I can’t believe it’s only 1 week to thanksgiving and barely a month and a half left of this year. Today is the last day of Venus Retrograde and tomorrow Venus will go direct and Mercury will go Retrograde so be prepared for three weeks of miscommunication and do some research on how you should get through it✨

May be a bit of an unpopular opinion but I actually LOVE cold weather and snow! Today’s lunch (and dinner last night) ~Pesto Zucchini Noodles w/ Chicken~ showing some holiday spirit.💚❤️💚❤️
Super easy to make! I cooked the chicken breasts yesterday so all I had to do was quickly sauté the noodles during my lunch break. I’ve got Oral Surgery rotation so spending the day yanking teeth 🦷🤗
🔺Season chicken breasts with salt, pepper, and garlic powder. Sear in a cast iron for ~5 minutes each side then finish baking in the oven for 20-25min or until cooked through at 375.
🔺Saute zucchini spirals in 1 tbsp olive oil.
vegan kale, cashew & basil pesto.
🔺Slice cherry tomatoes and green onion for garnish.

I'm not a frozen meal kinda gal but in a pinch these will be perfect. Especially on a day at the office when the department next door invites you to their potluck of yumminess but none of it is compliant😢 Oh well, it's the thought that counts.

While ideally it would be best to buy local and organic produce, this is not always practical due to premium costs, time of season, and inconvenience.
Get familiar with this list from the @environmentalworkinggroup
to see which produce is the most heavily sprayed (dirty) and should ALWAYS be bought organic. I personally buy all berries, root vegetables, and dark leafy greens organic as well.
When we buy organic, we greatly decrease our exposure to neurotoxic round-up and other synthetic chemical pesticides that poison our body and cause endocrine dysfunction.
Want almonds? Well, I hope they're steam treated and organic...conventional almonds are fumigated with propylene oxide, an anti-freeze derivative and neurotoxin.
You can see that even when we are trying to make a healthy choice, we still can't seem to win. And this is just one example. Apples and diphenylamine, anyone?
In addition, organic food is more stressed. STRESSED FOOD HAS MORE NUTRIENT VALUE. When plants have to naturally fight and defend themselves from harsh conditions, water and nutrient deficiencies, and injury, they produce more phytochemicals and antioxidants. These biologically active compounds are essential for optimal health and fighting disease.
However, when we can't choose organic, I want to share with you an easy cleaning technique you can use on conventionally raised produce.
Simply add a couple tablespoons of apple cider or regular vinegar to a medium bowl, or add a full cup to your sink filled with water to remove the waxy resin. Soak for 10 minutes. Make sure to give it a final rinse and pat it dry before storing!

A while back I ordered some Elements Meals after seeing them on a Whole30 feed. I ordered the three that are Whole30 so I could try quick and easy lunches (my most often skipped or crappy meal!). They aren’t cheap, but after this one I think they’re worth the cost.
Second pic is blurry (portrait mode not focusing and I was too hungry to actually look at the picture before scarfing down the food) but you get the idea.
I don’t even like butternut squash when I prepare it, so I was nervous, but this was dang delicious. (And this post isn’t sponsored or anything! Just a product I purchased and am really happy with! I will let you know how the other flavors are!)

in my stories! 🎉I am SO excited to finally try this out! Meat is something I’ve struggled with over the years. When it’s good it’s good... but at times I can get really grossed out if it’s too fatty or whatever😕 I actually didn’t eat red meat for a long time before I started Paleo/ Whole 30. But once I started this lifestyle I added more of it in. I KNOW I need protein and when I don’t have it at meals, I actually crave it.
One of the things that makes me feel better about eating meat is making sure the meat I do eat is high quality. I like to know it’s organic, no antibiotics or hormones, humanly raised etc. 🙏🏼 That’s why @butcher_box

Salmon with Baja salad. A quick and delicious dinner that was just as fast as takeout and tastes so much better. It might not be perfect by some standards, but I’ll take it over fast food any day.
Here's the trick with physical transformation, it can't come from a place of desperation.
Which I know is super hard, when you want something to happen so, so badly... You feel desperate for it. You will do almost anything... fad diets, pills and shakes come to mind.
I get it, I really do.💙
But over the years, I've learned that the times when I've been desperate for something physical, and my mind and emotions are not in alignment. It doesn't happen. It doesn't manifest.
You see, transformation isn't one dimensional.
Transformation embodies all of you.
Inside and out. It's also about coming from a place of love and gratitude, and then letting the universe know exactly what you are wanting. 🙏
Transformation is bigger than just your physical body.
Tansformation isn't about exercising like crazy and eating such a low amount of calories and hoping to the best... Can you sustain that? Do you really want to? Is that your new life?

