Another big batch o’ granola to start the week! This time, cinnamon cardamom granola with roasted hazelnuts.
These shells stuffed with ricotta and spinach were the result of some extra ricotta and spinach filling and sauce I had leftover from the week.
Using up the leftovers, I remembered growing up at home and how I can count on one hand how many times we went out for dinner. My mom worked full-time, yet everything we ate came from her kitchen. No shortcuts and leftovers were always used up. 🥘

Its been a blessing to work with an awesome bunch of local small businesses this summer. I have had such brilliant opportunities to develop recipes with organically produced exquisite products such as @bijabhar
This turmeric is produced with love and adds on a flavorful punch to any dish. To get the recipe of this amazing Turmeric Granola Mix, read on:
4 cups old fashioned oats
1 cups chopped almonds
1/2 cup shredded coconut
1/4 cup pumpkin seeds
1/2 cup packed brown sugar
1/2 cup maple syrup
1/4 cup canola oil
1 tbsp #bijabharresilienceturmericelixir
Salt to taste
Mix everything together and bake for 20-25 minutes at 325 degrees Fahrenheit.
Store in an airtight container and this mix will be fresh for atleast a month. Although I doubt, if you will not finish it up before!
I have used some seasonal fruits such as angelicots and blackberries on yogurt (non dairy yogurt if you are vegan) with some amaranth and chia seeds. Top this off with your delicious granola and you are ready for a power packed day!!

So I thought a day away from the office working from home and spending time with little alligator was easy peasy let alone manageable, and gosh I could never be more wrong! I now have the highest respect for work-at-home moms and I don't think I can ever understand their struggle to meet deadlines and cleaning up thrown food on the floor, repeatedly. But, what I *could* enjoy today was this simple oatmeal peanut butter smoothie before Adam woke up at ten and the new @amazingraze.co
granola topping was the best I've ever had! It's their limited edition for their third birthday - so happy birthday, Amazin' Graze team!!
The simplest and most basic oatmeal smoothie // 1/4C rolled oats + 1 frozen banana + 2tbsp peanut butter + 1/2C milk of choice (I use almond milk) // blend everything in a blender until desired consistency. Tip: I like yo ground the oats until powdery first before adding everything else as it helps with the texture. Add optional sweetener to taste and enjoy!
Pontocho Alley runs by the kamo-gawa river and it’s such a treasure trove of bars and restaurants. We had some pretty amazing wagyu beef katsu. Didn’t spot any geishas that night but plenty of locals and tourists were dressed in lovely kimonos, adding to the ambience of the area.

Have you ever tried lettage? It’s a newish vegetable --- a cross between cabbage and lettuce and it’s delicious. It’s sweeter and milder-tasting than cabbage but its leaves are still crisp enough to make coleslaw, which is how I used it here. My coleslaw was really delicious; apparently it’s also great for making wraps, among other things. This batch came from one of my regular produce suppliers, farmer Bob, and I’m keeping my fingers crossed that he’ll have more.

RECIPE for my go to smoothie this summer!
1 cup cashew milk
1 cup frozen zucchini
1/3 of a frozen banana
2 medjool dates
1 Tbsp @organika
1 Tbsp cacao powder
1/2 tsp cinnamon
Pinch of salt
Blend well🌪then add lots of ice and blend again until smooth and creamy. Optional but highly recommended to top with all the toppings😉

To mirabelki, dostaliśmy całą skrzynkę w prezencie, więc właśnie siedzę w kuchni i robię dżemy i kompoty. There's always a place for hummus in my Fridge! 🌬️Because it's so good and healthy, it controls the blood sugar, gives you boosting energy, is rich in proteins, thanks also to tahini, it contains a lot of minerals like magnesium, selenium, calcium, phosphorus, copper, zinc. Then just add the benefits of extra virgin olive oil, lemon juice, garlic... Don't forget vitamins, fibers, minerals and water from the veggies that usually accompany a hummus platter.
