The side dish of all side dishes. Tested this one out on my dad last week and he’s still talking about it ☺️
BAKED BUTTERNUT MAC N CHEESE
Vegan, GF Serves 6
12 oz brown rice pasta
2 cups butternut squash, peeled + cubed (frozen works well too)
1 small onion, diced
1/4 cup veg broth
1/2 cup raw cashews, soaked overnight + drained
Squeeze of lemon juice
1 tsp dijon mustard
3 gloves garlic, minced
1/4 tsp garlic powder
1/4 tsp turmeric
1/8 tsp ground nutmeg
1 tsp sea salt
Cracked black pepper
5 Tbsp nutritional yeast
2 Tbsp fresh chopped parsley
1 tsp herbs de provence
2 Tbsp chickpea breadcrumbs
Preheat oven to 400. In a pot, lightly cover squash and onion with water and bring to a gentle boil until tender (about 10-15 min).
Cook pasta according to directions while you work on the sauce. In a blender, add remaining ingredients (besides toppings) until creamy. Combine pasta and sauce in baking dish and garnish with topping mixture.
Bake at 400 for 15 minutes until golden brown and crispy. #somethinghealing #plantbasedrecipes #thanksgiving

ARTIFICIAL SWEETENERS - they may not be so sweet for your health!
These zero calorie sweeteners are not found in nature. They are marketed as healthy sugar substitutes, but lack high quality evidence to support the safety and long term use. Common examples are Acesulfame-k, aspartame, saccharin, and sucralose.
The PROBLEM is that they may cause harm in the body (digestive upset, headaches, IBD). On top of that, they provide sweetness without the calories, which confuses your body’s digestive processes. This leads to cravings, overeating, and fat storage.
I recommend stevia, made from the plant. Look for one made with only organic stevia leaves (versus those made with sugar alcohols and other ingredients). I like the brand @sweetleafstevia
TIP - once you reduce these sweeteners, your tastebuds will change and you won’t crave that extra sweetness!

🌿 What dream or goal do you find yourself pulling back from because of fear or self-doubt? 🌿 I recently committed, to my editor, to get my book manuscript done within the next couple of months. This goal excites me to no end. But, at the same time, I’m telling some of my hardest personal stories in this book. That leaves me feeling vulnerable. Being unsure of how other people will receive your truth is a scary thing. So today, I needed this reminder. “I am not afraid! I was born to do this!” I mean, when it comes to telling my story, if not me, than who? It’s okay to be afraid. It’s a normal human emotion that we are all born with. And we’ve all been there. Sometimes we just need to be reminded that if a goal or dream has been put on our heart then we have everything we need, already inside of us, to make it happen. For the first time in my life I started having anxiety about 2 years ago, but learning my Ayurvedic dosha is Vata, and that I needed warm, cooked, soothing foods was one part of the puzzle that helped me through that. I was too focused on raw foods, juices and smoothies at the time which was not what my body was needing. This book (and her website) has a quiz that will help you learn your dosha and what types of foods work best for you. Can you believe Thanksgiving is in two days? I don’t know about you but I love the Holidays. Family and good food is enough to be thankful for. One thing I don’t love though, is this guilt surrounding indulging in hearty meals. Every time I see a Holiday challenge or a “workoff what you ate” I cringe a little. Full disclosure: when I was first starting out I did run a cleanse after the holidays and even while I was doing it I just felt weird. But you know, all the other health professionals were doing it so I should too ( 🤦🏼♀️🤷🏼♀️)
I am a HUGE believer of the 80/20 rule. I try to instill in all my mamas this way of eating. 80% of the time eat as clean as can be (I usually call this eating beautifully) and 20% of the time give yourself a damn break. ( Unless of course there is an underlying allergy or ailment and eating certain foods would be detrimental). But the majority of the population can benefit greatly from with way of eating. Dieting doesn’t work, counting calories has been proven time and time again to be ineffective ( sorry, not sorry weight watchers) and people tend to forget why we eat food. We eat food to nourish our bodies. It should be an enjoyable experience, not something to punish ourselves for. ▪️
One thing I must make note of is EAT REAL FOOD. When putting together your Thanksgiving menu avoid cans and boxes as much as possible. Make sure your turkey was pasture raised ( and be weary with claims that the bird was on a “vegetarian diet”….birds are not vegetarians, a bird that is pasture raised indulged in delectable little bugs ) ▪️

