This pizza is basically made of potatoes! The crust? Potatoes, cauliflower & broccoli! Then there’s tomato sauce. The cheeze is potatoes and carrots, and then the toppings are roasted bell peppers, onion and topped with basil. No oil, no fat, vegan, gluten free, dairy free and so good!!

Remembering these delicious veggies from just a year ago when we were in Corsica! They are all organic coming from the garden of André's mom who is an excellent gardener - several types of tomatoes, basil and onion, all grown from heirloom seeds and watered with water directly from the nearby river. A true celebration of tastes! 🧚♀️🍅🍃💖
The first adventure in my new kitchen was this vegetable soup to use up some odds and ends that made their way over to the new house. I used up carrots, celery and potatoes that were near their end as well as vegan kielbasa that had been shoved to the back of the freezer. And I just have to say, I am absolutely in love with my new kitchen. It is so fun to cook in! So much counter space and organization. I will probably do a house tour on my stories later this week! 🏠
More aromatic herbs in a no added fat recipe.
Cauliflower Potato Soup
1 head cauliflower (chopped)
4 lb gold potatoes (peeled + cubed)
1 large yellow onion sliced
4-6 cloves garlic
6-8 cups veggie broth
6-8 sage leaves
6-8 sprigs thyme
4-5 sprigs rosemary
Salt and pepper as desired
Steam potatoes, cauliflower, onion and garlic until tender. Transfer to blender with broth and herbs. Transfer to stock pot, stir and enjoy.
This is a mixture of several online recipes. Since most recipes have added fat or other non food ingredients, I removed and added ingredients to make it my own. Feel free to adjust any ingredient to your liking. I have 2 three quart steamers and fill one with the potatoes and another with the cauliflower, onion and garlic. Then blend in batches, covering the contents with broth and pour into a stock pot. I use filtered water if more liquid is needed.
This makes a large amount of soup (8-10 bowls) so you can easily half it to make less. The extras make a nice gravy or potato topping and tastes even better the second day.
This recipe is a great lunch or dinner for days 1-3 of the @medicalmedium

Did you think, what is the difference between them? I never thought about this, noticed that the fruits are similar, but also have some differences at the same time!
Here are different kinds I’ve found (swipe to see all): .
1. Tomato ones. They look like orange tomatoes, are small and are originally from Asia. I ate them first time in Ibiza. If unripe, they have unpleasant sticky taste. I think that are the real persimmons! In Portugal called „diospyros“ tho. I buy them here from local sellers at the farmers market and they are soooo good!
2. Flat ones. In Germany hey called „sharons“. They are smaller, also light orange and are originally from Israel. Today they are grown also in Spain, Portugal, South America, Asia.
3. Huge ones (in Germany called „kaki“). They have oval shape, are the biggest of all and come mostly from Spain. The are sold totally unripe at the supermarket, have light orange color and suggested to eat like an apple. At the market and in turkish shops they are sold overripe, dark orange and sometimes with seeds - thats how I love them!
In Siberia people eat this fruits frozen and call „khurma“, thats how I tried them for the first time. They have loots of seeds!
Anyway, ll of them are extremely tasty for me! This awesome fruits are rich in vitamin A, vitamin C, vitamin E, and vitamin B6, as well as dietary fiber, manganese, copper, magnesium, potassium, and phosphorous. Persimmon fruit is moderately high in calories (provides 70 calories/100 g) but very low in fats. Its smooth textured flesh is a very good source of fiber.

eating plants doesn’t mean you have to give up pizza!!! 😝 It’s even more fun because I can eat this entire thing and go on about my day without feeling weighed down or guilty! Make sure to put on a few toppings with a bit more moisture so it doesn’t get dry (artichokes, pineapple, tomatoes, peppers, etc). I actually prefer these over the plant-based cheese substitutes which are still high in fat. Almost all pizza doughs are already vegan (even Dominos although I don’t recommend unless you’re desperate) so it’s a great backup for social situations when everyone else is ordering your favorite comfort foods. I have this about every other month, fill up before with lean clean greens, and I ENJOY MY LIFE.
