My very first attempt at making healthier homemade Twix bars! I did some research and looked at different recipes then finally decided to make a recipe that is a combination of different ones from the internet. It didn’t take long to make and it tasted good. Of course there is room for improvement but it was a success as a first attempt 😀 Preheat the oven to 180 C FOR THE BASE LAYER 1 1/4 cups almond flour 1 tbsp coconut flour 3 tbsp melted virgin coconut oil 3 tbsp date syrup 1 tsp vanilla Line a rectangular or square baking dish with baking paper. Spread the mixture evenly then press firmly into the bottom of the pan. Bake for about 15 minutes then allow it to cool while preparing the other layers. FOR THE CARAMEL LAYER 1/2 cup date paste (I bought the ready paste from the supermarket) 2-3 tbsp boiling water 1 tbsp hazelnut or almond butter 1 tbsp melted coconut oil 1 tsp vanilla A pinch of salt First add the boiling water to the date paste and mix well to create a thinner consistency, then add the rest of the ingredients and mix well. Pour over the cooled base and spread evenly but gently with the back of a spatula. Place in the freezer for 15 minutes to harden. FOR THE CHOCOLATE LAYER 1/2 cup semi-sweet chocolate chips Melt in the microwave for 1 minutes, mix well then pour over the caramel layer and spread evenly. Place in the fridge for about an hour then remove from the pan and place it on a cutting board. Absolutely delicious banana strawberry chia pudding I made. Totally inspired by @meghanlivingstone banana peach chia pudding recipe. (I’m kind of obsessed with her YouTube channel! It’s so good! 🤗) Such a healthy and delicious dessert and snack ❤️❤️ . . . Recipe: . Ingredients * 1 1/2 cups strawberries (fresh or frozen) * 1 banana * 1 can full-fat coconut milk (400ml) * 1/4 cup water (use 1/2 cup if you prefer a thinner pudding) * 1/4 cup chia seeds (white or black) * 2 tsp vanilla extract * 1 tsp cinnamon . Optional Toppings: * cinnamon * shredded coconut * hemp seeds * pomegranate seeds . Instructions 1. Add all ingredients EXCEPT chia seeds to blender and blend on high for about 1 minute, until very creamy.
. 2. Add 1/4 cup chia seeds to large bowl.
. 3. Pour mixture into bowl with chia seeds and stir thoroughly.
. 4. Cover or transfer to large container with lid (or individual single-serve jars) and set in the refrigerator for 3-5 hours, or preferably, overnight. Setting overnight ensures a thicker pudding with soft chia seeds (they'll be slightly crunchy if not chilled long enough).
. 5. Once it's set, pudding will be very thick and so beautifully decadent! Enjoy!

Recipe: Chocolate: - 1/4 heaping cup cocoa powder - 3 tbsp melted coconut oil - 1/4 cup maple syrup —-> mix all ingredients in a double boiler to keep runny OR - melt your favourite dark chocolate bar/chocolate chips with 1 tbsp coconut oil Filling: - 1/4 cup nut butter of choice - 1/2 tbsp maple syrup - 1/2 tbsp coconut flour (optional, to create the texture) Spoon about 1 tsp into 9 mini muffin liners, using spoon to spread chocolate up the sides. Place in the freezer for 10 minutes. Next, spoon nut butter mixture into center and press down lightly. Spoon remaining chocolate (about 1/2 tsp) on top and place back in freezer! Homemade chocolate cups need to be stored in the freezer. It's that time of the year again! Pumpkin pie time 🍁✨🎃 I'm wasn't in the mood for baking today so I went for a no-bake pumpkin cashew cheesecake on a pecan crust 😋 Sooo good! And I had the rest of the roasted pumpkin for lunch, so definitely a win win 😊🙌 ️⠀ No-bake pumpkin pie ️⠀ Crust: 1 cup pecans 1/2 cup oats (gluten free if needed) 8 medjool dates (fresh and juicy or soaked in hot water and drained) pinch of sea salt Add oats and pecans to a food processor and blitz until broken to small pieces. Add dates (I soaked mine cause they weren't very juicy) and salt and blend