BHARWA BHINDI (STUFFED OKRA)
As okra can be cooked in different ways. But in this process it is filled with lots of spices and stir fried.
Here I am going to give you a dry bhindi recipe but you can cook it with onion tomato gravy.
12-15 small bhindi
1/2 spoon regular red chilly powder
Little kashmiri lal mirch powder
1/4 spoon turmeric powder
1 .5 spoon coriander powder
3/4 spoon crushed fennel or powdered (saunf).
1/2 spoon of raw mango powder
A pinch of heeng
First wash the okras in running water. Let them dry or you can wipe them with cloth.
Then cut the top and bottom of bhindi and slit from centre vertically as I have shown in 4 picture.
Then in a plate take all the masala and mix with 2 spoon of oil gently and add salt to taste.
Now fill the stuffing into bhindi and keep aside.
Now heat about 2-3 spoon oil in a pan add bhindi to it and cover with lid and cook on low flame so that it may not get burn .
Check in between and stir.
Sprinkle little water say about 1-2 spoon so masala doesn't stick.
Now after 5 minutes add little coriander powder to add more masala to it.
Stir and when oil comes out and our bhindi becomes soft then switch off the gas.
Serve with roti or parathas.
It also goes well with rice and sambhar.
Any dal can be served with it .
For making stuffed bhindi be little choosy and pick small bhindi so that it can be cooked well and consumed well.
You can also add about 1-2 spoon of roasted gram flour to it to add more flavour.
