We all know that leafy greens are so good for us but we probably also noticed that some of them don’t particularly taste amazing. Well, if you have not fallen in love with your green salad, that's because (I hate to tell you) your dressing is not the best one! I would love to know what you think of this carrot, ginger, turmeric, olive oil dressing. It only takes a few minutes to prepare, and all you need is 2 mid size carrots, 2 inches of ginger, 2 tbsp of cold pressed olive oil, 1 tbsp of maple syrup, 1/2 tsp of turmeric powder, fresh juice of 1 lime, 2 cloves of garlic (optional), sea salt, and black pepper. Blend everything and enjoy! You can keep the dressing in the fridge for few days. 🌿🌱💪

Cooking & Prepping Tips for Quick Homemade meals - DAY THREE:
1. Freezing cooked meats or poultry for Quick Meals; Having a few proteins already cooked in the freezer will help you create a few dishes fast in case you have unexpected guests or for a day you don’t have time to cook. I usually have cooked turkey Italian sausages; a few chicken breasts poached in spices, shredded and freeze flat in plastic bags (see photos). I suggest also having raw turkey sausages or fresh chorizo which you can use without defrosting. The day I get them fresh, I take off the casing, break them down with my hands and freeze flat in plastic bags (see photo). This is even easier to use, because I only get the amount I need. Yesterday I had my cousins visiting unexpectedly and I had no time to prep/cook an elaborated meal. I did a potatoes and chorizo omelet (Tortilla Espanola), sautéed additional chorizo with onions and peppers and served with bread toasted in the oven with a compound butter made with parmesan cheese, granulated garlic and dried oregano which I also had already on my freezer (Check out Tip from Day One and the first photo on this post).
Today, my boyfriend was staying over and when he is around, I cook things that are fast. I used the Turkey Italian Sausages that I have cooked with onions and peppers and frozen to make him quesadillas, with a sour cream mixed with the “Recaito” (which was also frozen, check tips from Day One) and a salad made with a quick dressing (see photos). It took me a few minutes to whip up this meal and go back to keep watching a movie.

My “Go To” Healthy Homemade dressing Dressing Recipe!
Ready in 10 minutes
Servings 7 @ 2 Tablespoons each
1/2 cup olive oil
1/4 cup organic apple cider vinegar
3 tbs organic fresh lemon juice
1 tbs organic or local honey
1 Tsp Dijon mustard
3 medium fresh garlic cloves
2 tbs fresh chopped parsley
Pink Himalayan or Celtic sea salt to taste
Preparation, Storage & Expiration
Blend all ingredients in a blender until smooth.
Pour into a glass jar with an airtight lid (I reuse mine from store purchases).
Store in the refrigerator.
Keeps good for 7 days.
Dressing will thicken in the refrigerator. Let sit at room temperature for 10 minutes to liquify and shake before serving. -or-
Run under lukewarm water until it liquifies and shake before serving. (Don’t use hot water as it will cause heat damage)

But I’ll tell you what. If you learn how to a) retrain your taste buds and b) create bursts of flavors from healthy ingredients…you’ll never want to go back to eating crappy processed foods!
Now that my secret is out (that’s why I’ll NEVER go back to poisoning my body with sugar and such), here are a few simple tricks (applicable to a chicken salad and not only).
👉Use good fats. Because you know it, veggies don’t taste as good without healthy, Omega-3s-rich oils and condiments. Pictured: Adding @primalkitchenfoods

👉 Recreate your favorite flavors. I added pickles to one of these salads as well as dill (reminds me of home). Another one is Sriracha + avocado chicken salad that tastes like spicy chicken burrito from Del Taco to me (ha!). Here you can play as much as you want and get creative.
👉 Experiment! I often hear it how people are scared to add a dash or this or dab of that to deviate from a recipe. Look, my dear. The rules are created to be broken (as a rule follower, I confide this to you). Go crazy a bit. What’s the worst thing that’s going to happen? It won’t be inedible. I was not a fan of almonds in my salad. Laugh it off and try again. The best and more rewarding part? You’ll discover a whole new world. Just like I did discover mustard two weeks ago. Still eating it.

I am a big fan of Italian vinaigrette and love olive oil but it comes with the extra calories despite the healthy fat, I rather eat more of the olives than the olive oil but I also found a really refreshing and low calorie dressing with cucumber 🥒. It’s delish on zoodles (courgettes noodles) and it’s really tasty 😋.
One whole cucumber or 2 🤪.
Bunch of coriander
One lemon juice
One bunch of mint
One bunch of dill
One small garlic clove
That’s all! Wiz everything in a blender and store in jars in the fridge. You can swap your herbs with whatever you like, I used parsley too 🌿 or and any spices you like. I left it plain and it’s just great for my taste!
