Homemade Paleo Fig Newton Cookies. Ingredients: 1 cup dried figs 3 pitted Medjool dates 1/2 cup orange juice 2 eggs 1/3 cup coconut oil, melted 2 tsp maple syrup 1/2 tsp vanilla extract 2 cups almond meal 1 tsp baking soda 1/2 tsp salt Instructions: 1. Add the eggs, coconut oil, syrup, & vanilla extract to a bowl. Use a hand blender to combine. Add the almond meal, baking soda, & salt. Blend again until completely combined. Place in the refrigerator to chill until the figs are ready. 2. Place the figs, dates, & orange juice to a small saucepan over medium-low heat. Simmer for 10-12 minutes until the figs are soft & the juice is slightly reduced. Place the mixture into a blender or food processor. Blend until smooth. 3. Preheat the oven to 375 degrees F. Remove the dough from the refrigerator & place onto a sheet of parchment paper. Cover with another sheet of parchment paper & roll out the dough into a long thin rectangle, about 1/4-inch thick. 4. Spread the fig filling across the middle of the rectangle. Use the parchment paper to fold the bottom third of the dough over the top of the fig filling. Peel back the paper & repeat with the top third of the dough, forming a long log. Pinch the ends of the log together to seal in the filling. Use a sharp knife to cut the log into the desired amount of pieces. Space the pieces out on the parchment paper & place onto a baking sheet. Bake for 15-18 minutes, or until the edges are golden brown. Let cool for 20 minutes before serving. I just made up the most delicious spicy mango tahini dressing! ✨I don’t have the exact measurements, but here’s the approximates: blend together about 3 tablespoons of tahini with 1 fresh mango, 2 pitted dates, 1 Tbs of garlic powder, 1.5 Tbs apple cider vinegar, a dash of sea salt, a good few shakes of red pepper flakes and enough water to blend and to desired consistency! Things you would spend around $4 on... - a medium latte - half of a movie ticket - 1.5 gallons of gas - a beer at a bar - a fast food sandwich (not the combo) Would you bat an eye at those expenses? Doubtful. Are any of them going to be a benefit to you beyond the short term? Again, doubtful. We hold a tight grip on our family's budget, and especially being married to a farmer, I have learned to thoughtfully consider the return on investment for the purchases we are making. This little shake in my hand makes the cut each month. I can't say the same for all of those other items listed above. I'd love to explain why if you're curious about learning more!
First solid workout in two weeks, and BOY... was it HARD!! . A 30 minute plyo workout turned into a 1 hour workout, with all of the kid interruptions and the fact that from halfway through, I felt like I was going to 🤢 after each move. . Just goes to show, that even though I have been going full force for over a year now and am pretty fit, I still have my struggles. And today was definitely ‘STRUGGLETOWN’! . Now I could easily turn my struggle today into an excuse that this is just too hard, and I’m not where I used to be, and it’s just too much work to get back there. Allowing myself to fall victim to a negative mindset. But I won’t. . The mind is the strongest muscle in the body, and also the easiest to lose control of. But my mind is strong, and my motivation is strong, and my determination is strong, and I have goals. I will not let the negativity win! . So here is what I learned from today ... Maybe the plyo workout was not the best one for me to start back up with. Maybe I need to start a little bit easier on my cardio and build myself back up again. But that is the beauty of my online fitness library. I have choices, so many choices of programs and workouts to choose from! . I can do what works for me! I am in control! If I need to change things up, I can! If I don’t have as much time to work out as I usually do, I chose a shorter workout. If I’m injured as I am right now, and can’t use a specific part of my body, I can work on other areas because my fitness library gives me choices! . I ❤️ this!! It has proven to work for me over the past year and a bit, and it can work for you too!! I promise!! . I’d love to share more info if anyone is interested!! I gotta be #real for a minute. #running 🏃‍♀️ for me even 6 months #postpartum is not easy or completely enjoyable like it used to be. I still get #pelvicpain after about half a mile. It just goes to show that our bodies sometimes take longer than we would like to completely heal or get back to “normal.” Now that doesn’t mean I’ll stop lacing up and hitting the road. Nope. The average human applies 300 chemicals to their body a day. Usually 80 before breakfast just by using soap, hair care, makeup, and skin care. Some of the biggest pollutants in our homes are things like cleaners, candles, dryer sheets, and air fresheners.
