Did you know watermelon and feta are a match made in heaven? Truth be told, I never knew watermelon could be savory until I had watermelon salsa made by @spicylikepepper
- so good I could have just eaten it right out of the bowl!! Now that my eyes have been opened to all the joy that watermelon can bring, I was so excited to see watermelon this week at Brad’s. .
I used it to make this incredibly yummy watermelon feta salad - stupidly simple. Just pile some arugula on the plate, add watermelon slices, and sprinkle feta and slivered almonds on top. Dress with balsamic - make you own with EVOO, balsamic vinegar, honey, Dijon, salt, pepper, and garlic powder. 😁🍉🥗

Creating abstract art with scallop plating. Having a fancy home cooked meal for a nice change.
It has been a busy few days. Luckily the little Miss slept in so I was able to as well. I enjoyed the late start to my day.
I decided filling, quick and simple for breakfast. A nice big bowl of @bobsredmill
Gluten Free Old Fashioned Oats flavored with @costco
Kirkland’s pure maple syrup and cinnamon and topped with @bobsredmill
whole flaxseed meal, @goodfarms
organic strawberries and peaches. *
It was refreshing, and simple.it gave my body the morning boost of energy. Now I’m trying to decide what’s for my snack.

Made this with leftover baked salsa chicken thigh that I kept in a freezer from 2 weeks ago. First time using toasted brioche as burger buns and they went surprisingly well with the chicken. I don’t usually plan my dinner, most of time is spur of the moment kinda thing, see whatever I can grab from the supermarkets & what’s leftover in the fridge.
I thawed the leftover chicken in the fridge overnight then heated it up in a hot pan with some oil till the skin crisped up & meat was heated through before using it for the burgers.
There isn’t much of a recipe to share actually. I marinated the chicken thighs overnight with some leftover tomato salsa. I then brown them over the stove before sending them to a 200C oven to finish off the cooking. Afterward I just kept the leftover piece in the freezer.
