Cauliflower Gnocchi! These were pretty fun to make, it was my first time and I think they turned out better than expected! 😎😬 They are quite time consuming but definitely worth it 😉. I just roasted half a head of cauliflower and 2 cloves of garlic on 375 for 20 mins and blended everything to get a smooth texture. On a clean surface put about half a cup of flour...(I used gluten free flour). Add about half of the cauliflower mixture and start to mix.... it’s very sticky at first so patience is key lol. Add more flour and 1 egg 🥚....keep mixing and kneading until a dough forms. Roll into sausage rolls and cut into small pieces. Boil your gnocchi for 3-5 mins or until they float to the top. Fry em up with your fave veggies, garlic and chilli flakes. Salt and pepper to taste. They are freakin delicious guys! Give them a try and let me know your thoughts 😊.
Today has been the longest day and it’s still not over😴😴 but I’m glad I have this bowl to look forward to when I get home! I prepped one of my favs before work.. my go-to meat sauce with zoodles! deets👇🏽 . . . Spray pan and sauté about half small onion, half pepper, 2-3 tbsp minced garlic, and a drained can of diced tomatoes with complete seasoning on medium heat til the onions turn translucent. Add in a pound of ground turkey and a small can tomato sauce to simmer on medium for about 10-15 min til cooked through. Enjoy some and refrigerate/freeze the rest for #mealprep 👩🏽‍🍳

New summer pasta salad brought to you by @eatbanza (obviously). Set the oven to 400 and roast corn for 15-20 min (toss it around after 10 mins) with salt, pep, red pep and a little parmesan. While it’s roasting throw some fresh arugula and cherry tomatoes in a brown and mix in a splash of olive oil, balsamic, and half a squeezed lemon and boil the pasta. I like spicy food so I added chili flakes, garlic powder, black pepper, and Italian seasoning to mine) ⚡️Mozzarella Cheese (I used 2% milk mozzarella cheese) ⚡️ 1 Pack of tofu (I used firm) ⚡️ .5 medium green bell pepper ⚡️ 1 medium red onion ⚡️ 1 jalapeño ⚡️ Spinach • • Here’s the recipe in 9 easy steps! 1️⃣ Put the shells to boil in a pot of water. 2️⃣ While the shells are cooking, chop up the bell pepper, onion, & jalapeño into small squares. Chop the spinach as well. 3️⃣ Heat a frying pan, spray some pan, & sauté the vegetables. 4️⃣ Crumble the tofu & add it in with the vegetables & sauté some more. 5️⃣ Once the shells are about half cooked, drain out the water. Courgette and lemon tagliatelle with pine nuts 🍝 🍋This fresh, lemony pasta tastes like summer in a bowl! The grassy flavor of courgette meets the crisp bites of toasted pine nuts, all brought together into a smooth and creamy sauce. Ingredients: * 7 oz dried tagliatelle (egg-free) * 1 tbsp olive oil * 1 onion, finely chopped * 1 clove garlic, crushed * 2 medium zucchini, grated * 1 tbsp pine nuts * 2 lemons * Sea salt * Black pepper * 2 tbsp extra virgin olive oil * 1 handful fresh basil Method: 1. Cook the pappardelle in a large saucepan of boiling water over a high-medium heat for 10 minutes until al dente. 2. In the meantime, heat the olive oil in a large frying pan over low-medium heat. Add the onion to the pan, followed by the garlic. Add the courgettes to the pan and increase the heat to medium. Stir frequently and cook for 4–5 minutes. Add the pine nuts and cook for a further minute. 3. When the courgettes have softened, squeeze over the juice of each lemon through a sieve, then remove the pan from the heat and season with sea salt and black pepper. 4. Toss the cooked, drained pappardelle into the courgette and coat evenly. Drizzle with extra virgin olive oil and scatter over basil leaves. Serve immediately.

