Toddler meal! .. Since I have a fussy toddler, it gets tricky trying to figure out how to get him to eat healthy food! So here are a couple of things I made today. Top - 1 zucchini chopped small, less than a 1/4 onion chopped, 2 garlic chopped. Heat 1 tbsp ghee, add 5 curry leaves, add a hint of hing, add onions, add garlic, add less than 1/4 tsp of cumin powder, a tiny bit of turmeric powder, 1/2 tsp butter chicken masala powder, add zucchini and salt as per taste. Add some water and cover and cook on low heat till soft and then finish off with a dash of milk. Bottom - 1/3 carrot chopped small, 1/4 potatoes chopped small, less than 1/4 onion chopped, 2 garlic chopped, 1/4 tomato chopped. Heat oil, add 1/4 tsp mustard seeds, add a hint of hing, add 6 curry leaves, add onions, garlic, tomato. Then add carrots, add some water and cover and let it cook. Add potatoes after 5 mins, some more water and steam covered, add 1/4 Maggi cube, add a litle turmeric, cover and cook till soft. Also add 2 tbsp milk. Helps make it creamy. Chettinad Paneer #sikandalouscuisine No claims to authenticity whatsoever - but lots of claims validating how delicious this recipe is ! 500 Grams Paneer. 150 Grams Onions - Chopped. 200 Grams Tomatoes Pureed. 1 Heaped Teaspoon Ginger Paste. 1 Heaped Teaspoon Garlic Paste. 1 Tej Putta. 2-3 Green Cardamom. Red Chilli Powder - To taste for color. 1/2 Teaspoon Haldi Powder. 1 Cup Coconut Milk. Chettinad Masala: 1 Tablespoon Coriander Seeds. 1 Tablespoon Fennel Seeds. 1-2 Teaspoons Black Peppercorn. 1 Teaspoon Jeera Seeds. 5 Green Cardamom. 4-5 Laung / cloves. 1" Cinnamon. 2 Star Anise. 1/2 Cup Coconut Freshly Grated. 5-6 Dried Red Chillies. Tarka: Ghee. 10-12 Curry Leaves - Torn. 1. In 1 tablespoon oil lightly roast grated coconut till aromatic and light brown , remove and add all the other Chettinad Masala ingredients , roasting them . Cool and grind coconut and other Chettinad Masala ingredients to a fine paste, add water as needed. 2. Heat oil , add bay leaf and cardamom , when aromatic add red chilli powder and 5 seconds later onions , sauteing onions till slightly color. At this stage tip in ginger , garlic , haldi , tomatoes and salt , cook covered till you see oil. 3. Add the Chettinad Masala paste , cook covered for 5-6 minutes then add paneer , and sautee another 5 minutes , slowly adding in the coconut milk till it's all consumed and begins to dry. 4.
