchment paper. In a large mixing bowl, beat together mashed bananas, applesauce, eggs, and coconut sugar until combined. Add the rest of the ingredients (except for the chocolate chips) and mix well. Fold in the chocolate chips and pour batter evenly into the pan. Top with extra chocolate chips if desired, then bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely before cutting & store in the fridge.

What happens when lemon brings blueberries and raspberries to the breakfast party? This superrrrrr moist and delicious breakfast loaf. It's packed with antioxidants from the berries and healthy fats from the coconut oil/flour. I've been using this to top my yogurt bowls and as a late night snack!
I'm obsessed with this recipe from @thegranoladiaries.
It's really easy to make and I conveniently had all the ingredients in my kitchen. The best part is it's #GlutenFree
so you don't have to feel bad about eating most of it yourself 💁 recipe below!
1/3 C Coconut oil, melted and cooled
2 – 4 Tbsp honey (more = sweeter)
Juice of 1 medium lemon
1/3 C Almond Milk (can sub regular milk)
1.5 C Oat flour (I just blended some dry oats)
1 tsp Baking powder
Pinch of salt ~ 1 C Frozen blueberries
Preheat oven to 350 and line a loaf tin with parchment or grease with coconut oil.
Whisk coconut oil, honey, eggs, and juice of 1 lemon in a bowl.
Fold in oat flour, baking powder, pinch of salt, and almond milk and stir until just combined. Lastly, fold in blueberries very gently.
Transfer to loaf pan, top with a couple extra blueberries, and bake for 38 – 40 minutes! Allow loaf to cool and then slice and enjoy! Store in fridge or freezer.

Buenas tardes! Ya casi es hora de merendar y hoy los voy a antojar con este delicioso Brownie Blanco en "versión saludable". Tiene muchas menos calorías que un Brownie normal y está preparado con ingredientes saludables y con muchos nutrientes. Peroooo como ya saben ☝🏻... en la vida todo es un equilibrio, por lo que siempre recalco la importancia de combinar una alimentación saludable y balanceada🍃 con ejercicio diario 🏃🏻♀️ Así podremos disfrutar de vez en cuando de un buen postre sin remordimientos 😅
Aquí les dejo el tip de como prepararlo 👩🍳
🔆 110 gr harina de avena @jincafoods
🔆 155 gr harina de garbanzo @jincafoods
🔆 135 ml de leche de almendras
🔆 45 gr de azúcar de coco
🔆 1 cdta de educolorante
🔆 1 cdta de vainilla
🔆 Chispas de chocolate negro sin azúcar
Pre calentamos el horno a 180 °C
En un procesador ponemos la harina de garbanzo, el azúcar, la leche, el educolorante, la vainilla y mezclamos hasta que todo este bien incorporado. Luego añadimos la harina de avena con movimientos envolventes con una espátula y por último incorporamos las chispas de chocolate (va a quedar una masa bastante compacta). Vertemos la mezcla en molde previamente engrasado y horneamos de 25 a 30 minutos. Dejar enfriar y servir. *Es mejor preparalo de un día para otro, para dejar que los sabores se incorporen bien. 😉
