Ozoni is Japan's traditional soup served on New Year's Day. Ozoni has numerous regional variations in Japan. each family even within Miyagi prefecture cook different zoni depend on where they live or where they are originally from. My family's zoni, we use carrot, Japanese radish, burdoc root and seri. Flavor with soy sauce. Seri is Japan's specialty herb and famous in Miyagi. A wonderful ramen plating from @ramen_betsu (別天神博多拉麵) . It's a big disappointment to me to revisit this brand of Hakata ramen. The shrimp broth used to be so delicious that I drank all of the soup. Just home made of course but this is a popular item in soba restarurants especially in winter time. Soba noodle fans out there? Eaten cold with a soy and smoked bonito (katsuobushi) broth dip or hot in a light soup of katsuobushi or kombu sea kelp. When buying buckwheat noodles to cook at home, best to look for “十割” or soba made with 100% buckwheat flour. In Japanese language the concept of percentage in everyday usage is “割“ which is really 10% in English. Thus, the package says “十割“ or “10 10%” (so 100%). Remember “十割” if you like soba coz restaurants serving fresh house-made soba will typically announce “十割“ on the store sign or a flag flying at the door. Zipang Japanese salted plum wine umeshu from Kishuu. So good! Brought this bottle back from Japan. Just 10% alcohol - lower than many beers and wine for sure. On the rocks tonight with dinner. The saltiness comes through with the sweetness. Yet gentle with good mouthfeel. Turn the bottle and the salted plum meat in the sake float around like a lava lamp. My 2 year old Dried Bonito ‘Katsuobushi’ that I bought from Japan has left so little. Good thing I have bought a new piece this April while in Tokyo. Katsuobudhi is dried, fermented, and smoked skipjack tuna. It is also known as bonito flakes when young bonito is used as a cheaper substitute for skipjack tuna. Dried bonito is a major source of the traditional soup stock that is essential to so many Japanese dishes. It does taste fishy, but the major flavors it imparts are saltiness, and a very mild smokiness.