Stop worrying and get real. Do the work, all of it.

Looking for a fun way to incorporate seasonal squash and more veggies into your meals? Try this VEGAN SPAGHETTI SQUASH LASAGNA! I promise you, it’s 🔥🔥🔥
Lasagna was one of my favorite meals growing up. However, since dairy and wheat aren’t compatible with my body, I haven’t had it in years. This dish is great as a side or on its own and perfect for the cooler weather.
To make the VEGAN SPAGHETTI SQUASH LASAGNA, you will need:
• 1 spaghetti squash
• 1 jar @raoshomemade
• 3-4 cups chopped Swiss chard
• Fresh chopped basil (top)
Pre-heat oven to 400°F. Cut the spaghetti squash lengthwise from stem to tail and scrape out the seeds and stringy bits of flesh.
Place the squash halves face down in a roasting pan and add enough water to lightly coat the bottom of the pan. Cook 30-40 minutes or until squash is tender.
When the squash is done, remove from oven and let cool for 30 minutes before handling.
Next, lightly grease a 9x13 casserole dish with a bit of coconut oil. Start by creating the base layer with one half of the spaghetti squash (use a fork to scrape out strands). Spread squash evenly (semi-compact) followed by a layer of @miyokos_kitchen
mozz. I used half the cheeze for the first layer and the other half for the second layer. I layered the cheeze chunks out about 1 1/2-2 inches apart.
Next, chop up ~1 1/2 cup of Swiss chard and lay evenly over the spaghetti squash and cheeze. Pour 1/2 a can of @raoshomemade
marinara sauce over the Swiss chard. This is all the “first layer.”
Repeat the above steps to create the “second layer” starting with the other half of spaghetti squash. Make sure the top layer is sauce.
Cover the dish with a small baking sheet (could cover the dish with foil but I don’t use aluminum in cooking) and bake for 20 minutes at 400°F. Next, remove the sheet/foil and bake for an additional 10 minutes uncovered.
Once done, turn the oven setting to HIGH broil and cook for ~2 minutes (this gets the mozz browned and bubbly).
Remove from heat and let cool. Top with fresh basil. Enjoy!

Also - think going to be off of social media for a few weeks at least for multiple reasons but still planning on eating the same around here because it’s how my body seems to feel the best (just wont be taking pics of it and posting) - have a wonderful thanksgiving next week!! #

It’s been slightly hectic getting back on schedule after this weekend, but I’m back at it! I know it’ll be even crazier after Thanksgiving, so this week I’m making a bunch of meals (mostly stews and soups) that I can easily freeze/reheat when we get back 😋

Stopped to get an oat milk matcha latte after yoga today 🍵 I rarely drink caffeine anymore but I’ve been dealing with a serious lack of spoons the past week or so. I’m assuming it’s because of the stress about moving, having loooong days, and just having a lot of work on my plate in general. It’s hard not to feel frustrated by the debilitating fatigue and pain when there’s so much to do and the deadline is quickly approaching. Here’s to hoping this latte helps me get through the day! Active rest day means pulling out my Star Wars shirt to go for a run and walk! Felt so good to get back out for a run after taking months off to cross train! Loving that the program I’m doing right now has active rest days that I can take off if my body needs or do other activities I love! .

If I had to choose one of my favorite on-the-go breakfast recipe I would have to go with my frittatas🙌🏼. You can switch up the flavor combos every week, super easy to prep, and taste delish cold or hot! Have you tried them yet?
Makes 4 servings
8 pasture raised eggs
1 Tbsp @fourthandheart
California garlic ghee
2 handfuls of spinach
1-2 Tbsp fresh cilantro chopped
1/3 cup organic cherry tomatoes
1/4 cup diced yellow onion
1/2 cup diced mushrooms
Sauté your vegetables ghee for a few minutes. In a separate bowl whisk eggs and once veggie mixture is cooled add to eggs, line a 8x8 baking dish with parchment paper, and add egg mixture. Bake 350 for 25-30 minutes. Top with homemade guacamole.
