1. Skillet Grilled paneer (cottage cheese) in makhni sauce - Cut paneer in square cubes. Coat paneer in turmeric, chilli powder, and some high fat cream ..On a skillet, add some coconut oil/butter and grill the paneer pieces till slight golden for 3-4 minutes on both sides. Make sure the paneer is not over fried. Remove the paneer aside and in the same skillet which would have some left over fat from the cream add half small diced onion, 1 small diced tomato, dried red chilli, 1-2 garlic cloves and fry it well for 3-4 minutes till the oil starts to separate. Switch off the flame and grind this mixture into a paste using a mixer. In a pan, heat butter/ coconut oil and add this grinded mixture and saute it well till oil starts to separate, add salt, pinch of coriander and cumin powder and chilli powder. On low flame add high fat cream and mix well, add the paneer pieces and cook it for another 2 minutes. At the end add some grated cheddar cheese on top!
Meal prep tip 1: I generally marinate and keep the paneer/ cottage cheese overnight in fridge.
Meal prep tip 2: I always make the paste of onion and tomatoes, garlic and dried red chillies in bigger batches and store it in my fridge and just use 1-2 tablespoon accordingly. If it doesn't fit your macros reduce the amount of this paste and add only for flavour.