until wet, crumbly dough is formed. You can add a tbsp of water if too dry. Press the dough into a tart pan and place in the freezer while preparing the filling. ️⠀ Filling: 1/2 cup cashews (soaked overnight or 30 minutes in hot water, drained) 1/2 cup pureed roasted pumpkin 3 tbsp maple syrup 1 tbsp lemon juice 1/4 cup full fat coconut milk 1 tbsp coconut oil, melted 1 tsp cinnamon (optionally) your favourite pumpkin spices ️⠀ Add all the ingredients, besides coconut oil, to a food processor and blend on high speed until creamy. Taste and adjust maple syrup or lemon juice if necessary. Add melted coconut oil and blend for one more minute. Pour into chilled pie crust. Makes one 9 inch pie and 1/2 cup extra:) Recipe is 12 servings of 1/2 oz lean, 1/3 green, 1 condiment Ingredients: 2 +2/3 eggs 3/4 tsp lemon juice 1/4 + 3 drops tsp vanilla 1/2 + 1/8 tsp pumpkin spice emulsion* 1+ 1/8 tsp maple extract 1/2 + 1/16 tsp cinnamon 1/2 + 1/8 tsp pumpkin pie spice 4 + 2/3 packets stevia 2TBSP Smart Balance light butter 1/2 c low fat evaporated milk pinch of salt 1+1/3 c cooked spaghetti squash 2/3 c cooked delicata squash Directions: Pre-heat oven to 350 Place all ingredients in blender and mix well. Pour mixture except 1/2 c into 9"pie dish and sprinkle with cinnamon. Bake other 1/2 cup. (You can put all the mixture in the pie dish but it's really full and the outer edges get overcooked) Bake 20 minutes or until thermometer read 174 degrees. *Emulsion is used instead of extract because the oils do not bake out as they do in extract. Fudgy Blackbean Blender Brownies - oh my gosh so pumped for this recipe!!! No flour, minimal sweetener, fantastic fudgy texture, packed with protein, and so simple! Im finding it very difficult to not eat the whole pan... -1.5 cups black beans, rinsed well (1 15oz can) - 2 eggs - 1/4 cup cacao powder - 2 tbsp coconut oil (no need to melt) - 1/2 cup maple syrup - 1 tsp vanilla - 1/4 tsp salt - 1 tsp baking powder -1/2 cup vegan chocolate chips (I use Enjoy Life brand) Throw everything except the chips in a blender and blend until smooth. Pour into a greased 8x8 pan and add the chocolate chips, mixing in. Add more on top if desired. Bake at 350 for 25 minutes. Allow to cool completely before cutting. Store in the fridge. Quick and easy cherry and blueberry clafoutis for this Fri-yay🍒😋 You’ll need: -#oktoberfresh cherries and blueberries 🍒 -2 eggs 🥚 -100ml of milk or almond milk 🥛 -1 tablespoon of honey 🍯 -50g of ground almonds Preheat the oven at 180°. Mix all the ingredients except from the fruits. Clean the berries and remove the bone from the cherries. Put all the fruits in a pyrex and cover them with the mixture. Bake the clafoutis for 20min. And enjoy it warm or cold😋🙌🏼 Simply and delicious👌🏼

Ingredientes: 🔸2 tazas de harina de avena 🔸media taza de leche (Yo uso sbelt que es 0% grasa) 🔸Stevia al gusto 🔸1/4 de taza de rayadura de 🍊 🔸3 huevos 🔸Un chorrito de zumo de naranja 🔸1 cucharadita de esencia de vainilla 🔸1 cuchara de polvo para hornear 🔻Para un keke super esponjoso batir las 3 claras de huevo a punto nieve, en otro bowl mezclar los demás ingredientes, luego ir agregando las claras a la masa poco a poco lentamente para no quitarles el aire. Engrasar el molde antes de vaciar la masa. Precalentar por 20 min el horno a 180 grados. Hornear 30 a 35 minutos. Y listooooo💖

