A quick breakfast this morning with satvik upma made without onion and garlic, because, I was craving #desibreakfast
but not an elaborate one. This upma is commonly made during festivals and served in weddings and ceremonies alongside sheera/kesaribath/sooji halwa. It's one of my favorite quick recipes to make on busy days coz it doesn't involve much prep or chopping.
1 cup roasted rava / sooji
3 tbsp ghee / clarified butter
1 tsp mustard seeds
1 tbsp channa dal / bengal gram
1 tsp grated ginger
A sprig of curry leaves
3 green chilies slit to half
A generous pinch of asafoetida / hing
1/4 cup fresh / frozen peas / mutter
8 - 10 roasted cashews
2 tbsp fresh grated coconut
2 1/2 cup water, boiled
1 tsp salt / to taste
Juice from 1/2 lime squeezed
Boil 2 and half a cups of water and add salt to taste to it.
In a thick bottom pan, heat the ghee. Add mustard seeds and allow it to splatter. Then add channa dal and fry for 30 seconds. Add the grated ginger, slit green chillies, curry leaves and hing and fry for another 30 seconds. Add the fresh or frozen peas / mutter and cook for a minute. Add the roasted rava and stir well for 30 seconds. Next add the hot, boiling salter water into the rava mixture. Mixture will bubble. Stir constantly on medium low heat for 4-5 minutes till all the water is absorbed and the upma comes together. Turn off the heat, and add a dash of lime. Top with freshly grated coconut and finely chopped coriander leaves. Serve hot!
