Losing this ish is honestly a very courageous thing to do! I am determined to figure it all the way out too!!! There's much strategy involved with losing weight. Growing up eating whatever, whenever is no one's fault. I know in my family my elders were from down south. So soul food was a staple breakfast lunch and dinner. Especially at dinner. With extras always available. It's crazy to see how many cars are parked at dialysis centers that are literally popping up like McDonald's on every corner now... The evolution of poor diet is so vast in areas of poverty. The days are old of a home cooked meals every day... with any nutritional value for that matter... It sucks, but it's very real. So I am making it my business to dedicate these next few months into teaching myself how to eat. Eating for my body to do it's best... Honestly I know my diet is the most important over any physical activity that I do. I have to treat my body good, and it will be good to me. Introducing the easiest breakfast that my toddler and I are both obsessed with!! Make it the night before and eat it cold, or first thing in the morning and enjoy it fresh out of the oven. Oh, and did I mention the topping possibilities are literally endless?!
3 C oatmeal
1/2 C butter, melted
1/2 C maple syrup
1/2 C milk
2 t baking powder
1/2 t salt
2 T cinnamon
Mix everything together, spread into a square baking dish and pop that baby into the oven at 350* for 25 mins. Yum!
-Sub coconut oil and almond milk for a dairy-free and equally delicious version.

☔️I'm excited it's Friday despite the rainy weather we are having. Oh well, a rainy day is still a beautiful day! I am hoping to go to a pumpkin patch tomorrow but we will have to see if the rain will let up enough for us to do that.
🥣 This chia seed pudding is one I made a while back. I love chia seed pudding! I usually make it using a liquid base of some nut or seed milk. I've recently learned that it is better to also add something acidic as well. The acid helps to break down the phytic acid levels found in all nuts and seeds. This is important for better digestion and nutrient absorption.
✴️ Chia seeds might be little but their nutrient profile is BIG! So to help absorb all those nutrients, getting rid of the anti-nutrients(phytic acid) is key. I have been adding in either kefir or plain yogurt but you could also use whey, ACV or lemon juice. Do you add any of these to your chia seed pudding?
The boys have been so excited to take their vitamins lately, I have no idea why! :) .
It could have something to do with Bassetts Vitamins, which are sugar free and full of flavour!

PUMPKIN PIE OATS 🎃:
• 1 cup of unsweetened almond milk • 1/2 cup of @bobsredmill
gf rolled oats
• 1 scoop vanilla protein
• 1/4 cup of pumpkin purée • 1 tsp of pumpkin spice • dash of cinnamon • 1 tbs of @barneybutter
almond powder or almond butter
Stir in a pot at medium heat until oats are gooey. Topped with cacao nibs, walnuts, and more almond milk 😋

Fun fact: seared scallops are my favorite seafood (you thought it was salmon, didn’t you? 🤣). However it’s been a hot second since I’ve made them! Decided it was time to remedy that situation tonight, and prepped them my favorite way: seared in garlic ghee with lots of extra garlic 👌🏻. If you make this meal (and you totally should!), I guarantee heart eyes, happy taste buds, and stinky breath 🙊.
- seared garlic sea scallops (pat scallops dry with paper towels *this is very important for a good sear* and season with garlic salt (or sea salt); in a pan, heat 1 tsp. avocado oil + 1 tsp. garlic ghee in a for 1 minute; add scallops and sear for 2 minutes, or until lightly brown; flip and sear on the other side for 2 mins) •• grilled broccolini w/ parmesan & red pepper 🥦 •• garlic-sage fettuccine (toss fettuccine in olive oil, basil, sage, garlic, and parmesan).

When on vacation, your out of your routine & normal go to resources. Happy Friday! Went for a small run this morning as since I've signed up for a marathon next year, I thought I'd better try and get back into running! Can definitely recommend signing up for a race if you're in a bit of a running rut as I always find having an event to work towards gives me some motivation. Obviously it doesn't have to be a marathon - even a 5k is a great goal to work towards!

Back onto daily oatmeal for breakfast. I don't really know how to make oatmeal look appetizing but it really is perfect for fall weather as the temperature gets cooler. I'm sure there must be other health benefits to it too. Today, I had oatmeal with sunflower seeds, pumpkin seeds, crushed almonds, a teaspoon of honey, half an apple and lots of cinnamon. It was delicious!
