Organic baby spinach topped with: homemade hummus (recipe below), half avocado, sunflower seeds, blueberries, grapes, kalamata olives, grilled tofu, black beans, corn and zucchini. Sprinkled with fresh cilantro, drizzled with tahini, and spiced up with red chili flakes. Included some balsamic vinaigrette 😁🍂🍁🌳👍
Hummus: in food processor, place 1 can chickpeas rinsed and drained, juice of 1/2 lemon, 1 large minced garlic clove, 1/2 teaspoon each kosher salt and black pepper, 1/4 cup olive oil or water. Pulse several times and start blending. Drizzle in additional olive oil and/or water as you're blending, to attain desired thickness. Taste for seasoning and add more salt/pepper if desired. 👍😁

I also drank: roughly 3 liters of water, two black coffees and a peppermint tea.

I am finally to the point in my life where I am just plain happy! No idea what I’m doing in life 😜 but happy! Been a long time coming too. I have big dreams, amazing family and friends, and lots to be thankful for! Can’t wait to see what the future has in store for me ✨

Cooking Vitamins and minerals packed vegetable medley.
Main ingredients: 2 sweet potatoes, 1 green bell pepper, 1 yellow bell pepper, and nicely sliced carrots 🥕( 12 oz/ 340 gram, frozen carrot very acceptable 😜).
Spices: garlic powder, Red chili powder, dried parsley flakes, dried Basil flakes 1 tablespoon each, Salt, black pepper and 2 tablespoons of olive oil.
Direction: Cut and slice main ingredients in a smaller dice size pieces. Sauté Sweet potatoes in a hot olive oil for about five minutes then add all the ingredients including spices, reduce heat to low or medium, and cook it covered for 35 to 40 minutes. Enjoy this nourishing super food as a lunch or breakfast.

When I first started my fitness journey - I tried to fit so many molds.
I kicked off my journey trying to make Instagram worthy low calorie dishes. Açaí bowls, pretty salads, rainbow dishes. I was starving, grumpy, and to be frank, I was pissed. But it was what everyone else was doing so I tried.
I was a cardio feign. Running 5+ miles until I wanted to collapse. I did those “instagram” treadmill workouts full of squats and lunges on a treadmill. I hate to run but I stuck with it because that’s what everyone else did.
Then I was the clean eater. Which consisted of bowls and bowls of spinach and chicken. Almonds for a snack. Longingly staring through the dominos window while a tear rolled down my cheek. I was MISERABLE but I stuck with it bc I thought that’s what everyone was doing.
And then one day I realized none of these molds were me and if I was going to find success - I had to be happy. And constantly trying to recreate myself wasn’t the answer.
So these days, I eat dominos pizza. I ride my bike instead of run. I don’t remember the last time I had an “instagram worthy” meal. I don’t cry over calories I’ll skip the gym if I want. But most importantly im unapologetically happy.
I’ll never be your food goals, fitness goals, or hell any of your goals for that matter - but I’m happy. I love myself. And I’ve found a “mold” that works for me.
I skipped the gym tonight, I biked to my favorite bar, and I’m laughing with my best friend. And I’m so happy I did.
Forget the instagram fitness world and find yourself girlfriend ❤️ It’s okay that you don’t look like your favorite instagram girl. It’s okay that you ate a whole bowl of cheese dip (or is that just me?) it’s okay that you don’t like to do fitness like she does.
Be your own person, Blaze your own path, but most of all, just be happy.
Abs are great but so are you!!! Hang in there, keep fighting. Make your own mold.

This Salmon Sunday with herbed CHIMICHURRI GNOCCHI-ED it out of the park 🙃 Happy Sunday loves! I hope you all had an AMAZING weekend. If you saw my last post you know that I thoroughly enjoyed mine. Today I slept in, worked out, did a Trader Joe’s run and can home to cook and relax. And this, this meal was born! I recently tried Trader Joe’s gnocchi and I am officially hooked. I baked it and it got super crispy! Paired with some crispy wild salmon, roasted tomatoes, avocado, Brussels and cilantro/basil/parsley/kale chimichurri and damn now I just need a nap and my Sunday is complete. See below for recipe and details. What did you do this weekend?
Details: Crispy Salmon (see highlights for details), roasted Brussels (tossed in garlic, coconut oil and coconut aminos), roasted tomatoes on the vine and gnocchi (tossed in olive or avocado oil and baked in cast iron on 450 for about 25 minutes (shake pan every few 8 minutes or so). Chimichurri: 1 head of cilantro, one head parsley, 1 cup kale, 1 handful basil, 3 cloves garlic, 1 tablespoon coconut aminos, 2 shakes red pepper flakes, juice from 1/2 lemon squeezed, 1/2 teaspoon salt, 1/4-1/3 cup olive oil. Process in food processor until smooth. •

I’ve always heard by lifting heavy, I’d become bulky or masculine. The sheer thought of going over to the “men’s section” of the gym intimidated me. I stuck to hours of cardio with little to no results in my arms, legs and lower tummy. I couldn’t have been more wrong. I’ve challenged myself in the gym, in the kitchen, physically and mentally over this past year and a half, overcoming my fears and pushing myself out of my comfort zone. Seeing these #gains
I almost can’t believe it’s me. Although confidence is something I’m forever working on, I’m so grateful my little girls get this healthier, happier me.

I’ve gained weight,and I’ve lost weight and I can honestly say I have never felt more like crap then I do right now... three days into this cleanse, currently suffering with something called detox flu 🤢🙃 apparently it passes... idk... the things we do for our mama’s 🤷🏼♀️ honestly just can’t wait until I’m done and I can eat cookies again (I LOOOOVVVVEEEEEE ME SOME COOKIES 😍🍪)
If I had to guess I think I’ve last about five pounds as I’m starting to look the way I did at 135 pounds I’m just hoping it starts to slow down because I really didnt want to get below 130 during my cut 😕 which I wasn’t going to end until January so I may have to just maintain for a bit after this cleanse 🤷🏼♀️
