Mini Blueberry Pancakes star in this week’s meal plan Sunday, I hope I don’t eat them all at once! Because I am feeling generous I am also going to attach the recipe this week. It makes 6 servings so once they are cooled simply pop them into a bag and you have breakfast prepared for the entire week! (Did I mention they are also keto friendly? 😊) Ingredients · 4 large eggs · 1/4 cup sweetener · 1/2 tsp vanilla extract · 1/2 cup coconut flour · 1/4 cup butter melted · 1 tsp baking powder · 1/2 tsp salt · 1/4 tsp cinnamon · 1/3 to 1/2 cup water · 1/2 cup frozen wild blueberries
1. Preheat oven to 325F and grease a mini muffin tin (24 cavity) very well.
2. In a blender combine the eggs, sweetener and vanilla extract and blend until smooth.
3. Add the coconut flour, melted butter, baking powder, salt, and cinnamon. Blend again until smooth. Add 1/3 cup of the water and blend again.
4. Divide among muffin cups. Add a few blueberries to each and press them gently into the batter.
5. Bake 20 to 25 minutes, until set. Let cool a few minutes in the pan. Serves 6. #ketomeals

I love yogurt and I love fitting it into my macros whenever I get the chance. Plus it's great for gut health and digestion!!! Today will be another busy day with another AWAY game for my daughters Ringette team, followed by tennis lessons for Jacob, so I started my day off right with an active recovery workout and then this yummy breakfast. A Flaxseed Cinnamon Bun muffin, topped with butter 🤤🤤, greek yogurt with a few drops of stevia, cinnamon and some leftover #ketocranberrysauce

This morning I had 4 pieces of bacon with 3 scrambled eggs with mozzarella and chicken ! (2.4 net g of carbs) Was extremely filling and satisfying, swipe over for more info on what I used! Pretty typical no-frills breakfast though!
