The best kinds of problems are the ones that don’t let you take a good picture of your food because it’s too hot/steamy. 😛😍 Baby zucchini cooked the same way as yesterday but instead I added water & ramen noodles to the pan when the zucchini was almost done. The boiling of the noodles made the zucchini perfectly tender.
Ingredients - 4 baby zuchinni and one package of Shiitake Mushroom @koyonoodles
baby zucchini, you’re my new favorite vegetable. I cut them in half & sautéed in a pan with coconut oil, salt, and a pepper blend seasoning; and then served them on top of a bed of rice and beans. I didn’t know 3 ingredients (+spices) could be so spectacular.
Sometimes all you need is a bowl full of vegetables and various proteins to make your bad mood go away. I’m sorry body for not always treating you right. I’m sorry for defaulting to not fueling myself properly when I’m stressed. I’m sorry for all the wrong I’ve done in the past, and what I’ll do in the future. Less about food, more about my kitchen! We’ve been renovating our kitchen at home for a very long time now due to some unfortunate events along the way. But, the countertops were installed yesterday and I don’t want to leave the kitchen because they’re so pretty! The plumber hasn’t even arrived yet so we don’t have a working sink up here but I don’t care. I’m excited to finally have a kitchen in my own home because it’s been far too long (19 months in fact - first AmeriCorps and now the kitchen remodel). I’m extra giddy about being able to cook all the foods now and extra giddier about doing it in a brand new kitchen.

Spanikopita! One of the best I've ever had. There isn't the slightest hint in flavor or texture that this version is vegan. Just beautiful food that tastes exactly as expected and desired. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

absolutely killer recipe over on Serious Eats. It really is FANTASTIC. The greens I grabbed were a mix of dandelion, chard and spinach. I used couscous in place of trahanas per her suggestion, and just omitted the egg. There were no structural or binding issues. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The incredible plant-based feta was made thanks to the recipe in @chefskyemichael
's brilliant non-dairy cheese book. It's a fantastic product on its own, but by the time it was cooked into the pie, you could search your palate and not find anything in the slightest to suggest this spanakopita used anything different than every other one in the world with dairy.
The end result is something that shocked me in how delicious it was- period, and its ability to fully pass next to a traditional one. I ate half the pan myself, which I promise you is way too much food. I couldn't help it.