Today's healthy lunch! Very delicious vegan mac & cheesey broccoli bc it’s all I want right now 🤤🤤 in fact I think I’ll make this tonight! . . . . . Ingredients: 1 shallot, chopped 2 garlic cloves, minced Extra-virgin olive oil, for drizzling ½ teaspoon smoked paprika 1 tablespoon balsamic vinegar 1 cup raw cashews, soaked 3 to 4 hours, preferably overnight, and drained 3 tablespoons extra-virgin olive oil ½ cup water, more as needed ¼ cup nutritional yeast Pinch of cayenne pepper 1 teaspoon turmeric, optional Sea salt and freshly ground black pepper 12 ounces lentil pasta 2 cups cooked broccoli . . Instructions: In a small skillet, heat a drizzle of olive oil over medium-low heat. Add the shallot and garlic and sauté until soft, about 3 to 5 minutes. Stir in the paprika, and balsamic vinegar and cook another 30 seconds. In a high speed blender, puree the sautéed shallot mixture with the cashews, 3 tablespoons of olive oil, the water, nutritional yeast, cayenne and turmeric (if using). Season to taste with salt and pepper. Makes about 1 ¾ cups of sauce. Bring a large pot of salted water to a boil. Prepare the pasta according to the instructions on the package, cooking until al dente. Reserve 1 cup of the pasta water. Drain and return the pasta to the pot. Stir in the sauce, adding the pasta water as needed to thin the sauce and make it creamy. YOU GUYS I did something crazy 🤪💕 I was watching @queereye this weekend and saw and episode where they taught this guy to make homemade pasta🍝, and it got me thinking how easy it is and how I could try it myself...so I did! Got some recipe inspiration from a few blogs (@honeygheeme and @healthstartsinthekitchen ) out there and pulled together my own recipe. I made 3 INGREDIENT GRAIN FREE GNOCCHI HERE IS HOW: Mix together -1 cup of @ottos_cassava_flour -1 teaspoon of salt (I used truffle salt) Add in -2 @vitalfarms pasture raised eggs -2 tablespooons of @chosenfoods oil -2 tablespoons of bone broth @bonafideprovisions -This is optional, but I used @lovebeets beet juice by adding them into my blender and some water. Added a bit to turn dough pink because 💁🏼‍♀️💕 -Tightly wrapped a ball in saran wrap and let sit on my counter at room temp for 5-7 minutes -Flattened it using a water bottle -Cut thick noodles and rolled them into a gnocchi shape -Once rolled I plopped them into boiling water and let them boil for about three minutes until they floated to the top -NOW THEY ARE DENSE BEET MARINARA SAUCE: -Used left over beets added @victoriafinefoods avocado oil marinara -A dash of garlic powder -A dash of oregano -And blended in my vitamix I’m seriously so impressed how this came out. This recipe is similar to a Summer Pasta that my mama makes when we have garden grown zucchini in abundance! 😋 ZUCCHINI BASIL NOODLES are a yummy compliment to the BBQ chicken or steak you are grilling tonight! 🔻🔻🔻🔻🔻🔻🔻🔻🔻🔻🔻🔻 2 packages of Miracle Noodle Angel Hair @miraclenoodle 1/2 small onion 1 zucchini, sliced 2 garlic cloves, minced 1 cup basil leaves 1/2 c ricotta cheese Lemon juice from 1/2 lemon Pinch of crushed red pepper 1/2 c Parmesan cheese, plus more for serving . 1. Cook Miracle Noodles according to package directions and set aside. 2. Sauté onions in olive oil over medium heat until soft. Add zucchini, sprinkling of salt and pepper and cook until soft. 3. In a mini food processor, combine basil, garlic, 3 T olive oil and a dash of salt. 4. Stir in basil mixture, ricotta, crushed red pepper, lemon juice, and noodles into the zucchini. Cook for 1 minute longer. Remove from heat and stir in Parmesan. . . This was like my second best pasta I have ever made?? After the broccoli pesto with halloumi. Cook pasta. Fry onion and garlic, add pepper and sundried tomatoes. Add crushed tomatoes, very little sugar and cream, let it boil. Fry halloumi (the best pastas always includes halloumi) and add it to the sauce + spinach and pasta water. 