🇨🇵 Here's another one of the sculpted fruit desserts from master pâtissier, Cédric Grolet named the top pastry chef in the world for 2018. This one is the Strawberry (17 €) and I think I liked this even more than the Cherry.
Like all his other sculpted fruit desserts, the Strawberry is replicated down to the tiniest detail... from the small dimples on the skin to adding a real strawberry stem complete with leaves. Inside the thin chocolate layer, there is a thick wall of light aka mild strawberry cream which encases a strawberry compote made with the sweetest and freshest strawberries imaginable. Again, I have to applause Grolet for his restraint in the use of sugar - instead allowing the natural flavours of the fruits to take center stage. But what really makes this dessert absolutely incredible is the black specks of pepper on the surface of the skin. The spice catapults the dessert to a whole other level and makes the entire Strawberry so aromatic with just that hint of je ne sais quoi. An absolute winner for me and if I had to choose just ONE fruit, this one would be it.
