Always remember that the best method to prepare this cousin of the coton and hibiscus, otherwise known as #ladysfinger
is stir-frying, wich takes out the sliminess and turns into a #delicious
Ingredients: (serves 2)
-500 gr. okra (fresh is best, but if you can't find it, frozen baby okra will do)
-1 yellow onion, diced
-2 cloves garlic, minced
-1 small chilly pepper (optional)
-1 tsp. cumin seeds
-1/2 tsp. turmeric powder
-salt to taste
-cooking oil of your choice or ghee
1.Rinse the okra and cut it in round pieces. Dry it with a kitchen towel, it needs to be completely dry before cooking it.
2.In a sauce pen, add 2-3 tsp. of cooking oil over a medium-high heat, and add the cumin seeds. Once they start browning, add the onions and the chilly pepper. Saute for cca 10 minutes, and add the garlic, turmeric and salt.
3.After few minutes, after everything is well mixed in the pan, add the okra and reduce the heat a little bit. Stir-fry for 10-15 minutes, or until the okra is dry.