Recipe by Stephanie Wharton
Perfect to serve alongside holiday meals or to eat on its own! This Festive Napa Cabbage Salad w/ Ginger Garlic Poppyseed Dressing is loaded with antioxidants and tasty toppings that everyone will love. The homemade dressing is simple, delicious and best of all - sugar free.
Napa Cabbage, the base of this salad, has a sweet, crunchy and celery-like taste and is loaded with antioxidants, potassium, and healthy levels of fiber. It’s extremely low in calories and provides an excellent source of folate.
INGREDIENTS FOR SALAD
1 head Napa Cabbage, chopped 2 cups red leaf lettuce, chopped
2 cups green leaf lettuce, chopped 1 small red onion, thinly sliced
½ cup mandarin slices
½ cup dry roasted sliced almonds
¼ cup combination of dried golden raisins, cherries, cranberries & blueberries (or just cranberries would be fine, too)
Top with unsweetened coconut chips or flakes (I used Dang brand here, found at Whole Foods or Amazon)
INGREDIENTS FOR DRESSING
1 small knob (about 1 tsp. size) fresh ginger 2 garlic cloves
1 tbsp poppy seeds
2 tbsp Lakanto monkfruit sweetener (found at Whole Foods, Fresh Market or Amazon)
¼ cup aged Balsamic Vinegar
½ cup olive oil (or avocado oil) 1 lemon, juiced
In a large bowl mix together Napa cabbage and lettuces to form the base of the salad. Add remaining salad ingredients to the top. Place all ingredients for dressing into a high speed blender and blend on high for 1 minute. Drizzle salad with dressing or serve on the side. Enjoy!

I haven’t shared much about my brother’s journey fighting cancer (stage 4 Non Hodgkin’s Lymphoma) 7+ years ago. There are never enough or, maybe the right, words to describe the journey through fighting cancer with a loved one. Here’s what happened to me this weekend. I ate something that my body is clearly not use to and in the evening I had a lot of cramps, belly very much bloated and I knew deep down, I knew that the next day I should take it slow and probably just not eat anything. But what I did instead was to cook a big lunch for Zack and I, this pastry filled with mushroom and we then went to the cinema to watch Bohemian Rhapsody (amazing btw) and then stuffed myself with nuts, chocolate and chips 😣 well in the evening I was again very bloated and having a lot of cramps even my head went with it. So yup that’s just a little reminder story to listen to our body!

What sort of thoughts do you have most often? Are they positive, constructive and inspiring? Or are they dragging you down, causing fear or letting you doubt? “Do your thoughts cause you to love your life the way you want to live it, or do your thoughts paralyze you, undermine your intentions or sabotage your efforts?” (from “Managing Thoughts” by Mary J. When we aren’t conscious, we see ourselves as the victim of our minds. We identify too much with that voice within, thinking that it’s us. In fact, the mind is only a tool!
It’s designed to help us. But in the first place it’s designed to help us SURVIVE. Trying out something new and potentially risky, something we aren’t familiar with yet or that might get us out of our comfort zone is not in our mind’s interest - at least not as long as we’re talking about the original programming of our brain (and one of its oldest parts: the fear and survival center called Amygdala).
Only when we become aware of this fact, we can go beyond this limitation. Then we can choose which thoughts we pay attention to. And we can reprogram our brain and ways of thinking. And then we can grow and evolve outside of our safe comfort zone in order to reach new levels of fulfillment.

It’s important to be aware of your sugar intake.
Your 20’s are for tasting cheap wines and pretending you’re mature enough to prefer it over tequila.

Yes yes yes!!! The only way to transform and sustain a health shift is from the inside, starting with looking at our beliefs about ourselves.
When I first started Health Coaching, people came to me for weight loss. They needed a quick fix, and that’s what it was. Quick results and then slowly they returned back to where they started.
Why? Not everyone is willing to get vulnerable. Not everyone is able to ask for help and lean on someone for support. Not everyone is willing to get close to what scares them.