💚GEZONDE PASTA MET CHAMPIGNONSAUS💚 Dit heb je nodig voor deze pasta met champignonsaus / 4 personen 💚200 gr volkoren spaghetti – neem glutenvrije spaghetti voor een glutenvrij gerecht 💚250 gr (kastanje) champignons 💚80 gr zongedroogde tomaat op olie 💚half bosje verse platte peterselie 💚1 teentje knoflook 💚2 kleine rode uitjes 💚1 blik (kers) tomaten 💚snufje peper en zout naar smaak 💚optioneel: Parmezaanse kaas Zo maak je het Kook de spaghetti volgens de gebruiksaanwijzing. Maak de kastanje champignons schoon en snijd in plakken. Bak ze in een minuut of 3-5 bruin in een koekenpan met olijfolie. Haal de champignons uit de pan en doe in de keukenmachine of hakmolen van de staafmixer. Voeg de zongedroogde tomaat en de verse kruiden toe aan de hakmolen en maal alles fijn. Maak de koekenpan niet schoon. Snijd de knoflook en uitjes fijn. Bak de knoflook en uitjes in dezelfde pan als de kastanje champignons. Voeg naar behoefte eerst een beetje olie toe en bak op een middelhoog vuur. Voeg het blik tomaten toe en laat pruttelen. Roer het champignon mengsel door de tomatensaus. TEMPEH SUSHI SANDWICH using Organic Village Chickpea Tempeh. (makes 1 sandwich or two halves) ⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ Ingredients:  1 cup cooked brown rice  Sushi rice seasoning  1 sheet nori  1 x chickpea and linseed tempeh sliced through the middle then cut to make a 10cm square (or whatever organic Non-GMO tempeh you can source locally)  and shallow fried in olive oil until golden brown (1 tsp is all you need or bake if you want to go oil free). 1/3 cup thinly sliced grated carrot  ½ cucumber slice thin  ½ avocado sliced thin ⠀⠀⠀⠀⠀⠀⠀ Method:  1. Cook brown rice until well cooked then add sushi seasoning and allow to cool.  2. To assemble sandwich place nori sheet shiny face down on a piece of glad wrap  3. Place ½ of the rice onto the centre of the nori sheet in a 10cm square at a 45 degree  angle.  4. Place Tempeh on top of rice then layer remaining ingredients.  5. Fold corners of the nori sheet into the centre to create a square.  6. Gather plastic wrap around sandwich and place seam side down in fridge for 10-15 min.  7. With a sharp wet knife slice through centre of the sandwich ⠀⠀⠀⠀⠀⠀⠀ Why I like this meal?  Great source of dietary fibre, iodine, Vitamin C, iron, potassium, magnesium, clean plant protein, healthy fats and clean unrefined carbohydrates. Bagi yang mau coba silahkan ya, here is the recipe ========================== Bahan: 200gr spagetti (rebus sampai al dente, jangan kematangan) 1 siung bawang putih Setengah paprika hijau kecil (potong2) 1/2 tomat (potong2) 5 tomat cherry (potong 2, utk garnish) 2 sendok makan minyak zaitun utk menumis 1 sendok makan yoghurt utk saus Garam dan merica scukupnya Air 6 sendok makan Keju cheddar merk prochiz buat taburan Oregano kering untuk taburan boost up rasa Cara buat : Tumis bawang putih sampai matang, kecilkan api masukkan paprika dan tomat yang dipotong potong, sampai setengah matang, masukkan air, tambah garam dan merica secukupnya, setelah rasanya pas masukkan spagetti dan diaduk rata lalu matikan api. Masukkan yoghurt dan aduk rata. Sajikan di piring, garnish dengan cherry tomato, oregano dan keju parut. Selamat menikmati....
