Mexican Chicken Wrap
- 1 onion diced
- 1 chicken breast diced
- 1 red capsicum diced
- 4 to 6 mushrooms chopped
- tin of kidney beans
- Mexican seasoning
- 1/2 cup of chicken bone broth
Simmer for 10 mins then add to your wrap with spinach and avo and wha la!
Would be a great dinner or lunch... plus it’s shred approved! ENJOY 😊

I wouldn’t exactly label this as being “healthy” but it is a healthier version of blondies. 100% gluten free, tree nut free and dairy free. Made with just chickpeas, sunflower butter (to keep it low in oxalates), honey, vanilla, baking soda, baking powder, salt and vegan chocolate chips, these are just as good.
Chocolate Chip Chickpea Blondies:
1 can (15 oz) chickpeas, rinsed and drained and peeled of outer skin
1/2 cup all natural sunflower butter (or nut butter of choice)
1/3 cup honey or pure maple syrup or agave nectar
2 teaspoons vanilla
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/3 cup vegan (or regular) chocolate chips plus 2 tablespoons
Preheat oven to 350 degrees. Drain, rinse and peel outer skin and dry chickpeas. add all ingredients including 1/2 of the 1/3 cup of chocolate chips into blender. Blend all ingredients until smooth. Hand mix remainder of the 1/3 cup chocolate chips into batter. Spread in 8 x 8 pan (I used an 8.5 x 12 pan because my 8 x 8 was never returned). Sprinkle remaining 2 tablespoons chocolate chips. Bake for about 25 minutes or until toothpick comes out clean and edges are brown.

🥥Date, Almond & Coconut Protein Balls🥥
Discovered these gems last week and they are delicious. Enough to satisfy the biggest sweet tooth. They taste like an indulgent candy bar but are packed with healthy, energy boosting ingredients instead of empty calories. I changed the recipe slightly and added Arbonnes Vegan Protein Powder for added plant based goodness.
Medjool Dates: 2 1/2 cups pitted
raw almonds - 1 cup
Arbonne Vegan Protein Power: Chocolate - 1/2 cup
unsweetened shredded coconut - 1 cup
unsweetened cocoa powder - 1/4 cup
flaxseeds - 1/4 cup
almond extract - 1/2 teaspoon
sea salt - 1/2 teaspoon
Combine almonds and 1 tablespoon of Arbonne Vegan Protein Powder in a food processor. Pulse until the almonds are coarsely ground. Remove 3 tablespoons and set aside.
Add the pitted Medjool dates, protein powder, 1/2 cup of the coconut, cocoa powder, flax seeds, almond extract, and sea salt to the food processor.
Pulse to combine, then use a rubber spatula to scrape down the sides. Continue to blend the mixture for a minute or two, until the mixture is sticky and blended.
Use a 2 tablespoon sized cookie scoop to measure and roll each scoop into a smooth ball.
Roll each ball in the remaining coconut to coat and garnish with a small sprinkle of the ground almonds.
Serve and store in the refrigerator.
