but he’s also helped foster new culinary talent, encouraging his chefs to fly the nest and launch projects of their own, including @amassmo
This year’s seen Redzeppi relaunch Noma in a new location on the edge of freetown #Christiania
following a one-year hiatus, and there he’s taking his understanding of the local soil, sea and seasons still further, dividing the year into three seasons, each with a radically different menu to showcase the type of ingredients at their best during each period: vegetable season, game and forest season and seafood season.
