Another delicious island meal!! It's actually incredible how many vegan-friendly places there are on this island with a population of 50,000!
To be honest we expected the same old açai bowl and smoothie places you see on Instagram in beach side locations, which we never go to because we make smoothies at home every day 😅
But all of the places we've been to have been run by local people of color, creating communities and dishing out some seriously amazing home cooked vegan food😋
Vegan Haven is one of these such spots. Diner style booths, reggae playing in the background, and buffet style daily specials served up by the sweet female proprietor. She told us she was going to be opening a new business come next summer too!😮 When we went, the daily special was rasta chik'n (made from cauliflower), seasoned quinoa, rice, black beans, cornbread, and a fresh salad. All with interesting and different flavor profiles than anything we make at home.
You can experience traditional food that's vegan. You can support local businesses. And you can eat amazing food without doing harm to others. Win-win-win 🤩

For most of my 20s, Thanksgiving was a really uncomfortable and unenjoyable holiday for me.
A holiday that focuses so much on food when you suffer from an eating disorder is one thing, but compounded with being the only vegan in the family and having to explain my food choices and get judgy looks added an extra layer of discomfort 😔
Luckily, I have a much better relationship with food now AND a lot of my family member have been asking to try the vegan dishes I bring. Guess they’ve seen how pretty and tasty they look 😋 I’m looking forward to celebrating this year

Important is the calorie balance. It doesn't matter if you eat your last meal at 18:00h, 20:00h or 22:00h
The only downside if you eat late is in my opinion, if you go to bed directly after your meal. Because some people have problems falling asleep

Wenn es schnell gehen muss: Zwiebeln und geriebenen Ingwer in der Pfanne anbraten. Klein geschnittenen Paprika, Karotten und Tempeh zufügen. Alles zusammen kurz anbraten. Mit Sojasauce (3tbsp) und Ahornsirup (1tbsp) ablöschen, Koriandergewürz dazu und nochmal kurz köcheln lassen. Mit Salat mischen. Fertig!

Super Easy Taco Soup
Inspired by @minimalistbaker
| 1-Pot Vegan Tortilla Soup 😍
2 cans jackfruit (drained, rinsed, shredded with a fork)
4 small yellow onions (diced)
4 large cloves garlic (minced)
2-3 chipotle peppers in adobo sauce (chopped)
2 tsp smoked paprika powder
1,2 l vegetable broth
3 tbsp tomato paste
1 tsp vegan spicy bbq sauce
1 can kidney beans
1 can whole kernel corn
salt (depending your taste)
additional 1-2 tsp adobo sauce (if you like it as spicy as me)
chopped parsley, lime wedges, avocado slices and tortilla chips for serving
1. Heat 3 tbsp olive oil in a large pot over medium heat, add onions and garlic and cook, stirring occasionally, 3-5 minutes or until onions are translucent.
2. Add shredded jackfruit and chopped chipotle, stir well and saute ~5 minutes to dry out the jackfruit.
3. Add tomato paste, paprika powder, bbq sauce and stir to combine well, let the mixture cook for another ~2 minutes then pour in the vegetable broth.
4. Add beans and corn and let the soup cook for ~15 mins over low heat. Add more spices or salt, depending on your taste.
5. Serve hot, topped with parsley (for the cilantro lovers: yessss, I used parsley instead of cilantro because I don't like cilantro 😂) avocado and lime wedges and tortilla chips as a side dish.
6. Fell in looooove with the amazing flavors of this super yum TACO SOUP! 😍🔥

My first proper lunch as an inpatient and it was so difficult I was not expecting it to be that tough. I’m on the half portions of food but I really didn’t feel like I could squeeze this all into me, I also had two alpro yoghurt pots (cherry+blueberry). It’s the first time I’ve had baked beans in a very long time, one of the foods I often fantasise about having so I was trying to think of it like having a cheat meal, only issue is, this isn’t a one off, it’s going to be every single day

It’s a nice day in Austin. I’m just doing what I normally do, enjoying an almond cappuccino. This wasn’t my favorite coffee I’ve had in Austin, but it wasn’t bad. But I did love the sweet looking artwork throughout the whole shop. 👌🤪🌱☕️
