Good evening everyone! 🌙 I hope everyone had a lovely Sunday ☀️ My day was spent tidying up my apartment for the week ahead, relaxing with my kitties, and MEAL PREPPING. However, today was a bit dreary and rainy 🌧 I decided to whip up these healthy chocolate chip blondies to help brighten up the day! These blondies are paleo, gluten free, vegan, and most importantly....DELICIOUS! ♥️ scroll for ingredients and instructions! ⬇️⬇️⬇️⬇️⬇️⬇️⬇️⬇️⬇️⬇️⬇️⬇️⬇️ 1/2 cup coconut flour 1 tablespoon tapioca starch ½ teaspoon baking soda ½ teaspoon salt 2 ripe bananas 1 tablespoon chia seeds plus 3 tablespoons water, set for 10 minutes 6 tablespoons nut or seed butter (I used almond) 4 tablespoons coconut sugar (1/4 cup) coconut oil, melted 1 teaspoon vanilla extract (1/2 cup) chopped walnuts (optional) (3/4 cup) dark chocolate, chopped into chunks 🔹Instructions!🔹 Preheat your oven to 350ºF and grease or line a square baking tin. In a small bowl, whisk together your flours, baking soda and salt and set aside. In a separate large bowl, peel and mash your banana until smooth. Stir in the chia, nut or seed butter, coconut oil, coconut sugar until combined. Slowly add the flour mixture to wet mixture, stirring until combined. Fold in walnuts and chocolate. Pour batter onto the baking pan and smooth out the top. Quería postearla hoy Domingo para que se prepararan para mañana ya que para muchos, el lunes significa #LUNESSINCARNE . Este plato es (como acostumbro a decir a todo lo que me gusta) UNA DI VI NU RA es NUTRITIVO, versátil y una manera genial de integrar nuevas alternativas a tu alimentación: - - - 🍔Hamburguesas de Lentejas - - INGREDIENTES: - - 2 tazas de lentejas - 3 tazas de agua - 2 cdas de harina de avena - 1/2 zanahoria rallada - 1/2 zapallo italiano/ calabacín/ zucchini - 1/2 pimentón/pimiento - Ramilletes de cilantro al gusto - 1/2 cebolla finamente cortada - 2 dientes de ajo - 1 cda de cúrcuma - Sal y pimienta al gusto - 👩🏽‍🍳PREPARACIÓN: - - 1. Remoja por 30min las lentejas en agua tibia. 2. Retíralas del agua y colócalas a hervir en 2 tazas de agua por aprox 10min. 3. Si hay exceso de agua, simplemente retíralo. Agrégales sal, pimienta, cúrcuma y el ajo mientras están en el fuego. 4. Retíralas del fuego y déjalas enfriar un rato. Una vez que estén a temperatura ambiente agrega los veggies rallados y picados (cebolla, zapallo, zanahoria, cilantro, pimiento). 5. Con tus manos, integra todos los ingredientes y agregar poco a poco la harina de avena. 6. Debes obtener una especie de masa, con la cual puedas formas las hamburguesitas. 7. Llévalas a la plancha o al horno ( de ambas formas quedan OMG) 8. No bake, chocolate protein bites. Easy to make and cures a small chocolate fix. 5.7c 1.8f 6.6p per bite. Put 2 tbsp white chocolate chips and 1 tbsp fat free fairlife milk in microwave for 10-15 seconds In big mixing bowl mix: 4 scoops vanilla protein powder (I use pescience) 1/2 cup coconut flour 1/4 cup unsweetened cocoa powder 2 tbsp swerve, sugar substitute Mix melted chocolate chips and milk Slowly mix in 1/2 cup fat free fairlife milk while stirring. Pack and roll into balls. (Mine made 18) Place in freezer for 30 minutes. Make frosting (melt 2 tbsp white chocolate chips and 1 tbsp fat free fairlife milk) Drizzle over bites, replace in freezer for 5-10 minutes. "One of the first Plant Paradox, lectin free ‘desserts’ I made was the Shirataki rice chocolate pudding from The Plant Paradox book. I’ve always been really happy with it, but it involved a little few extra steps that were making this dish less approachable. Nothing difficult, but I heard people asking if there is a way to make it easier. Last night I wanted to fix some easy dinner and didn’t have much in the fridge. I was also craving chocolate (I didn’t have any in some time), so I thought I’d give this recipe a try without following all the steps in the book. It worked! . . Shirataki Noodles Chocolate Pudding with Almonds . . Serves: 2-4 Prep Time: 10 minutes Cooking Time: 20 minutes . . INGREDIENTS: . . 🔹1 pack (7oz) Shirataki Noodles Angel Hair OR Miracle Rice . 🔹1 cup unsweetened, original hemp milk (Pacific brand, or any other clean one) . 🔹1 pasture raised / omega 3 egg . 🔹1 tbsp arrowroot powder . 🔹3 tbsp cacao powder (NOT cocoa, but pure, organic, non alkalized cacao powder) . 🔹1 tbsp Swerve (confectioners) - or more . 🔹1/4 cup slivered almonds, no skins plus a little more for decoration . 🔹1/4 - 1/2 cups coconut flakes . 🔹1 tsp pure vanilla extract . 🔹1/4 tsp pure almond extract . 1/4 tsp cinnamon . 🔹Pinch of salt . . DIRECTIONS: . . 1. Preheat oven to 350F. . . 2. Rinse the noodles or rice thoroughly in cold water, in a colander, for few minutes. Let aside to drain. . . 3. In a bowl mix the hemp milk with egg. . . 4. Mix arrowroot powder with a tsp of cold milk and add to the bowl. . . 5. Add cacao powder, whisk well. . . 6. Add the sweetener (1 tbsp or more). . . 7. Add the almonds and coconut flakes, vanilla and almond extract, cinnamon. . . 8. Add the noodles to the pyrex dish in an even layer and top with the mixture. . 9. Add more slivered almonds and coconut flakes on top. . . 10. Bake for 20 mins. . . 11. Take out and let it set for about 10 minutes,
