Good morning, babes, and happy Friday Eve! I cannot believe it’s ALREADY Thursday! Like, what!? I woke up this morning feeling pretty sore, which is kind of a bummer since I took yesterday as an active recovery day, but I’m hoping it subsides as I get going throughout my day! I’m all ready for school and it’s time to fuel up! I can’t wait to dig into this! I am having: a plain 2% Greek yogurt (Fage), topped with puffed wheat, frozen raspberries, chia pudding (chia seeds + water), coconut chips, and cinnamon! 👅💦✨ SO fast, simple, and delicious! Sometimes, I just love a plain, tart little spread to get me started for the day! Overall, I’m at a bit of a better headspace than I was yesterday. I felt uncomfortable because I have seriously chosen to have two active recovery days and my ED is making me feel REAL guilty about it. I am doing my absolute best to NOT listen to the thoughts, keep trusting that I know what I’m doing, and embrace the process. Gaining weight, wether it be muscle or not, is VERY taxing. I have done it before and it wasn’t easy, so I don’t expect it to be easy now. It’s HARD seeing the number on the scale go up. I am trying my best to realize that a smaller me is not a better me. It’s not a more worthy me. It’s not a stronger me. In order to reach the goals I have set for myself, it’s going to take me pushing myself out of my comfort zones, eating more, not doing as much cardio, and trust that these are all things I SHOULD continue doing. I have to eat my hormones balanced, my sleep at a good spot, my period back, and gain the strength I need to become a #ninja in the gym. I want to get stronger, faster, and happier overall. Being as small as possible never got me there before, so why would it now? Oh yeah! It won’t. 🙅🏻 Listening to anorexia is LETTING it hold me back. No more of that! ❌ I have come so far on this journey, but I know I cannot stop now. The changes I am making are not indicative of me “letting myself go “ or “caring less about my health/fitness”. This is me caring MORE about my wellbeing and choosing recovery over this disorder. If I want my period back, to gain muscle/strength (mentally and physically),

I’ve been listening to a lot of podcasts and webinars for business and branding and all that jazz, and it seems like a recurring theme is WORTHINESS — knowing that you are ALREADY worthy to be in whatever space you are, doing whatever thing you’re doing, or reaching for whatever dream you’re dreaming. You don’t have to feel like you always have to strive to reach something in order to gain worthiness. ✨ And if I’m being honest, it makes me do a sad blow-air-through-your-nose kinda laugh, because God has already told us our worth, and it’s greater than what anything or anyone on this earth could try to convince us of...and yet we still struggle with it daily 🙄 But, no matter what the people around us, instagram comments + likes, size of our pants, or career opportunities tell us what we are (or are not), we have a GREAT worth in Christ that can never be taken away from us. God wants to give every single one of us a FULL and ABUNDANT life, not one that’s full of doubt and despair. And I’ll be damned if I let social media or other people’s opinions pull me away from that truth 👊🏼 If I’ve learned anything in my 26.08 years of life, it’s that the more I focus on doing things with the intention to glorify God, I will never question my value or worth. this bowl actually looks a lot better than it tasted.. we picked up some “cuban black beans” from @traderjoes but there was nothing cuban about them.. they also looked COMPLETELY different than they did on the can.. but i was able to somewhat salvage them by adding some pico de gallo, pineapple salsa and avocado 🥑 for the pico de gallo, i diced up some tomatoes, sliced some scallions, minced garlic, chopped cilantro, and mixed it all together with a few dashes of apple cider vinegar, lime juice, salt, pepper and cumin.. for the 🍍 salsa i mixed together diced pineapple, red onion, cilantro, lime juice and a little salt.. #avocado #salsa #theminniechef

#Repost @vegaliciously (@get_repost ) ・・・ When it comes to chinese food, Lo Mein is one of my all-time favorite dishes 🤤 it tastes INSANE, is the easiest thing to cook in the world and it’s pretty much super healthy (well... at least in my world 😅✌️😜). I usually make it with snow peas and fresh spinach leaves but I couldn’t find any in the market 😭 so i switch it up a bit and the result was D-I-V-I-N-E 😍 🤤 . INGREDIENTS •250g. dry ramen noodles — •2 tbsp sesame oil •3 fresh onions (separate the white part from the green one) •2 garlic cloves •2 tsp fresh ginger (minced) •1 chili (minced) •2 handful of fresh mushrooms •1 red pepper •1 yellow pepper •3-4 carrots •1 broccoli — SAUCE •1/2 cup soy sauce (mild) •1 tsp sugar •1 tbsp sesame oil — •1 tbsp sesame seeds METHOD 1. Cook the noodles as described on the package. Dry and set aside. 2. Combine all the ingredients of the sauce in a jar and set aside. 3. Chop the vegetables in tiny slices and set aside. 4. Heat a wok over high heat. Add the oil, the ginger, the white part pf the onions, the chili and saute for 1-2 minutes. 5. Add the vegetables and cook 5 minutes, then stir in the noodles and the sauce and cook for another 3-4 minutes (the vegetables should still be crunchy!). 6. Top with the green part of the onions and the sesame seeds. 7.
