My breakfast was litt! Eating healthy pancakes felt good ! Beeing on a keto journey can seem hard at first but as long as you find recipes and alternatives you become addicted to those tasty healthy keto foods and start to dislike the food you use to eat! Thanks to @wholesomeyumblog

📋Ingredients :1 cup Blanched almond flour (blanched & finely ground recommended)
1/4 cup Coconut flour
2-3 tbsp Erythritol (or any sweetener of choice)
1 tsp Gluten-free baking powder
5 large Egg
1/3 cup Unsweetened almond milk (or any milk of choice; may need more - see instructions)
1/4 cup Avocado oil (or any neutral tasting oil that is liquid at room temperature)
1 1/2 tsp Vanilla extract (optional, but recommended)
1/4 tsp Sea salt (optional, but recommended)
1. Whisk all ingredients together in a bowl until smooth. (Batter should be the consistency of typical pancake batter. If it's too thick, add a little more milk. Don't add too much, or the pancakes will be too "wet".
2. Preheat an oiled pan* on the stove over medium-low to medium heat. Drop the batter onto the hot pan and form into circles. Cover and cook about 1.5-2 minutes, until bubbles start to form. Flip and cook another 1.5-2 minutes, until browned on the other side. Repeat with the rest of the batter.enjoy 😀

Tip of the day!! Keto can definitely feel restrictive at first and it's hard not to focus on what you CAN'T have vs what you CAN have. Butter Cookie Bites💣
Easy peasy-5 mins, 5 ingredients😉
Be careful, you may not be able to eat just one😂
1 cup Almond Flour (I used Bob's Red Mill)
3 Tbsp Melted Ghee or Butter, I used Ghee
2 Tbsp Monkfruit Sweetener (I use Lakanto)
1 tsp Vanilla Extract
Pinch of salt
Combine all ingredients in a small bowl
The mixture should be wet enough to stick together
Scoop out 1 tbsp of the mixture at a time a roll into a ball
The balls should be 1 1/4 inch in diameter
Refrigerate for 1 hour, if desired
Focus on thar juice!!! Sirlion is my fave now. Cooked in butter, salt and pepper😋

🤩🔥The first time I saw that Sugar...Free...Chocolate...FUDGE...Frosting...is a thing - I knew these were happening. These may actually be my favorite dessert now (and sometimes breakfast... 😉 Ssshhhh...☝️👄). They're sweet, but not TOO rich - and they're sooo (((trigger warning))) moisttttttt.
Based on the products we used, the cost of these ingredients will be roughly $7.84 and make 12 life changing cupcakes.
Per life changing cupcake:
Fat = 17.2g
Total carbs = 25.7g (YES; TWENTY-FIVE POINT SEVEN. *PROTIP*: If you are in the minority that choose to count "total" carbs instead of "net" carbs, you probably won't be making this, anyway. 😉 Amirite? 😉👈 Amirite?) For the rest of us: 🎊🎉👉Net Carbs = 2.9g per cupcake 👈🎉🎊
Protein = 5.4g
4 tbps softened butter
¾ cup of Swerve or other sugar substitute
3½ oz cream cheese, softened
1 tsp vanilla extract
1¼ cup almond flour (use sesame seed flour for a nut free option)
1 tsp baking powder
¼ tsp of salt
¼ cup sugar free chocolate frosting
Preheat oven to 325°F.
In a large bowl beat the butter with the sugar substitute until well incorporated.
Add the cream cheese and vanilla. Mix well.
Add the eggs one at a time making sure to mix well after each one.
Add all the dry ingredients until well combined.
Pour or pipe batter into cupcake liners. The cakes will rise, so ensure there is enough room from the top of the cupcake liner to accommodate.
Bake 30 minutes, or until the middle stops being jiggly. Yes jiggly.
Let cool before frosting.

Yesterday was a good keto day. I’ve taken the keto snacking to a whole new level, so my goal this week is to cut them out completely. It was hard, but I felt good at the end of the day yesterday.
Breakfast - normal coffee and sausage links. I’m trying to get back to intermittent fasting (doctor recommended for arthritis and thyroid issues, no opinions needed)but I haven’t been able to yet. .
Lunch - pork chop and mashed cauliflower leftovers (I’m a leftover junkie) .
Dinner - Egg roll in a bowl (Pinterest recipe- it has cabbage, hamburger, sesame oil, garlic, green onion, ginger, sriracha and vinegar. I enjoyed it) and broccolli with a tablespoon of Parmesan cheese sauce. .
My only snack fail was the peach tea soda and also a Pepsi Zero. The drinks kill me! But I did get all my water in. Baby steps!

Taking a break from packing and enjoying a simple + satisfying meal amidst the clothing chaos in my apartment (thought it would be a great idea to empty my entire closet onto the floor for sorting at 8pm— it wasn’t. 10/10 don’t recommend 😳)📦 Needless to say, I definitely don’t have my ducks in a row tonight, but at least I have my food in one 🍽😂🙌🏻
The dinner line up: crispy seared salmon (there’s a preparation tutorial in my story highlights 🎥) •• cast iron-grilled asparagus w/ parmesan 🌱•• trader joe’s broccoli & cauliflower gratin (made this for lunch today and liked it so much I went for a round two tonight!) 🥦🧀.

🥑SKIP THE CORN! Take chicken salad to a new level with the addition of avocado. This naturally creamy chicken and avocado salad is healthy and contains no mayo or sour cream !🥗💥
2 medium cooked chicken breasts, shredded or chopped (we used rotisserie chicken)
2 ripe avocados, pitted and diced
(Skip the Corn when Keto)
½ cup corn (roasted, canned, or frozen)
¼ cup red or green onion, minced
2 tablespoons cilantro, minced (or parsley or dill)
2 tablespoons lime (or lemon) juice
2 tablespoons olive oil
salt and pepper to taste
In a large bowl, add the shredded chicken, avocado, onion, avocados, corn, and cilantro.
Drizzle with the lime (or lemon) juice, olive oil and season with salt and pepper. Toss gently until all the Ingredients are combined.
Notes: additional add-ins that go well with this salad include chopped tomato, chopped cucumber, bacon chopped and cooked, or black beans.

I found this recipe because I had such a craving for spaghetti one day and I refused to break from my keto diet. So I did what a lot of people on the internet do, I went spent a good hour or so searching for alternatives and decided to try zucchini. *
Maybe some of you have had zucchini noodles, but up until about 2 weeks ago, I never had! I let them cook down in the pan so that they became a bit softer. I added grilled chicken and 2 tablespoons of truffle oil to replace the regular olive oil and this dish exploded in my mouth!🤤🤤🤤🤤🤤

Easy old fashioned keto dinner. Chicken breast in the crock pot with Rao’s spaghetti sauce, peppers and onions. It’s normally served over rice, I just went without and added some shredded parm.
