Jerk cooking dates back to the Carib-Arawak Indians who inhabited Jamaica in the 17th century. After capturing an animal and thoroughly cleaning it, the carcass was “jerked,” and the resulting holes were stuffed with a variety of spices. Hot peppers and herbs were plentiful on the island and were used as a preservative before refrigeration was available. The combination of spices also acted as a marinade and a way to tenderize tough cuts of wild game. To cook the jerked meat, the Indians dug a deep pit and lined it with stones. The pit was filled with green pimento wood, which, when burned, would smoke heavily and add to the flavor. The holes that were “jerked” into the meat also allowed heat to escape without loss of moisture. Here in Australia some psychopaths put needles into fresh strawberries and it lead to all the large supermarkets taking them off and farmers struggling big time. Because of that tons of strawberries are being destroyed or sold very cheap. I was able to buy 8kg of strawberries for $10. I called my grandmother to get her recipe for the best strawberry jam she makes. •2kg cleaned strawberries without green tops •500g caster sugar (more is you like more sweet jam) Wash your strawberries and cut the tops of. Don't soak the strawberries in the water or they will loose the flavour. Place the strawberries to a largest pot you have and put on a large flame. Stir constantly with a large wooden spoon for 2 hours. Don't leave it or it will burn and you won't be able to save it. After 2 hours it should have a nice consistency. Try put a little bit to a clean glass and place the glass into cold water. Once it cools you can see if it has the jam consistency. Once happy add the sugar and stir for another hour or until the consistency is right. Once you add the sugar it will become more runny so it has to come back to jam. Try the glass test again and once done fill into sterile jars. You can sterilise it or keep in the fridge for 2 months.

ᎶᎯℒℒℰᏆᎯЅ ⅅℰ ℙᎯℛℳℰЅᎯℕᎾ Ꮍ ℛᎾℳℰℛᎾ 🧀🌱 . Estas galletas son una buena opción como aperitivo antes del almuerzo o cena o como para picar entre horas 🤤😛 Son adictivas y muy fáciles de hacer!!! El parmesano tostado junto con el romero maridan perfecto!! Una buena opción para acompañar con quesos untables, algún dip o incluso solas con una buena copa de vino 🍷😉 . Para hacerlas necesitan: 300 g de harina 0000 180 g de manteca 50 g de parmesano rallado 3 ramas de romero fresco picado 1 cucharada de sal fina 1 huevo . 🌱En un bowl mezclar la harina, la sal, el queso y el romero picado. Agregar la manteca fría en cubos y deshacer con las manos hasta formar un arenado. Formar la masa con las manos y de ser necesario agregar unas gotas de agua fría. Envolver en film y dejar descansar en la heladera al menos por una hora. Desarmar la masa y volver a formarla, estirarla bien y cortar en porciones de la forma deseada (tiras, triángulos, etc) es una masa muy tierna que suele romperse una vez cocida asi que si son piezas más chicas, mejor. Acomodar en placas y pintar con el huevo batido. Cocinar en horno medio (170/180grados) durante 25-30 minutos. 🍚🍗🍶 STICKY GINGER SOY GLAZED CHICKEN Prep Time 40 minutes Cook Time 20 minutes Total Time 1 hour Servings 8 pieces INGREDIENTS MARINADE 1/4 cup brown sugar 3 Tbsp soy sauce 2 cloves garlic 1 Tbsp fresh ginger, grated Freshly cracked pepper 1 Tbsp cooking oil . CHICKEN 8 boneless, skinless chicken thighs (about 1.75 lbs total) 1/2 Tbsp cooking oil . GARNISHES (OPTIONAL) 2 green onions 1 tsp sesame seeds . INSTRUCTIONS Mince the garlic and grate the ginger using a fine holed cheese grater or box grater. In a small bowl stir together the brown sugar, soy sauce, garlic, ginger, some freshly cracked pepper (about 15 cranks of a pepper mill), and cooking oil. Place the chicken thighs in a shallow dish or a gallon size zip lock bag. Pour the marinade over the chicken and turn to coat. Cover the chicken and marinate for at least 30 minutes or up to a day (refrigerated). When ready to cook the chicken, heat a large skillet over medium flame. Once hot, add 1/2 Tbsp cooking oil and swirl to coat the bottom of the skillet. Add half of the chicken pieces and let cook until well browned on each side and cooked through. Remove the cooked chicken to a clean plate, then repeat with the second batch. Once all the chicken has been removed from the skillet, pour the leftover marinade into the skillet and allow it to come up to a boil. Whisk the marinade as it boils to dissolve any browned bits from the skillet. Let it continue to boil until it reduces to a thick glaze*. Turn the heat off, add the cooked chicken back to the skillet, and dredge it in the thick glaze. Garnish with sliced green onions and sesame seeds if desired. 