Meal prep day!!!! Woop Woop!! I am such a FOODIE, and LOVE trying new recipes!! Here is a yummy one I recently tried!!! Pesto Quinoa Shrimp
2 cups low sodium vegetable broth
1 cup quinoa
1 pound 26-30 count shrimp
1/2 tablespoon olive oil
1/2 teaspoon dried basil or 1 teaspoon fresh basil
1/2 teaspoon salt divided
1/4 teaspoon pepper
1 lemon -1/2 cup Pesto -1 cup cherry tomatoes halved
Instructions Add the broth and quinoa to a medium pot and bring to a boil. Once the broth reaches a boil, stir, reduce heat to a simmer and cover. The quinoa will cook in about 15 minutes.
While the quinoa is cooking, squeeze the juice from half of the lemon over the shrimp. Season the shrimp with the 1/4 teaspoon of the salt and the pepper.
Add the olive oil to a large sauté pan and heat to medium high heat. Add the shrimp and cook for 2-3 minutes on each side or until the shrimp turns pink and starts to curl.
Season the shrimp with the basil and remove from the heat. Do not overcook the shrimp or they will get tough.
When the quinoa is done cooking, squeeze the other half of the lemon on top. Stir in the pesto and taste. Depending on your pesto, add the last 1/4 teaspoon of salt.
Stir in the tomatoes.
Serve with the shrimp mixed in or piled on top!
Garnish with fresh basil.

I have been on my feet while meal prepping all day. I woke up at 6:30am and cooked all the way until 7:20pm 😱. Today was a “rest” day, yet it will filled with meal prepping(was suppose to do it yesterday 😅😅), going up and downstairs 25+ times for my children, chasing a 10 month old, talking and playing with an 8 year old, feeding my children, while I’m finding time for breakfast, lunch, and now dinner 🙌. A little stressful and my legs feel like I’ve done 500 squats😅. It will all be worth it when I’m not stressed about food this week, my family is taken care of, and we get to eat nutritious fuel for our bodies!😌 This journey is becoming so fun! 😁What makes it fun is when I’m making food that is healthy and nutritious for my body and don’t have to stress about what to make if we are super busy. ☺️I also had a moment this week where my family decided to go to Burger King. 😓I was about to get a plain burger with extra lettuce, but instead I made myself(prior to going) a ground beef salad and didn’t get anything! 😜👍I also realized that my salad smelt so much better than the smell of fries and a burger and it was also 400 calories less 😂, it really made me happy ☺️to see how my will power was tested and I passed that test this time 🙌🙌💪
Tofu & Pork sukiyaki japanese style at Fuji Restaurant. They used konjac instead of vermicelli. So, this plate contains very low cal. Chose the good choice while hving meal outside. 🤗🍽

The nutrient content of raspberries and strawberries are very similar. Both fruits are a good source of antioxidants. Anthocyanins are a type of flavonoid found in plants. Consuming anthocyanin can help us reduce our risk of heart disease and inflammation due to its antioxidative properties. This is similar to what vitamin c does. An antioxidant is something that donates an electron to something called a free radical. Free radicals are damaging in our bodies because they are highly reactive and can interact with other things to easily form damaging compounds. Free radicals are reactive because they are missing a valence electron to make them stable. It is the job of antioxidants to donate electrons to stabilize these free radicals!! 🧐🧐
Raspberries are not better than strawberries and strawberries are not better than raspberries. Don’t see this image as one being better than the other, rather just as information. It is important to remember that fruits and vegetables are at peak nutrient density when they are ripe! Berries can be a bit expensive so they might not be the greatest snack because of the volume you need to eat to be satisfied but I find I use them as an accoutrement to a bigger snack. They add lots of flavor and sweetness to cheaper and more filling foods! Berries are great fruits to choose because they are low on the glycemic index which means they won’t spike your blood sugar. Their fiber content is the reason they are low. Fiber is important in our diets because it can help to improve our gut health and even assist in lowering serum cholesterol levels. The glycemic index is not really that important in people who are active and live a healthy lifestyle but I included the values for those who are curious. .
