Slow Cooker Chicken Tacos 🐔🌮😋... If you've followed me for a bit, you know I love an easy, inexpensive, recipe. Packed with protein (31g/serving) & a healthy way to satisfy my on-going craving for Mexican cuisine, this is now on regular rotation. I love using salsa verde versus pico or traditional red salsa. So tonight was a wonderful example of adapting in the midst of failure and overcoming!😊 (with cooking! Lol)
Let me preface by saying I like eggplant, but by God, I HATE cooking with it! I have only ever had one meal with it turn out! So this meal was supposed to be eggplant lasagna, it was super not cooperating and then I burnt it! 🙄
I had the ricotta and spinach mix ready to go and no vehicle for it ( the eggplant was to be used in place of lasagna noodles)
I happened to have some leftover dry noodles, so I turned around and made a Lasagna Noodle Pasta Bake! It actually turned out to be a winner!

📝 This is pork tenderloin medallions (sliced pork tenderloin, seasoned and seared a few minutes per side). ➡️ I sautéed some mushrooms and garlic, splash of white wine (or stock/broth), frozen broccoli, a few leftover roasted Brussels, bag of frozen cauliflower rice risotto, Parmesan cheese, S&P and done!

Healthy eating. I love to do it, but I always seem to struggle with being consistent. I’m easily tempted...I love sushi. I love pizza. I love beer. And nachos...I could go on. But my body does not react well to those things #bloated
and while I enjoy it, I often regret it. I honestly think that being consistent with my nutrition will be a constant work in progress #mindfuleating
and that’s ok!
This challenge has led me on a journey that’s so much more than just fitness. It’s about a healthy mind and body. Making progress every day. Feeling good and feeling confident. Cause we all deserve that!

The meatballs were from the Fixate cookbook and came out super tasty! There is something just so fun about rolling out your own meatballs! 👩🏻🍳
Hubby had them with some spaghetti squash that I roasted (another favorite pasta substitute) and snuck in an extra meatball when I wasn’t looking! 🤷🏼♀️
