with big holes and ... but I want to reach a reasonable rise which gives a decent 'flour weight' to 'loaf volume' ratio. Of course the more, the better. .
This loaf is made of 255 grams of flour. It's 6 cm x 16 cm! Is it a decent size?
It has been cold at home and starter has been slow. So I have been keeping my starter in the room temperature feeding it twice for a couple of days 1:2:2 and then once a day 1:2:2.
It seems the starter has changed, slightly more active but very close to heat source.
The type of flour I use is bread flour plus all purpose flour but both are very fine.. I think neither is whole wheat flour. Bread flour is slightly dark but I have no extra info of them.
I have been trying to compensate the effect of cold weather with keeping the starter and dough in a warmer place. Also pushing the bulk fermentation before shaping.
The dough loses its puff ie is degassed while shaping. But after shaping I put it in a warm place to rise before refrigerating.
This has given a well proofed dough before baking but it doesn't end in a good oven spring.
Baked loaf seems better baked but still not as bulky as desired. .
60 g Starter, fed 50/50 AP/BF
135 g Water
225 g Flour (150 g AP + 75 g BF)
4 g Salt .
