Fat Head Sausage Rolls Diet: Gluten Free, Grain free, Keto, LCHF, Low Carb, No Sugars, Wheat Free Ingredients Sausage Rolls 500 g sausages or you can ground mince if you dont have sausages. onion flakes to garnish Fat Head Pastry 170 g shredded / grated mozzarella 85 g almond meal / flour 2 tbsp cream cheese  full fat 1 egg pinch salt to taste 1 tsp onion flakes or powder Instructions Pre-cook the sausages Cut the sausage casing down the centre using a sharp knife. Peel back the casing and discard. Place each sausage on a lined baking tray and cook at 180C/350F for 10 minutes. Fat Head Pastry While the sausages are cooking, prepare the Fat Head pastry. Mix the shredded/grated cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute. Stir then microwave on HIGH for another 30 seconds. Remove and stir again. Add the egg, salt, and onion flakes. Mix. Place the Fat Head pastry between 2 pieces of baking parchment/paper and roll into a thin, rectangle Remove the top baking paper/parchment. Cut the Fat Head pastry along one side and place the sausages along that edge. Begin to roll to cover Cut into sausage rolls and spray or drizzle oil over the top. Sprinkle with onion flakes (or sesame seeds) to garnish. LOW CARB EGGPLANT LASAGNA Meat Sauce 1 tsp Olive oil 2 cloves Garlic (minced) 1 1/2 lb Ground beef 1 tsp Sea salt 1/2 tsp Black pepper 1 1/2 cup Marinara/passata sauce  1 tbsp Italian seasoning Roasted Eggplant 1 medium Eggplant sliced lengthwise into 8 slices, about 1/4"-1/2" thick 2 tbsp Olive oil Sea salt Black pepper Cheese Filling 8 oz Ricotta cheese 1/2 cup Grated parmesan cheese 1 large Egg Cheese Topping 2 cup Mozzarella cheese Meat Sauce Heat oil in a large pan over medium-high heat. Add the garlic and cook for about 30 seconds, until fragrant. Add the ground beef. Season with sea salt and black pepper. Cook until browned (about 10 minutes), breaking apart the meat with a spoon or spatula. Stir in marinara sauce and Italian seasoning. Reduce heat to a gentle simmer. Simmer for about 10 minutes while preheating the oven and preparing the eggplant. Roasted Eggplant Meanwhile, preheat the oven to 400 degrees F (204 degrees C). Line and grease a baking sheet. Add the garlic and cook for about 30 seconds, until fragrant. Add the ground beef. Cook until browned (about 10 minutes), breaking apart the meat with a spoon or spatula. Stir in marinara sauce and Italian seasoning. Add sea salt and black pepper to taste. Reduce heat to a gentle simmer. Simmer for about 10 minutes while preheating the oven and preparing the peppers. Chicken and Cauliflower Rice Meal Prep Bowl Calories: 420kcal Ingredients 2 large chicken breasts, sliced in half 1/4 cup all purpose flour 1 egg 1/4 cup cornmeal 1/4 cup Panko or regular breadcrumbs 1/4 teaspoon salt 1/2 teaspoon cumin 1/2 teaspoon ground coriander After baking 1/2 cup salsa 1 cup shredded Cheese of choice Cauliflower Rice 1 tablespoon olive oil 1/2 onion small dice 2 cloves minced garlic 1 bell pepper small dice 3 cups riced cauliflowerroughly 4-5 cups florets chopped small 1/4 teaspoon salt Instructions Heat oven to 375°F. Line a baking sheet with parchment and set aside. In three separate bowls combine: 1) flour 2) egg 3) cornmeal, panko, salt, cumin and coriander. Prepare the chicken breast, cutting large portions in half (the way you would if you were butterflying it). Dip first in the flour, shaking off excess, then in the egg to coat, and finally, roll in the cornmeal mixture until fully coated. Place chicken breast on the baking sheet and repeat with remaining portions. Bake for 10 minutes, flip, then bake for another 10 minutes. Spread with 2 tablespoons of salsa, and sprinkle with 2-4 tablespoons of cheese. Return to oven for 5 minutes, or until cheese is melted and bubbly. Cauliflower RiceWhile chicken is baking, prepare the cauliflower rice. Heat oil in a large pan over medium heat. Add the onion and cook for 5 or so minutes, until soft. Add the garlic and cook for a minute. Add the bell pepper and cook for 3-4 minutes, until slightly soft. Add the riced cauliflower and salt, and continue cooking for 3-4 more minutes. You want your veggies to be al dente and not completely soft. Remove from heat and cool. Lunch BowlsDivide the cauliflower rice between four 2 cup capacity storage containers. Top each with a portion of chicken. ALMOND FLOUR KETO DONUTS Who said you cant enjoy a donut while on a low carb keto gluten-free diet Donuts 1 cup almond flour 1/3 cup Erythritol(sweetnerof choice) 2 tsp Gluten-free baking powder 1 tsp Cinnamon 1/8 tsp Sea salt 1/4 cup Butter (unsalted; measured solid, then melted) 1/4 cup Unsweetened almond milk 2 large Egg 1/2 tsp Vanilla extract Cinnamon Coating 1/2 cup Erythritol(sweetner of choice) 1 tsp Cinnamon 3 tbsp Butter (unsalted; measured solid, then melted) INSTRUCTIONS Preheat the oven to (175 degrees C). Grease a donut pan well. In a large bowl, stir together the almond flour, erythritol, baking powder, cinnamon, and sea salt. In a small bowl, whisk together the melted butter, almond milk, egg, and vanilla extract. Whisk the wet mixture into the dry mixture. Transfer the batter evenly into the donut cavities, filling them 3/4 of the way. Bake for about 22-28 minutes (or longer for a silicone pan!), until dark golden brown. Cool until donuts are easy to remove from the pan. Meanwhile, in a small bowl, stir together the erythritol and cinnamon for the coating. When the donuts have cooled enough to easily remove from the molds, transfer them to a cutting board. Brush both sides of one donut with butter, then press/roll in the sweetener/cinnamon mixture to coat. Pressure cooker char siu pork INGREDIENTS 1/4 cup light soy sauce 2 tablespoons dry sherry 1 litre Massel chicken style liquid stock 1/2 cup char siu sauce 1kg pork belly, trimmed 2 tablespoons honey 2 teaspoons sesame oil 1 tablespoon peanut oil Steamed white rice, to serve Steamed Asian greens, to serve METHOD Step 1 Set pressure cooker to sauté. Add soy sauce, sherry, stock and half the char siu sauce in the bowl of a 6-litre pressure cooker. Cook for 5 minutes or until slightly thickened. Add pork. Cook for 30 minutes on medium, Remove pork from pressure cooker. Cool. Reserve 1 cup cooking liquid. Cut pork into 18 even-sized pieces. Step 2 Combine honey, sesame oil and remaining char siu in a bowl. Heat peanut oil in a large frying pan over medium-high heat. Add pork. Cook, brushing with char sui mixture, for 5 to 10 minutes, until brown and coated. Step 3 Meanwhile, place reserved cooking liquid in a small saucepan over medium-high heat. Bring to the boil. Reduce heat to low. Simmer 3 minutes or until slightly thickened.
