Top right also fir lunch half a Japanese SweetbPotato smashed and air fried for 30 minutes, sprinkled with cinnamon and a drizzle of pomegranate balsamic vinegar. Lower left sautéed baby kale and baby spinach, shredded kale and Brussels sprouts, onion-mushrooms, cabbage and arugula water sautéed drizzled with Balsamic vinegar. Half of an over ripe plantain smashed ant browned in a non stick Scanpan. I was distracted and they ended up a little overdone but still very tasty. Pinto beans cooked in the Instant Pot and a hot baked potato which I only ate half of. For dinner today I had a Tempe sandwich - 2 slices of bread toasted, spread hummus on booth sides, add about 1 cup of spinach to one side, and on the other side add yellow bell pepper, and Tempe that I cooked on the stove top in oil and this was so good you should definitely try it is great for an easy meal or from a packed lunch to take to work or school!
Fro lunch today I had a spinach smoothie bowl - 2 bananas, 2 cups of spinach, 1 scoop of protein powder, 1 tbsp hemp seeds, 1 tbsp ground flax seed, 1 cup of non - dairy milk, 1 tsp maca,topped with Rawnola - 1/2 oats, 1 pitted date, 1 tbsp tahini, and 2 tbsp water, blend, then I also added chia seeds on top of the bowl and it was so good highly recommend!

When we are eating a plant-based diet that is based on whole foods, we have to eat larger quantities than most people are used to! The foods are so calorically dilute that portion sizes have to be increased!
If you’re eating a whole foods, plant-based diet is totally normal for your meal to be double - even triple - the size of those around you!

Still experimenting with how to make buckwheat risotto most 'risotto-like'. Tonight's came close. In fact I don't really know what consistency a true risotto is meant to be... It has varied so much whenever I've had it at restaurants - from quite dry to very creamy. Mine is certainly creamy. I am happy with it because my goal was to get the buckwheat creamy whilst still holding its shape. This is a pumpkin and greens buckwheat risotto with lemon thyme and sage.

Chilaquiles de mole 😍 con crema de tofu y cuadritos de tofu (previamente sazonados).
Para la crema de tofu es licuar 1/4 de tofu, con 100 mililitros de agua, consomé vegetal, 1 diente de ajo, una pizca de pimienta negra molida y 1/2 limón exprimido 👌😍.
Para los cuadritos de tofu, picar en cubitos chiquitos, (tofu firme) ponemos una cazuela con agua, consomé vegetal y ajo en polvo, dejamos hervir por 10 minutos y agregamos los cuadritos de tofu, dejamos que absorban sabor por 5 minutos y retiramos del fuego, dejamos enfriar y listo! 😍👌. .
Para el mole.
6 pz de chile guajillo (sin semilla).
3 pz de chile ancho (sin semilla).
3 pz de chile mulato (sin semilla).
1 pz de cebolla blanca en troceada.
4 dientes de ajo (pelados).
2, 1/2 litros de agua.
50 gramos de ciruela pasa (sin hueso).
50 gramos de cacahuate tostado.
1 pz de birote (de un día anterior de preferencia).
15 pz de pimienta bola (negra).
4 hojas de laurel.
1/4 de taza de aceite vegetal.
1/4 de taza de ajonjolí tostado.
1 y 1/2 tablilla de chocolate.
Procedimiento: agregar el aceite vegetal al sarten, una vez caliente agregamos los chiles, ajos, pimienta, laurel, cebolla, sofreír por 7 minutos y después agregar 2 y medio litros de agua y dejamos cocer por 25 minutos. 👌. Retiramos del fuego y llevamos a la licuadora, licuamos perfectamente todo. Colamos y regresamos a la sarten la mitad de la mezcla, con la otra mitad licuaremos el cacahuate, ciruela pasa, ajonjolí y birote. Ponemos a hervir y agregamos la tablilla de chocolate. sazonar con consomé vegetal y pienta negra molida al gusto. Rectificamos el sabor y listo!! 😍😍😍😍😘😘😘😘😘.
