///PEACH & BLUEBERRY CRUMBLE///
I am LOVING and taking full advantage of peach season. This is the perfect light treat and one of my summer staples.👌
Recipe adapted from my fav cookbook, Giada’s Feel Good Food.
For the filling:
-3 large peaches (white or yellow- both work great) -1 1/2 cups blueberries
-1 tablespoon maple syrup -2 tsp vanilla extract -1 1/2 tsp cinnamon -grated zest of one large lemon -2 TBS fresh lemon juice -1/4 tsp sea salt
-3/4 cup sliced almonds -1/2 cup old fashioned rolled oats
-1 TBS raw honey -1 TBS grapeseed oil -1/2 tsp ground cinnamon
Preheat oven to 375 degrees.
Combine peaches, blueberries, maple syrup, vanilla, cinnamon, lemon zest, lemon juice and salt. Pour into a 9 inch square baking dish.
For the topping:
Combine almonds, oats, honey, grapeseed oil and cinnamon. Stir until well combined.
Sprinkle topping over the filling.
Bake for 30-35 minutes, then let cool for 30 minutes before serving.
Recipe yields 8 servings.