🍝🧀🍴 CRAZY GOOD QUICK GARLIC NOODLES prep time: 2 MINS cook time: 13 MINS total time: 15 MINS yield: 2 - 4 servings INGREDIENTS: 3 tablespoons butter + 1 tablespoon olive oil 6-8 fresh garlic cloves, minced (we always use 8) 2 scallions, greens only (thinly sliced) 2 tablespoons fish sauce 2 tablespoons oyster sauce 1 tablespoon granulated sugar 1/4 cup shredded parmesan cheese 8 ounces noodles (see notes) fried garlic, for topping . DIRECTIONS: INFUSE THE BUTTER: Heat a large pot with water and allow it to come to boil, cook the noodles according to package directions, drain and set aside. While the water is boiling, grab a large, non-stick skillet and place it on medium-low heat. Add the butter, oil olive, garlic, and scallions. Let the butter infuse with the garlic for 5-7 minutes, stirring often. The garlic should barely sizzle here, you don’t want it to brown. GARLIC NOODLES: While the garlic is going, grab a small bowl and mix together the fish sauce, oyster sauce, and the sugar. When the garlic is cooked, kick the heat up to medium-high, stir in the prepared sauce; let cook for 30 seconds. Add the prepared noodles and toss with parmesan cheese (yes, parm!) Let the noodles cook for a minute so they soak up all that flavor. Top with fried garlic and serve immediately! That flavor is like NOTHING you’ll ever have. . NOTES: You can use a lot of different kinds of noodles here. I used Chuka soba noodles but egg noodles, Hong Kong noodles, spaghetti, or even angel hair pasta will work here. You can serve this with just about anything you like! This recipe can easily be doubled if you want leftovers, and really with all that garlic, who wouldn’t? Ingredients: - 2 tbsp Heritage olive oil - 8 boneless chicken thighs or breasts, halved - 2 red Heritage onions, diced -2 tsp ground ginger -1 tbsp honey - 300g carrots, chopped -100g tomatoes, chopped -3 tbsp ground coriander - 150ml hot water - 2 handfuls spinach (optional) Method: 1. Heat your oil in the bottom of a deep saucepan and fry the halved chicken for 5 minutes until beginning to colour. 2. Combine with diced onions, tomatoes and ginger and fry for a further 3 minutes. 3. Add all remaining ingredients apart from chopped coriander and cook on a medium-high heat for 30 minutes, until the chicken has softened and is white all the way through. 4. Heat for a further 10 minutes on high-boiling heat. Add a dash of coriander and salt, and serve"

It was one of the quickest things I could think to do. However, it didn’t stop it from being absolutely delicious! Gluten free pasta with the tastiest pesto sauce! Here’s the recipe for the pesto 1 handful of spinach 1 handful of basil 60g of pine nuts 1 large or 2 small cloves of garlic chopped Squeeze of lemon juice 2 teaspoons of nutritional yeast 100 ml of virgin olive oil (or more if you prefer a thinner consistency) A few punches of Himalayan rock salt, to taste A few twists of black pepper to taste Put all of the ingredients into @nutribulletuk for 30 seconds. Opcional: Zanahoria, picada cubos pequeños Jícama, picada cubos pequeños Jugo de tomate, al gusto . Para acompañar: Tostadas Galletas Saladas Mayonesa Salsa picante aguacate . ➡️Preparación: Vamos a picar en cuadritos chicos los filetes de pescado lo vaciamos en un bol y lo maceramos en el jugo de limón. . Así mientras vamos picando el tomate, cebolla, pepino, cilantro y chile serrano. Al pasar 20 minutos del pescado vaciamos lo picado en el bol. Sazonamos al gusto con sal y pimienta. . LISTO . 🥕FERMENTED VEGGIES🥕 Hey everyone, I hope you have a very good day! Today, I want to share one of the things I need to (should) take every single day. As I told you, I must have a diet because of my medical issues. My digesting system is pretty much broke down and my absorption is really bad... So, I have to take 6 pills of probiotics and SBOs (Soil Based Organisms). Besides these I need to eat food with probiotics. If you eat fermented veggies then you can take them on that way as well. I decided to do it myself, then at least I know what’s in it. I obviously started with cabbage and carrots. I love both of these. In the end it turned out that cabbage is not the best for me. 😅 But who has better digestion it can be good too. Let’s see how to make these delicious snacks (that’s how I have it). Ingredients: Any kind of vegetables Glass jars 300 ml warm water 2-3 tbsp salt Mustard seeds (optional) Whole pepper (optional) Bay leaves How to: 1️⃣Boil water in a big pot. You need to boil the jars for a little to sterilize them. When they are done put them out on a clean kitchetowel. 2️⃣Cut the vegetables into very thin slices. 3️⃣Put the mustard seeds and the pepper in the jars. Then add the bay leaves too. 4️⃣Put as much veggies in the jar as much possible. Leave 2 cm empty. 5️⃣Put the salt into the warm water and stir it until it dissolves. 6️⃣Fill the jar with it. Leave 1 cm empty in the jar. 7️⃣Place them in dark place where you have 20-22 degrees. No more otherwise they’ll get bad. 8️⃣Leave them there for 5 days.
