🥖 (I know that’s a baguette, but let’s all live our lives how we want 😜)—so I’m really into these cute little treats as I find them to be such a great alternative to carb-loaded biscotti. these particular ones I got were chocolate flavored, and the only change I’d say I would want is a stronger/more intense chocolate flavor (but who doesn’t want more chocolate?) as it’s more cocoa than chocolate, but I still really enjoyed them and would definitely order them again 🌟

today..they came out great. The sweet factor could have been better. I will be ordering #swerve

Made these this afternoon and enjoyed one tonight! I have a major sweet tooth so I was a bit nervous when I started this keto diet that I'd have to kiss sweets goodbye forever...well these just hit the spot!
1/4 c coconut oil, melted
4 tbsp unsalted butter, softened
4 oz cream cheese, softened
1 tbsp lemon zest, finely grated
1 tsp lemon juice
lemon extract, optional
stevia (or equiv), to taste

Coconut Flour Zucchini Bread Muffins. Recipe found on Pinterest, by Low Carb Yum.
The same recipe can be put in a loaf pan, for bread.
I also made an on the fly icing, so their conception of "cupcakes" came to life. I used 2 oz cream cheese, a tsp of vanilla, a few drops of almond extract, and about 8 drops of liquid stevia. They liked it so much, I then made a second batch for the leftovers.

Coffee Caramel Cheesecake
Base was originally meant to be buiscuts but they were too crumbly so I broken them up and made a cheesecake base. You can just use the same ingredients and put the mix in the cake tin and bake for about 15 mins for the base. Then let it completely cool before putting the filling on top.
2 cups almond flour
1/2 cup almond butter
2 tablespoons coconut oil
2 scoops vanilla protein powder
2 tubs cream cheese
1/3 cup cream
I've used a liquid caramel stevia (approx 1ml)
1 tablespoon instant coffee
1 tsp vanilla extract
Blended the base and filling in food processor. Keep in the fridge. Let it set for at least an hour before attempting to cut it. Overnight would be best 🍰

Lately, I have been having a bit of a sweet tooth kick. I’m usually an all or none kinda gal. What that means is I have a hard time with moderation. My solution is to just avoid things that I know I go overboard with (except cheese...I will never avoid cheese). I don’t usually keep treats in my humble abode because I know that I won’t have just one. The last two weeks I have been enjoying low carbs treats (the enlightened ice cream popsicles and ice cream) so I got into this tasty treat kick. It’s okay though. I think that throughout the years I have realized that if I deny myself everything then I’ll be miserable and stressed and that will only increase my cortisol levels and that inevitably adds weight in all the wrong places....without even enjoying whatever it was that I wanted. By not stressing over things like going on a sweet (keto) tooth kick, I am a little more sound of mind.
