Caramalized Sweet Potato and Kale Fried Wild Rice 🍚🍠🥦
This recipe is one of the best ones I’ve made this fall 😍 It definitely earns its spot at the Thanksgiving Dinner table! If you’re looking for an extra side dish to make, try this one out 🦃
Start by precooking 3/4 cup wild rice according to its instructions (mine didn’t come with any so I looked up a 50 minute recipe!) Use a wok or large skillet to boil about 2-3 cups water. Then add in 4 cups raw kale and let cook for 4-5 minutes until tender. Remove and drain. Meanwhile, empty the skillet and add 1 tbsp butter, 2 tsp brown sugar, and a pinch of salt. Bring to medium heat, add in 1 diced medium sweet potato, and fry for 8-10 minutes until tender. In that time, make a quick vinaigrette.
In a mason jar, add 2 tbsp balsamic vinegar, 1 tsp mustard (Dijon or plain if you prefer), 2 tbsp olive oil, salt and pepper. Shake for 1 minute to mix it all together! After the kale cools, wring out the moisture and crumble with your hands. Add the kale, rice, & vinaigrette into the pan of sweet potatoes and serve! I topped mine with walnuts but pumpkin seeds would also work! I enjoyed this dish with a roasted chicken breast and couldn’t be more happy or full 🤗

The touristy souvlaki piazza of Monastiraki is widely known as "the place to be" when it comes to souvlaki, especially in older generation & tourist circles! Yet anyone who is able to taste, smell or see food for what it really is, can easily tell what are the shortcomings of those places.
The Savvas branch on Ermou is the exception to the rule, yet w/o the Savvas spec!
The andreasfoood spec results in a whole different souvlaki experience, with culinary references from various parts of Greece, including the north & the Aegean islands.
I go for a pita with country sausage & ask for the following:
1. sausage cut in two separate parts (instead of simply half-cut)
2. sausage grilled very well over charcoal (instead of deep-fried)
3. pita w/o oil, medium grilled over charcoal (instead of hot plate w. oil)
4. spicy cheese mash (instead of tzatziki or thousand island sauce)
5. more tomato (3-4 slices instead of 1-2)
The result may be far from what Savvas offers by default, yet I give Savvas 8,5/10 for being able to accommodate all of the above with success.
The best way to eat this particular souvlaki is with real cuttlery, wide open on a real dish 🙃
