Prepping last week’s veggies before today’s CSA pick up! I’m not very good about meal prepping in general but I try to make sure the fridge is somewhat clean before I get more food 🥦🍆🍅 I roasted the beets (and carrots) in the oven with some avocado oil, salt, and pepper. Not pictured: a pot of chickpeas and a pot of navy beans boiling away on the stove top ✨ Definitely getting inspired by the cooler fall weather to cook more in batches and trays and generally use the oven again! 🍂❤️

Someone brought some of the fruits from their passionfruit plant into our office last week and we had waaaay too many leftover so I took some home and decided to whip up a lil treat with them and get some baking practice in. I decided on a mango cake with a passionfruit glaze. I liked that this was a loaf cake bc I’m trying to figure out ways to make cakes that are easily transportable for both gifts and potlucks. I think this recipe needs some tweaking since it was a tad dry, but the flavor combo was on point. The sweetness of the mango perfectly contrasted with the tartness of the passionfruit. I made the last minute decision to add mango chunks in the batter and not only did it add great texture, but I once again achieved even fruit distribution, so I can only assume that Mary Berry is v proud of me wherever she is. And if not, at least I’m proud of myself ☺️

I was listening to the @bbcfoodprog
podcasts today as I was working away in the kitchen. There was a conversation about how people approach cooking very differently; during that, I found myself pondering over my own approach and methods and where they came from. .
One of the things that came to me was that, I am not sure how/when/where I started cooking dumplings the way I do— fry till the bottoms are crispy, add water to boil till the water dries out. It was certainly something my mum had NEVER done at home, and there were YEARS I didn’t even make dumplings after I left home!! In Taiwan, there were ready-made dumplings aplenty at markets and in shops, and they were always boiled at home! (When you have 8 people to feed, about 120-160 dumplings to get ready for a meal, the answer has got to be a huge pot of boiling water!!).
Actually, I hardly ever cooked when I lived at home. I was too busy studying (or told I ought to study rather than being in the kitchen!), then I left home! When I eventually had my own kitchen, in UK, there was a lot to learn—not only with all the new British ingredients and equipment, but also learning to entertain my own guests. I was always quite confident in the kitchen— my curiosity and passion made me so; however, thinking back, it was a very gradual process that I got more and more into making dishes from home. .
Technology helped! In my first years of life in UK, there was only the one telephone company, the good old BT, and it cost £1.39 PER MINUTE to ring Taiwan—I certainly wasn’t going to be asking cooking questions on that! There was no internet to start with either, so it was just my memory, a couple of cookery books I had, and my willingness to give it a go! .
I’ve come a long way. .

CHINESE LEMON CHICKEN
1 1/2 lbs boneless skinless chicken breasts cut into 1 inch pieces
2 eggs lightly beaten
salt and pepper to taste
1/2 cup all purpose flour
1/2 cup + 1 tablespooncornstarch
oil for frying canola or vegetable oil
1/2 cup lemon juice
1/3 cup sugar
1/2 cup water
2 teaspoons sesame seeds
2 tablespoons sliced green onions
1 teaspoon grated lemon zest
Place the eggs, salt and pepper in a bowl. Stir to combine.
Place the flour and 1/2 cup of cornstarch in a shallow bowl or on a plate. Stir to combine.
Dip each piece of chicken into the egg mixture, then into the flour. Repeat the process with all of the chicken.
Heat 3 inches of oil in a deep pan to 350 degrees F.
Add 7-8 pieces of chicken to the pan. Cook for 5 minutes or until crispy and golden brown. Repeat the process with the remaining chicken.
Drain the chicken on paper towels.
While the chicken is cooking, make the sauce. Place the lemon juice, sugar and water in a small saucepan and bring to a simmer.
Mix 1 tablespoon of cornstarch with 2 tablespoons of cold water. Pour the cornstarch mixture into the lemon juice mixture.
Bring the sauce to a boil. Cook, stirring constantly, for 1-2 minutes or until sauce has thickened.
Toss the lemon sauce with the chicken. Stir in the lemon zest. Sprinkle with sesame seeds and green onions, then serve immediately.

A v good recipe to try. Sweet potato noodle salad with orange curry tahini dressing!! ⠀
1/2 cup corn ⠀
1 sweet potato, noodled ⠀
1/2 red onion, thinly sliced⠀
A buncha cilantro
Greens of choice⠀
For the dressing (sorry I don’t measure dressings!) -
Juice of an orange
Apple cider vinegar
Sauté the corn in a pan with olive oil until the kernels start to get golden.
Add the sweet potato noodles and continue to toss and cook until the noodles soften, but don’t get mushy.
Add the corn and potato noodles into a bowl.
Make the dressing.
Toss part of the dressing into the noodles while still warm, then let cool.
Once cool, add the onions, cilantro, avocado, greens, and additional dressing as you like.
Homemade Beans on Toast. You might think why would you bother when you can just get them out of a can but then you haven’t tried homemade beans before. So much flavour in such a little bean and topped with rosemary chilli oil they really pack a punch. Add a poached egg, a side of crispy bacon and a crusty loaf of bread and you have a hearty, warming, belly filling breaky that will leave you satisfied for the most part of the day. Heck, you could even have it for din dins. Trust me @jamieoliver__
