It occurred to me today that there are endless combinations here and they are all delicious! Today I had a salad with brisket AND chicken, cheese, guacamole and sour cream.
18 June - 85.2 kgs. 16 November - 71.2 kgs. Overall I’ve lost 14 kgs but it hasn’t been an entirely spartan existence. For example, I had a 10 day spell of full on carb loading when I was sick. During those 10 days I popped up by 3 kgs but lost it in a week by getting back on my #IntermittantFasting
regime. I also used September as a month to experiment with full on carb-time and boozing it up at the weekends. I didn’t lose weight nor did I gain any either. And, today as I ease into the weekend at my lowest weight since 2002, I’m looking forward to hanging out with my mates, going to the Ireland v All Blacks rugby match all while eating and drinking what I want. Sometimes you need to look back to see how far you have come!
So, I uploaded all my pictures to my computer to start “fresh” the other day and I came across this one from May 2017 and it got me thinking.......🤔. In May 2017 when this pic was taken I remember thinking that I was doing everything right with my health and fitness. I was working out everyday, weights and cardio, I was on a restricted diet,( chicken and rice pretty much everyday), I would avoid going to parties and social functions because I was worried about eating too much. I was always searching for the easiest and quickest way to get abs and be “jacked”. Little did I know, I was doing it so wrong. I didn’t realize this until about 3 months ago when I found the @apexvisionfitness
programs. They have taught me so much about what is the “right” way to get abs and be “jacked”. I not only feel way better but I also have a life, I now look forward to social functions and taking part in all our family parties. I’m a so glad that I found the #apexlifestyle
and decided to take a chance on it! It’s amazing what you can accomplish when you get a little bit of guidance and a push in the right direction!
I’m pumped to keep this momentum going! 45 days left in 2018 to kick ass! Nothing worth having comes easy!

I was worried about what to order because most of their menu is carb-heavy. Decided on the Asian Caesar Salad with grilled salmon and it was delicious!! Their website says this salad has 21g carbs (17 net) but I’m hoping most of those carbs are from the wonton croutons (which I omitted).🤞🏼

I have to say, these eggs were amazing. I often forget about the incredible edible egg!! Having some today for lunch with avacado mayo 🥑 and bacon strips 🥓. People will tell you different but DON’T FEAR THE FAT guys!!! What you should be worried about is FAT and SUGAR together... and too many GOOD CARBS that might otherwise just be called SUGAR 😡

**INTERMITTANT FASTING** swipe 👈 before and after 6 weeks! I done my fasting from 8pm to 8am and from this week will start fasting from 8pm to 12pm and see how it goes! ... I genuinely have no idea of my weight in both pictures because I don't go near the scales but I do know that I feel less sluggish, bloated, hungry all the time, better in my clothes and my overall mood has improved!! Let's see how the next few weeks go 😊

Soup again tonight and I’m not mad about it! Chicken enchilada soup with Chili Lime tortilla chips from @questnutrition.
SOUP BASE: leftover chicken thighs (shredded), chicken broth, salsa, cream cheese and black soy beans.
ADD-INS: corn, shredded cheese, sour cream. (I skipped the corn)
Black soy beans have 1 net carb per serving and no one but me knew they weren’t regular black beans! 🤣

Keto Friendly Chicken Parm🙃🙌
// ONE OF MY MOST POPULAR RECIPES // Grain-Free Pumpkin Spice Bread
1/2 cup coconut flour
1/2 cup almond flour
2/3 cup coconut sugar
1/4 t. salt
1 T. baking powder
1 T. pumpkin pie spice
1/2 cup canned pumpkin
1/3 cup melted coconut oil
1 t. vanilla
Set oven to 350 degrees and grease a small bread pan with coconut oil.
In a medium bowl, mix all the dry ingredients and combine well.
Add in all the wet ingredients and mix well. Use a hand mixer to incorporate the ingredients. The batter will be very thick.
Pour the batter into the prepared bread pan, and spread out evenly.
Bake for 45-50 or until done in the center.
Cool before slicing and serving. Note: swap out the coconut sugar for a low carb sugar! I’ve used monkfruit sugar and erithytol.
