DATES & NUTS SQUARES.. Pretty, #healthy
and decadent, I made these for our upcoming trip to Scotland. These squares are good when you are low on energy and have no time to stop by a cafe or go looking for a healthy eating place. 🌱
Low glycemic foods like #dates
help to steadily increase the sugar in your blood, thus giving you the much needed energy when tired. Do you know that most sports players munch on a few dates for instant energy while playing?
Makes 12 squares👥
Packed 1 cup pitted medjool dates
1/2 cup almonds
1/2 cup cashew nuts
1/2 cup pistachios
1/2 tsp ground cardamom
Pinch of salt
2 tsp poppy seeds, lightly toasted
🔸Dry roast all the nuts separately on medium flame till they are fragrant. Please take care not to burn. 🔸Blend the dates in a food processor to smaller bits.
🔸Place the dates paste in a pan and cook for about 5-7 minutes till the mixture is soft and sticky. Let cool.
🔸Now combine all the ingredients except poppy seeds and form a dough.
🔸Sprinkle a teaspoon of poppy seeds on parchment lined 8 inch tray. Press the dough onto the parchment and sprinkle the remaining poppy seeds on top. Place another piece of parchment on top of the dough and even out the surface. 🔸 Refrigerate for an hour or two and cut into squares. 🌱
Some goodies in my travel bag are bananas, apples, healthy #homemade
snacks, unsalted dry roasted peanuts, etc. What do you carry when you #travel
