Potato and green beans salad INGREDIENTS 250g fresh green beans, ends trimmed 1kg small white potatoes 1/2 cup sweet chilli sauce 1 clove of garlic, minced 1 teaspoon kosher salt, divided 1/2 cup olive oil 1 tablespoon chopped chives 1/4 teaspoon black pepper INSTRUCTIONS Fill a medium-sized bowl with water and ice for the green beans after they’ve blanched. Bring a large pot of water to a boil. Add the green beans and boil them for 1-2 minutes, scoop them out with a slotted spoon, and place them in the bowl with the water and ice to stop the cooking process. Once they’ve cooled drain them in a colander. Add the potatoes to the same pot of boiling water. Boil them for 15-20 minutes, or until they are fork tender. Drain them and let them cool for a few minutes. While the potatoes are cooling, combine sweet chilli, garlic, and salt in a bowl. Whisking continuously, slowly add the olive oil until the dressing has thickened and is emulsified. Once the potatoes are cool enough to handle, slice them in half lengthwise. Toss them all in a large bowl with the green beans. Add the dressing and toss it all together until everything is well coated. Ginger Sesame Meatballs for a perfect Christmas party appetizers . These scallop and avocado crostini are the perfect appetizer for your New Year’s. The scallops are sautéed to perfection and served atop crunchy crostini slathered with avocado. A drizzling of balsamic syrup really takes the flavor over the top. To get perfectly seared scallops you need to use a screaming hot pan and make sure your scallops are dry. I put mine between paper towels and let them sit for a few minutes. Add olive oil to the pan and sear those babies for about 1 1/2-2 minutes on each side. Do not crowd the pan and try to resist moving them around. Ramps are kind basically baby leeks, with softer leaves and a strong garlic/onion flavor. The smell of them raw is certainly potent. The whole vegetable is edible from the scallion-like bottoms to the leafy green tops. @mounira_2_7 During ramp season, ramp pesto is the thing to make. It's garlicky, slightly spicy and perfect on crostini with rich, creamy ricotta cheese.🥂ingredients: 3 cups roughly chopped ramp leaves (from about 2 bunches) ⅓ cup pine nuts ¼ cup parmigiano reggiano cheese, finely grated Zest of half a lemon, plus more for topping 1 tbsp lemon juice ¼ cup extra virgin olive oil, plus more for topping Kosher salt and fresh cracked black pepper 1 baguette loaf ½ lb fresh ricotta cheese (cow’s or sheep’s milk) Cracked black pepper Instructions : Toast pine nuts: Add nuts to a small, room temperature pan. Turn heat to medium and toast, 4-5 minutes, tossing often until lightly browned. Remove from pan and let cool. Make pesto: Add nuts to a food processor and finely grind. Add ramp leaves and pulse until finely chopped. Slowly drizzle in olive oil until emulsified. Stir in cheese, lemon zest and juice. Season with salt and pepper to taste. Toast bread: Preheat oven to 350°F. Add whole baguette to oven straight on the rack, and warm for 5-8 minutes or until crispy. Remove from oven. Heat a large flat top griddle or nonstick sauté pan over medium-high heat. Slice bread in half lengthwise. Grease griddle. Place cut side of bread down on pan and apply slight pressure. Toast bread 2-3 minutes or until browned. Slice & assemble: Slice toasted baguette halves into 1 ½ inch wide slices. Slather on ramp pesto. Spoon over ricotta cheese. Готовим крем суп за 20 минут 🌪🔪🍵 Вам понадобится на 3 порции : ✔️600 граммов тыквы ✔️60 граммов бекона ( 6 ломтиков ) ✔️100 мл сливок 15% ⚪️Тыкву очищаем , режем кубиками и на сковородку с небольшим количеством воды, готовим ее до мягкого состояния ⚪️Ломтики бекона прожариваем на сковородке до состояния хрустящих кусочков ⚪️Готовую тыкву перебиваем в пюре и заливаем предварительно разогретыми сливками ( если очень густой суп получается , добавьте кипячёной воды в блендер или предварительно сваренный бульон ). ⚪️Специи по вкусу :) #evening #cooking #iamachef #sportstyle #dinner #myeverydaymagic

Mix together with the crackers and fresh dill. Combine the melted butter, lemon juice, salt and crushed red pepper together before pouring over the fennel mixture. Mix well to combine. Sweet Berry Cloud Eggs 🥚🥚Ingredients : 1 cup assorted berries (i.e. strawberries, blackberries, raspberries, and blueberries) 2 Tablespoons granulated sugar 1½ Tablespoons fresh lime or lemon juice 4 large egg whites A dash of salt 4 Tablespoons powdered sugar fresh mint leaves (optional) Instructions : Start by macerating the assorted berries. Place 3 quartered strawberries and whole blueberries, blackberries, and raspberries in a medium plastic or glass bowl. Sprinkle granulated sugar and 1 Tablespoon of lime/lemon juice over the top of the berries and toss or shake. Let bowl sit at room temperature for at least 30 minutes. If not using immediately, cover and refrigerate overnight. If desired, our Sweet Berry Cloud Eggs can be garnished with fresh assorted berries -- maceration is not necessary although adds a nice sweet touch to the dessert. Meanwhile, preheat oven to 425°F. Using a stand mixer or whisk, beat the egg whites on low until foamy. Add ½ Tablespoon of lime/lemon juice, a dash of salt, and just a bit of the powdered sugar toward the side of the bowl (not center). Beat on high speed until stiff peaks form. It is important to add sugar slowly, little by little and always toward the side of the bowl; otherwise egg whites won't increase in volume as intended. You may need to stop mixer a few times to scrape sugar from the side of the bowl. Create 6 mounds of egg whites on a baking sheet lined with parchment paper. Make a well or indentation in the center of each mound to resemble nests. Place baking sheet on the oven middle rack and bake for about 3-5 minutes or until lightly golden and the mounds have firmed up. Let cool and gently transfer to serving plate using a large metal spatula. Garnish indented center with berries and fresh mint leaves. Я чувствую разницу между свежеприготовленной едой и вчерашней.(Позавчерашняя - та просто на вкус, как земля) 👳По ведам, если пищу не съели до вечера - она выбрасывается, потому что на след.день не имеет никакой пользы. Могу подтвердить: живя пол года в индийском ашраме - видела ведра каши и стопки чапати, которые, оставшись после ужина, шли на помойку. Я округляла глаза такому расточительству в стране, где массы голодных и нищих.👀 Зато выучила назубок: вчерашнее блюдо может есть только собака или корова, или очень голодный европеец, которому "жалко чтоб добро пропадало"🙊! 🍜🍌🍲🍎🍝🍏 А вы тратите время на "бесполезную готовку", если можно сварить борщ на неделю, поесть в фэстфуде или заказать пиццу на дом?😉 🍈🍉🍐🍑🍒🍓🍍🌰🌱🍎🍌 Хочу завести свою рубрику про полезную еду, которую я готовлю.