*cheesy post incoming* (and not the edible kind) Two weeks ago, I went out to move my car to find a huge dent in the side. Somewhat had hit my car overnight and left without a trace. Earlier this week, I dropped my car off at the collision center, only to come back to see someone in the middle of trying to steal my bike. When I approached him and asked what was going on, he dropped the detached back wheel, and ran away. As I walked to the bike shop carrying the pieces of my bike, I started feeling sorry for myself. First, my car, and now my bike?? Am I just not supposed to go anywhere? -.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-. 20 minutes later, I made it to the bike shop, and the owner very kindly fixed up my bike for free by re-attaching the wheel and fixing the brakes, and I got a call from the collision center saying that the estimate for the repairs was a lot lower than I thought. I started to realize — with a car accident and an (almost) bike robbery in the span of two weeks, I was still doing pretty great. My beloved bike is still fine and good as new, I’ll have my car back next week, and most importantly, I’m okay. Sure, it was a hiccup, but it really only affected me for 30 minutes. The longer I allowed myself to engage in self-pity, the more time I was wasting thinking about it, and that was just unnecessary. -.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-.-. Ok so now what you’re all here for - the food. I was inspired by @rachlmansfields challah French toast, so I decided to French toast-ify the last couple slices of my pumpkin bread - best decision EVER. • INCREIBLE!! 🧘🏼‍♀️ YOGURT POUND CAKE • Es una receta que llevaba varios días en mente, pero por tiempo no había podido subírselas!. . 🥧 Para el cake : 3 huevos enteros 1 tz. Azúcar de caña o de coco 1/2 tz. Yogurt griego 1 tz. Harina de avena 1/2 tz. Harina de almendras 1/2 tz. Aceite de coco 2 tbsp. Extracto de vainilla 1 tbsp. Polvo de hornear 1/2 tbsp. Bicarbonato de sodio. . Mezclar todos los ingredientes húmedos. Hasta que estén bien incorporados. Luego cernir la harina de avena + harina de almendra + polvo se hornear y bicarbonato de sodio, e ir incorporando poco a poco. Precalentar el horno a 280* (recuerden que no todos los hornos son iguales). Verter en un recipiente de tortas o el de tu preferencia y hornear por 25/30min. . 💁🏼‍♀️🍶 • Para el topping: muy sencillo . 4 tbsp de yogurt griego + 1 tbsp de canela (generosa) + 1 - 1 1/2 tbsp de extract de vainilla. Chocolate Chip-Pumpkin Oat Bars make fall mornings a little brighter✨🎃 I’ve been craving pumpkin flavored EVERYTHING so I picked up a few ingredients and made these😋 Vegan, gluten free and easy to make! 🍁Preheat oven to 350 🍁In 1 bowl mix together.. 3 cups rolled outs made into flour (put in blender for 2 mins until flour consistency) and Whisk in 1/2 tsp baking soda, 2 tsp baking powder, 1/8 tsp nutmeg, 1/4 tsp salt, 1 1/4 tsp cinnamon. set aside. 🍁In a separate bowl, whisk together 1 cup canned pumpkin purée, 2 tsp vanilla extract, 1/2 cup unsweetened applesauce, 1 tbs coconut oil, until the consistency is smooth and creamy. slowly add in oat flour mixture until just combined. 🍁fold in 1/3 cup of vegan chocolate chips😋 🍁Pour batter in oiled pan and bake for 10-20 mins (depending on pan) until knife inserted in center comes out with a few crumbs attached. Each bar is roughly 120 cals with healthy ingredients!💛 October is the month of baking... give these a try!

Okay big news... I have perfected my very own cookie recipe of my wildest dreams. Here’s how ya do it: -2 eggs -huge pour of vanilla extract -1/2 tsp baking powder -1 1/2 cups GF flour if choice -1/2 cup ghee -good heap of sea salt -chocolate chips -few drops of stevia extract (could sub honey, maple syrup, raw sugar, etc) Mix it all in a bowl and bake at 350 for 13 min. I like to freeze them afterwards and eat them frozen bc I’m weird but you do whatever you want from there. You could make these vegan, paleo, or whatever they are super versatile!
The OG sweet potato syd kay loaf™️: 1 steamed sweet potato, 1/4 cup GF flour, 3 eggs, 1/4 tsp baking sofa & baking powder, 1/4 cup ghee or olive oil, lots of cinnamon & ginger, dash of almond & vanilla extra, stevia (or sweetener of choice), pinch of salt & dark chocolate (I use Lily’s the stevia sweetened kind as it is the only sweetener I tolerate) put it all in a loaf tin and bake at 350 for 30min!
