Does anybody else love a blended salad like I do. I haven’t made them in a long while, but it popped into my head today and I thought I’d make one for dinner. I just threw my salad ingredients in a blender, added about 1/2 cup of water and maybe 2 tsp of apple cider vinegar, and blended away. This one has romaine lettuce, one Roma tomato, 1/3 green bell pepper, 1/3 big cucumber, and 5-6 strawberries.
I got my new Omega juicer yesterday and had my first big glass of celery juice this morning, but I forgot to take a picture. Also made a really spicy cup of ginger root, turmeric root, and celery juice. That you just drink in double-shot doses throughout the day. I’m juicing and blending to clear out my system (a spring cleaning if you will). I gained back 7 lbs of the 34 I lost last year after becoming vegan. Time to check myself before it gets out of hand.
Last night’s juice blend! Cuke, celery, pears, ginger, and half lemon. Added coconut water to make two pints. It’s nice to not stress over perfect lighting or arrangement... letting go of that perfectionism feels GREAT. ☺️😉
