I love Tuesdays! It’s exercise class day!! Hurray!! My local aquatic centre has an indoor kids play area where the kidlets can play for free while I do an exercise class in the same room!! Best deal ever! I go with a bunch of beautiful friends and we sweat out our frustrations and anger, share lunch and have a laugh. It’s community at its best. Today we had a little Christmas lunch after class. I brought some home made sushi in my op shop Tupperware platter (score!!!). Here’s to an awesome summer season gym buddies!! Dari kemarin ‘duo heboh’ ribut minta dibikinin sushi. Biasanya eike kalau lagi free bikin kani maki (kani: crab stick), tapi kali ini mereka minta salmon yang kayak di resto sushi favorit mereka (gak perlu sebut merk. Sebut saja mawar). So, kemarin beli fresh salmon di Farmer’s Market dan hari ini berkutat setengah jam di dapur. Tadaaaaa.... inilah penampakan homemade nigiri sushi dengan topping salmon dan mayo dan salmon chesse maki. Maafkeun kalau penampakannya masih kurang sempurna, karena kesempurnaan hanya milik ...#eh
Dan dalam 10 menit saja isi piringnya ludes tak bersisa. Sayang gak sempat foto ‘keributan’ kecil anak-anak karena rebutan sushi. Untung masih simpan 2 roll besar di kulkas untuk Padho.

Today is the graduation ceremony for the animal assisted therapy group Chobi and I are part of.
Therapist: “what do you want to eat at graduation ceremony?” Kids: “Sushi!”
Therapist: “well, that is a little too expensive for us...” Well, let’s make it happen! Homemade sushi isn’t that expensive especially there will be no raw fish! (Although it’s not as fancy as ones at restaurants)
Make it GF is very easy too as some people are serious celiac.

Pretty excited to take my new New York lunch box to work today (see my insta stories...) Not least because it’s got all my favourite things - sushi, walnuts, pickles, cherry tomatoes and apple slices! Counting down to lunchtime!
Below you'll find the recipe to create up to 48 sushi rolls!! Now, in our house, that’s just enough for the two of us so 😉
▶️ 12 spicy yam rolls
▶️ 12 cucumber rolls
▶️ 12 avocado and cucumber rolls
▶️ 12 mango rolls ❗️I feel obliged to tell you that you better be in a good mood before attempting this. It isn't easy working with sticky rice. For the sushi...
8 sheets of seaweed
2 cups sushi rice
1 sweet potatoe (cut into long strips)
1 avocado (cut into slices)
1 mango (cut into long strips)
1 cucumber (cut into long strips)
Panko (aka bread crumbs)
❗️Don't forget to pick up a sushi roller❗️ For the spicy vegan mayo...
1 package of firm tofu
1/4 cup rice vinegar
1/4 cup toasted sesame oil
3 tbsp sriracha hot sauce
3/4 tsp salt
1/4 tsp garlic powder
1/2 tsp agave nectar
1️⃣ Preheat the oven to 400
2️⃣ Start cooking the rice, based on product specifications.
3️⃣ To cook the sweet potatoe. Fill a medium pot about halfway with water. Sprinkle a pinch of salt into the water. Heat the water on high until it comes to a boil, which should take about 5 to 7 minutes.
4️⃣ Once boiling add the sweet potatoe and cook for 10-15 minutes. Then, place the sweet potatoe on a baking sheet and cook in the oven for 5-10 min; until crispy.
5️⃣ Meanwhile get the spicy mayo ready. Place all ingredients in a food processor and puree until completely smooth.

Note: For the yam rolls, add a dollop of the spicy mayo and panko on top of each roll 😊
