Needed this comfort meal tonight after saying farewell to a good friend. She’s back home in Florida w her son. It was fun spending time with her while it lasted. My husband loves this salty cheesy dish. Added chunks of ham, tomatoes from the garden and a olive bread crumb on top w garlic and green onion. Threw in leftover corn on cob and asparagus pieces. Hit the spot. Definitely wanted seconds. The fresh watermelon 🍉 was a nice finish to the meal.
Last day of summer for us and we ended the evening with the boys favorites, pasta and peach cobbler, oh my! (Let’s just say I will be on the treadmill tomorrow for an extra 20.) it’s a unanimous vote, the sauce recipe was fab, but from now on we will leave the homemade noodles to the little Italian ladies... man was that some work! Tonight was a will this work dinner. I made burgers and fries for dinner. Burgers were a mix of ground beef and Italian sausage stuffed with provolone cheese. Place on toasted sesame buns with a spicy dijonnaise spread and topped with green cabbage leaf. It was great! With all of the garden goods coming out of our backyard garden, I had to think of something I could prepare for dinner to use all of this wonderful food. I opted for Zucchini Boats. 🥒These are a great way to use up lots of veggies. They can be made with pure grass fed, organic beef like these or ground turkey or chicken. (Cook meat with veggies first before baking.) Throw in tomatoes, 🍅red & green pepper, white onion and button mushrooms 🍄 and now we're talking! As for the asparagus, I just oven roasted these with the chicken (drizzled a bit of olive oil and used sea salt) - didn’t calculate nutritional value but just assume healthy AF. #itswhatsfordinner

If you watched my insta stories you saw how easy this meal was to throw together, and it took literally 15 minutes from start to finish (if you exclude letting the shrimp thaw). Eating healthy does NOT have to be a masterpiece nor does it have to be complicated! I honestly just love cooking & the creative expression that comes with it, but I know for mostttt people that’s not the case when trying to eat better for your health. I hope this meal promotes a little balance 💆🏽♀️ during the busy week! Also side note- don’t be afraid of frozen veggies/fruit! They’re most often picked at the peak of freshness & obviously last longer so don’t feel “bad” if this is your go-to way to get your veggies in 💪🏽🥗🥦🌶🥕
