For dinner last night I made a big bowl of root vegetables, wild rice, spinach, black beans & beet caviar. The idea for the bowl & the beet caviar recipe was inspired by @golubkakitchen
(I’ve been really liking there winter meal plan ideas 🤭).
🌱I thought the beet caviar was such a different & awesome way to use beets. The recipe calls for 4-5 beets, peeled, chopped & roasted. Put them into a food processor with garlic, olive oil, paprika, balsamic vinegar, coriander, cumin, salt, pepper, cilantro (or dill or parsley), chopped & roasted walnuts. Pulse until everything is well blended - add as much salt & pepper as ya want to taste. It was seriously so good in this bowl!
